The Big Boy Burger from Frisch’s is a popular regional burger that’s served with tartar sauce - and you may be turned off at first (like I was), but then when you think about it, tartar sauce in its purest form is a mixture of mayonnaise and pickle - two popular burger condiments. So today we’re making the double stacked Frisch’s Big Boy Burger with a homemade tartar sauce.
Now, our tartar sauce is definitely not a copycat to Frisch’s tartar sauce, but it is dang good. If you’re looking for new burger recipes to make on the griddle, then give this griddle cheeseburger a try!

Tartar Sauce Recipe:
1 cup mayo
1 tablespoon minced shallot
1 tablespoon dill relish
1 tablespoon sweet relish
1/4 lemon wedge juice
1/2 teaspoon yellow mustard
1/2 teaspoon Worcestershire sauce
1/2 teaspoon hot sauce
1/2 teaspoon garlic powder
1/2 teaspoon dried dill
1/2 teaspoon salt
1/4 teaspoon pepper

We recently visited NYC and went to Hamburger America, where we saw the “burger scholar” himself George Motz, making fried onion burgers on the griddle - and let me tell you, those onion burgers were in the top 3 burgers that we’ve ever eaten!
We stood in front of the griddle in the open-viewing kitchen and watched the burger master turn out one fried onion burger after the next. And I picked up a few tips and tricks! Gordon Ramsay Cooks Up a Simple and Easy Pasta Dish in Just 10 Minutes!
INGREDIENTS
Kosher salt
1 pound dried spaghetti
4 ounces pancetta, cut into lardons
1 tablespoon grapeseed oil
Freshly ground black pepper
2 large cloves garlic, sliced
1 fresno chili, sliced
4 tablespoons unsalted butter, divided
½ cup frozen peas
1 bunch chives, roughly chopped
1 bunch parsley, roughly chopped
1 bunch basil, roughly chopped
¼ cup vegetable stock
1 head green leaf lettuce, roughly chopped
1 lemon, zest and juice
Chili flakes, for finishing
Grated pecorino, for garnishing
PROCEDURE
1. Place a large pot of water over medium high heat and bring to a boil. Once boiling, salt the water generously and add in the pasta. Stir the pasta to make sure it does not stick together and continue boiling until al dente, about 8-9 minutes.
2. In a large skillet over medium heat, add the pancetta and grapeseed oil and cook until the lardons begin to caramelize, about 3 minutes. Season the pancetta lightly with salt and freshly ground black pepper.
3. Add the garlic and fresno and continue cooking until fragrant, about 2 minutes. Add 2 tablespoons of butter and continue cooking until the butter has melted completely.
4. Add in the frozen peas and continue cooking until they begin to soften, then add the chives, parsley, basil and vegetable stock. Season the sauce lightly with more salt, and add another 2 tablespoons of butter. Continue cooking until the butter has melted completely.
5. Add ¼ cup of the pasta cooking water, lemon zest and lemon juice to the pan and stir to combine.
6. Gradually add in the cooked pasta, tossing between additions to coat the pasta with the sauce completely.
7. Serve the pasta with a sprinkle of chili flakes and freshly grated pecorino.

Serves 6 as a side Prep 10 mins Cooking 10 mins
2 bunches Coles Australian Broccolini Family Pack
Olive oil, to drizzle
4 soft-boiled Coles Australian Free Range Eggs*, quartered
1/2 punnet chives, finely chopped
1/2 punnet dill, finely chopped
Finely grated parmesan, to serve
Yoghurt ranch dressing:
2 cups (560g) natural yoghurt
1 tsp onion powder
1 tsp garlic powder
1 tbs apple cider vinegar
1 tbs Dijon mustard
1/2 punnet dill, finely chopped
1. Heat a barbecue grill or chargrill on high. Drizzle the broccolini with a little oil. Season. Place on the grill and cook, turning, for 6-8 mins or until lightly charred and just tender.
2. Meanwhile, to make the yoghurt ranch dressing, combine the yoghurt, onion powder, garlic powder, vinegar, mustard and dill in a medium bowl. Season.
3. Spread half the dressing over the base of a large serving platter. Top with the broccolini and egg. Spoon over the remaining dressing and sprinkle with chives and dill. Top with parmesan to serve.
