For the Chicken marinade:
• Chicken breast cut into cubes (300g raw weight)
• 1 tsp garlic powder
• 1 heaping tsp paprika
• 1 tsp oregano
• 1 tsp cumin
• 1 tsp or 1/2 tsp red chilli flakes
• 1 tsp salt and pepper
• 1/2 or 1 lime juiced
Mix till it changes color
For the green sauce (you will only use a small amount from all of this)
• 1/2 medium avocado (about 50g)
• 100g fat-free or low-fat greek yogurt (any yogurt works)
• Handful of coriander/cilantro
• 1 tsp garlic powder
• 1/2 tsp salt and pepper
• 1/2 lime juice
Quick note: if you want the sauce to be runnier then add water gradually till desired consistency
For the cooking process:
- cook the chicken for 4 mins on each side and set aside. I used a cooking spray but you can use olive too
• 1/2 red and green bell pepper
• 1/2 red onion
- Cook for 5 mins till soft
Mexican rice:
• season with the same spices you used for the chicken + 1-2 tbsp of tomato paste
To serve:
• 140g cooked Mexican rice (per serving)
• Chicken pieces
• Shredded lettuce
• Bell peppers and onion
• 40g sweetcorn (per serving)
• 40g black beans (per serving)
• 20g low-fat sour cream yogurt
• Generous amount of green sauce (about 20g)

This rib roast was smoked at 225° with avocado oil, Neil's Sarap tasty bark, rosemary, and thyme until the internal temp reached about 125°.

I then took the roast off the smoker, raised the temp to 400°, and opened up the sear plate to release the gates of hell.
The roast was seared on all sides until the internal temp reached about 132°, then rested in my cooler for about an hour before slicing.
This roast came out amazing and was a perfect medium rare!

❂ Ingredients:
2 steaks of Salmon
50g. Butter
1 Shallot Onion
2 Fresh garlic cloves
1 1/2 Cup Cream. Heavy cream/whipping cream.
Fresh Dill or Parsley
1/2 TspLemon zest
1/3 cup Dry White Wine
Salt and black pepper
200g. Pasta Penne
❂ Cooking process:
⁃ Cut the skin off the salmon fillets and dry them with paper towels.
⁃ Heat a nonstick frying pan or large skillet then sear the salmon, for 4-5 minutes until crisp.
⁃ Turn over the steaks and add butter to the pan. Fry in butter for a few more minutes.
⁃ Remove salmon from the pan and set aside while you make the sauce.
⁃ In the same pan add an onion that you’ve diced finely. Cook for a few minutes until softened then add the crushed garlic. Allow cooking for 30 seconds until fragrant.
⁃ Then add white wine and fry until it evaporates.
⁃ Add lemon zest.
⁃ Pour in the cream and add the fresh dill.
⁃ Season with salt and plenty of freshly cracked black pepper.
⁃ Simmer gently for a few minutes until the sauce coats the back of a spoon.
⁃ Then pour the cooked pasta into the sauce and mix.
⁃ Add the fried salmon on top, mix lightly and you’re done.
⁃ Cook the pasta: Bring a pot of salted water to a boil. Add the pasta and cook until al dente then drain and reserve a cup of the cooking water.

1 Lemon
1 small Shallot Onion

❂ Cooking process:
⁃ Wash then dry the scallops very well with a paper towel.
⁃ Salt a little
⁃ Heat the nonstick sauté pan over medium-high heat until very hot. Add the avocado oil, and place the scallops in the pan.
⁃ Sear on the first side, without touching or flipping, for about 3 minutes, or until golden. Using tongs, turn the scallops over, add butter and drizzle with lemon juice, and sear for 1 to 2 minutes more, until the scallops are just cooked through.
⁃ Move the scallops to a plate. Make a sauce for scallops: In the same pan, add shallots, garlic, lemon zest, butter, and parsley.
⁃ Roast the pine nuts in a dry frying pan a little.
⁃ Place arugula and spinach on a large plate, and drizzle with a little olive oil.
⁃ Lay slices of peeled grapefruit on a pillow of greens. Then lay out the scallops and pour sauce over them. Sprinkle top with pine nuts.

