How to make five spice air fryer chicken. This recipe is great using chicken thighs or quarters but it is also so tasty with Cornish game hen. I used Cornish game hen and it was so juicy and full of flavor! Adjust the cooking time accordingly if you’re making this recipe. The hen takes a bit longer too cook than chicken thighs or legs.
Ingredients:
2 Cornish hens or 8 chicken thighs
3 tbsp hoisin
2 tbsp sweet dark soy sauce
1 tbsp light soy sauce
1/8 tsp black pepper
2 tsp five spice powder
4 cloves minced garlic
Glaze:
2 tbsp honey
1 tbsp dark soy sauce
1 tsp oil
If you’re using a Cornish hen, spatchcock the hen by cutting down the sides of the back brown then pressing down on the chest bone to flatten the hen. Leave the skin on for that nice color and leaves It so crispy!
Marinate the chicken for at least 4 hours, I prefer overnight so that it soaks up the marinade. Cook in the air fryer at 350 degrees for 35 minutes for a Cornish hen and 20 minutes for thighs. Make a glaze with honey, dark soy sauce and oil and baste the chicken when the time is up. Add another 5 minutes. My air fryer is extremely hot and cooking times will vary so make sure to check that the chicken is thoroughly cooked.
To make scallion oil, chop up green onions, add dash of salt, 1 tbsp oil and microwave for one minute.

Ingredients:
1.5 lbs deveined shrimp, shell on
1 whole garlic, minced
1/3 cup flour
1 tbsp paprika
1 tsp cayenne pepper
1/4 tsp salt (adjust to taste)
6 tbsp butter
4 tbsp olive oil
Coat the shrimp with flour, paprika and cayenne pepper.
On low heat, cook the butter, oil and garlic for 3-4 minutes. Once the garlic is fragrant, add the shrimp into pan, evenly spread out so that it can get nice pan fry for a crispy coating. (Do not layer the shrimps on top of each other) Add salt to taste. Cook for 2 minutes on each side or until slightly crispy. That’s all it takes to make this delicious recipe! I served this with steamed rice and a wedge of lemon.

6 small/baby bananas or 3 regular bananas
1/2 cup brown sugar
12 egg roll wrappers
1/2 cup oil or cooking spray
Optional: caramel sauce and powdered sugar
Slice bananas lengthwise and coat in brown sugar. Place on corner of the egg roll wrapper, roll, fold sides and seal with a dab of water. Lightly coat with cooking oil or use a cooking spray. Cook these in the air fryer at 350 degrees for 6 minutes on each side or until golden brown. Drizzle with caramel sauce and dust with powdered sugar.

Method
Peel the apples and chop them into small pieces
Juice lemon juice, add cinnamon powder, and sugar
Mix them well
Mix sugar and cinnamon powder and keep it aside
Take a few slices of bread, cut the edges, and roll it out
Apply butter, and place the apple filling
Dab some water and roll it and seal it
Heat a tawa with some butter, toast the rolls on all sides
Sprinkle some cinnamon sugar on the rolls and serve them hot

Method

Bring your ricotta and cream cheese to room temperature.

Place all ingredients into a blender or food processor and blend for 1 - 2 minutes or until a smooth texture has formed and all ingredients are well combined. Again, you will not need all of the whipped ricotta and cream cheese for this recipe and it can be stored in the fridge for several days to be used when needed.
My chocolate and peanut butter fudge cake is the solution to a problem
Ingredients

200g quality dark chocolate
200g unsalted butter at room temperature
1 cup full cream milk
1 cup caster sugar
½ cup dark brown sugar
2 eggs at room temperature
¾ cup all purpose white flour
6 tablespoons cacao powder
1 flat teaspoon baking powder
100g or 3 tablespoons Peanut Butter

Method
.
Preheat the oven to 160 degrees celsius and grease or pre-line a 24cm cake tin.
.
On a low heat in a small saucepan, melt the chocolate, butter and milk until smooth. Stir quite occasionally with a whisk or spoon. Set to the side and leave to cool for 10 minutes.
.
Sift your flour, cacao powder and baking powder into a bowl and set to the side.
.
In a free standing mixer add your sugars and egg and beat on a medium - high speed until pale and smooth.
.
Turn the speed to medium and slowly pour in your chocolate mixture until well combined.
.
Turn the speed to low and add your sifted flour, cacao and baking powder in thirds until well combined. You may need to stop the mixer and scrape down the sides of the bowl in between each addition.

Swirl spoonfuls of peanut butter throughout the batter. Gently fold it through with the spoon as you want the peanut butter to be quite chunky throughout the cake.

Bake the cake for 60 minutes. As this is a fudge cake the middle will be quite soft. Leave the cake to cool for 15 minutes in the cake tin and then transfer to a wire cooling rack and leave to fully cool before cutting into it. Enjoy on its own or with some ice cream or whipped cream.