Diplomat cream:
60g sugar
23g cornstarch
4 egg yolks
Pinch of salt
360g whole milk
1 vanilla bean pod
25g unsalted butter
150g heavy whipping cream, cold
Saffron bloom:
0.25g saffron
10g sugar
30g whole milk, hot
Dough:
445g bread flour
55g sugar
7g salt
Saffron bloom
185g whole milk, at 27C
1 whole egg + 1 yolk
12g instant dry yeast
70g unsalted butter, softened and cubed
Frying oil + extra sugar
Diplomat cream:
•Whisk together egg yolks, sugar, cornstarch, and salt.
•Cut the vanilla pod in half and scrape off the beans.
•Add milk and vanilla to a pot. Heat up over medium heat until tiny bubbles form.
•Remove from the heat and slowly pour it over the egg mixture a little at a time while whisking.
•Place a strainer over the pot and strain everything back into the pot. Heat up over medium heat while constantly whisking until it thickens.
•Remove from heat and mix in butter.
•Transfer to a bowl and cover with plastic wrap that touches the surface of the pastry cream. Transfer to the fridge for at least an hour. Meanwhile, make the dough:
Saffron bloom & dough:
•Add saffron threads to a mortar and pestle and grind until they break down.
•Add 10g of sugar and continue grinding into a fine powder.
•Add 30g of hot milk and stir. Rest for 15 min before continuing with the next step.
•Add ingredients, except butter, to the bowl of your stand mixer. Knead on low for 10 min.
•Add butter, one cube at a time.
•Knead for 10-20 min on low-med until the dough passes the window-pane test.
•Proof for about 90 min.
•Divide into 15 pieces (60g each) and roll into balls.
•Arrange on parchment paper squares and proof for 30 min.
•Fry at 340F/170C, 2 min on each side.
•Transfer to paper towels and toss in sugar.
Whisk 150g of whipping cream to soft peaks and combine with the cooled pastry cream.
Fill donuts and enjoy!

4 Large Russet potatoes
1 Large Onion
2 Large Eggs (one for a pouched egg)
1 Tbsp Corn Starch
Salt/Pepper to taste
1/2 Tsp Ground Coriander
Vegetable Oil

❂ Cooking process:
⁃ Grate the potatoes and onion. Transfer the mixture to a clean bowl and squeeze and wring out as much of the liquid as possible.
⁃ Add the egg, cornstarch, salt, pepper, and ground coriander and mix until combined.
⁃ In a medium heavy-bottomed pan over medium-high heat, pour in about ¼ inch of the oil. Once the oil is hot use a tablespoon to drop the mixture into the hot pan, cooking in batches. Use a spatula to flatten and shape the drops into discs.
⁃ When the edges of the latkes are brown and crispy, about 5 minutes, flip. Cook until the second side is deeply browned, about another 5 minutes. Transfer the latkes to the cooling rack. Repeat with the remaining mixture.
Poached Egg:
⁃ Pour 4 cups of water into a small saucepan to a gentle simmer. 200F. Add 1 Tbsp vinegar.
⁃ Crack an egg into a fine sieve set over a medium bowl. let the watery whites drain into the bowl below; Carefully transfer the egg to a small bowl.
⁃ Use the spoon to swirl the water in the pot to create a micro-tornado.
⁃ Pour the egg into the center of your tornado.
⁃ Boil for 2-3 minutes

Heart-shaped churros with homemade chocolate-hazelnut spread 🍫
Ingredients:
260 g water
55 g unsalted butter
1 tbsp / 15 g granulated sugar
¼ tsp salt
140 g all-purpose flour
1 egg
½ tsp vanilla paste or extract
Cinnamon-sugar
Frying oil
Batter:
Add flour to a large bowl and set aside.
Add water, butter, sugar, and salt to a small pot. Bring to a boil and simmer until the butter is melted.
Pour the hot mixture over the flour and stir with a silicone spatula until combined.
Rest for 10 minutes.
Add egg and vanilla paste and mix with an electric hand mixer until nicely incorporated.
Transfer to a piping bag with a small star nozzle attached.
Pipe little hearts onto baking trays lined with parchment paper.
Transfer to the fridge for 20-30 minutes while you heat up the oil:
Frying:
•Add frying oil to a large cast iron pot. Heat oil to 355F/180C (use a thermometer for accuracy.)
•Take your churros out of the fridge. Using scissors, cut the paper around each churro to make it easier to transfer into the hot oil.
•Place 3-4 churros into the hot oil with the parchment paper. Remove the paper with a pair of thongs; after a couple of seconds in the oil, the paper should easily slip from underneath the churros.
•Fry the churros for 1.5-2 minutes on each side.
•Transfer to paper towels and toss in cinnamon sugar while still warm.
Chocolate-hazelnut spread
Ingredients:
220 g hazelnuts
60 g powdered sugar
30 g unsweetened cocoa powder
1 tbsp neutral oil
1 tsp vanilla extract
1/2 tsp salt
150 g milk chocolate, melted
Instructions:
Roast hazelnuts at 375F/190C for 10-12 minutes. Transfer to a kitchen towel and rub until the skin comes off.
Blend in a food processor or blender until liquid and smooth. This will take around 5 minutes, depending on your blender. Scrape down the sides.
Add powdered sugar and cocoa powder, and blend for 30 seconds.
Add vanilla extract, oil, and salt, and blend for another 30 seconds.
Lastly, add the melted milk chocolate and blend until combined.
Serve warm with the churros Leftover spread can be stored in a jar at room temp for up to two weeks.

200 g shredded mozzarella (can also use block mozzarella or string cheese, cut into cubes)

Instructions
1. Make the dough:
•Add all the ingredients, except butter, to the bowl of your stand mixer. Knead on low speed for 10 minutes until the dough comes together.
•Slowly add the butter, one cube at a time.
•Once all the butter is added, knead for 10-20 more minutes at low-medium speed until the dough passes the window-pane test.
•Proof for 60-90 minutes until doubled in size.
2. Shape:
Once doubled, weigh the entire batch of dough and divide the weight by 20.
Divide the dough into 20 equal pieces using a bench scraper and roll it into balls.
Flatten each dough ball and add cheese to the center. Wrap the dough around the cheese and pinch it to seal.
Arrange bread bites in a round 12-inch/30 cm baking pan, seam-side down.
Cover and proof for about 30 minutes until nice and puffy looking.
3. Bake:
Preheat oven to 350F/180C.
Brush bread bites with egg wash.
Bake for 15-20 minutes.
Meanwhile, make the garlic butter:

Add herbs and salt to taste, and remove from heat.

Ingredients for 15 tiny buns
Dough
370 g bread flour
55 g granulated sugar
6 g instant dry yeast
6 g salt
185-200 g whole milk, room temperature (start low, add more if needed)
1 large egg
½ tsp ground cardamom
65 g butter, cubed and softened at room temperature
Strawberry Blood Orange Jam
400 g frozen strawberries
200 g granulated sugar
½ blood orange, zest, and juice
Vanilla Whipped Cream
750 g whipping cream
80 g powdered sugar
Seeds from 1 vanilla bean pod/1 tsp vanilla paste
Instructions
Prepare dough:
•Add all ingredients, except butter, to the bowl of a stand mixer fitted with a dough hook.
•Knead for 10 minutes on low-med.
•Add cubed, softened butter, one cube at a time. Once all the butter is added, mix for 10-20 minutes until the dough passes the windowpane test.
•Proof at 78F/26C for 90 minutes or until doubled in size.
Shape & bake:
•Once doubled, divide the dough into 15 pieces and roll it into rounds.
•Place on lined baking trays, cover, and proof at 78F/26C for about 45 minutes.
•Brush with egg wash and bake at 350F/180C for about 12 minutes. Cool to room temp.
Jam:
•Heat the ingredients while stirring.
•Simmer for 20-30 minutes until thickened.
•Transfer to the fridge until you’re ready to assemble.
Whipped Cream:
•Add ingredients to the bowl of a stand mixer fitted with the whisk attachment.
•Beat the ingredients until soft-medium peaks form. Do not overbeat.

❂ Ingredients:
190g. Unsalted Butter, at room temperature,
190g. Granulated Sugar
1 Tbsp Lemon Zest
4 Large Eggs
190g. Almond flour
45g. All-purpose flour
¼ Tsp Baking powder
⅛ Tsp Salt
¼ cup Lemon juice
200g. Fresh blueberries
For Icing:
160g. Confectioners’ sugar
2 1/2 Tbsp Lemon juice
❂ Cooking process:
⁃ Preheat the oven to 350°/180°C. Grease all 12 molds of a regular muffin pan with butter and dust lightly but thoroughly with flour or sugar.
⁃ Place the butter, sugar, and lemon zest in the bowl of an electric mixer. Beat on medium-high speed until light, then add the eggs and almond meal. Sift the flour, baking powder, and salt into a bowl, then add this to the mixer and turn the speed to low. Finally, add the lemon juice and beat until combined.
⁃ Using a pastry sleeve, squeeze the mixture into each mold, or use a spoon and divide blueberries between the cakes: push them down slightly so that they sink into the batter.
⁃ Bake for 30-35 minutes, until the edges are lightly golden and a skewer inserted into the middle of the cake comes out clean. Remove from the oven to cool for 10 minutes before gently tapping the cakes out onto a cooling rack so that they are sitting upside down. Set aside until completely cool.
⁃ To make the icing, combine the confectioners’ sugar and lemon juice (can also be used in place of lemon juice water, or milk) in a bowl and stir until it has a thick pouring consistency.
⁃ Using a pastry sleeve (or spoon), squeeze the icing on the top of the cakes. Top with fresh blueberries🤗

The recipe makes one loaf (75% hydration).
The night before preparing your leaven:
15 g active starter
75 g filtered water
75 g bread flour
Next morning:
100 g levain
375 g water (85F)
500 g white bread flour (12-14% protein)
10 g salt
❂ Cooking process:
Butter spread:
250g. Butter
4 Shallots Onion
1 Branch of Cherry Tomatoes
1 Whole head of Garlic
3 Sprigs of Thyme
Olive Oil
Salt/Pepper to taste
Fresh Parsley
❂ Cooking process:
⁃ Heat the oven to 400F
⁃ Place shallots, garlic, tomatoes, and thyme in a baking bowl and drizzle with olive oil.
⁃ Bake for about an hour, then cool completely.
⁃ Put butter in a mixer, squeeze garlic and onion on top, then put tomatoes without a branch and grind well.
⁃ Finely chop fresh parsley
⁃ Add parsley to the butter spread and now you can spread it on bread!

Ingredients
For the Flour Tortillas:
3 cups flour
1 tsp salt
Pinch of sugar
1 tbsp baking powder 7g
1 cup warm milk
1/3 cup olive oil
For the Birria:
4 lb boneless chuck roast
2 tbsp olive oil
1 large onion
4 cloves garlic
3-5 guajillo chiles
1 cup diced tomato
2 cup beef stock or water
1 tsp oregano
1 tsp ground cumin
1 tsp chili powder
1/2 tsp black pepper
Salt
For the Burrito:
Oaxaca cheese or mozzarella
Birria
Chipotle lime rice
Red beans
Guacamole
Red onion
Cilantro
Instructions
Preparing the Tortillas:
In a medium bowl, add flour, baking powder, salt, and sugar and mix. Add warm milk and oil, and knead the dough until smooth for 4-5 min.
Cover the dough with a clean kitchen towel or plastic wrap and let it rest for 10-20mins.
Place the dough onto a lightly floured surface. Divide it into 6-8 equal pieces.
Roll (or press) each into a circle about 10-12 inches. Heat a pan over medium heat. Brush the tortilla with olive oil and place a circle into the pan. Cook first side until lightly brown for 30 sec, flip and brush the other side with olive oil as in the IG Reel and cook another 30 sec. Remove it from the pan and keep it in a tortilla warmer.
Preparing the Birria Burrito:
Place a tortilla on a work surface. Layer with shredded cheese and top with some birria meat, rice, onion cilantro, and guacamole and gently roll it up.
Heat a pan over medium heat and place the burritos on it. Cook for 3-4 mins or sprinkle mozzarella cheese, and melt. Place the burrito on top and gently wrap it up with the melted cheese as shown in the Reel and cook for 3-4 min until golden brown.
Serve immediately.

Chicken
- 1.5 lb Boneless Skinless Chicken Thighs
- 1 packet of Taco Seasonings
- Few tbsps of Avocado Oil
- 1/2 cup fresh OJ
Salsa
- 1 medium diced red onion
- 1 cup diced cherry tomatoes
- ~1/3 cup fresh chopped cilantro
- Juice of 1/2 lime
- Salt & pepper to taste
- Almond Flour Tortillas
- Spicy Cashew Butter Dressing
DIRECTIONS
1. Prep Chicken and place it in the fridge for at least 20 min or as long as you want to marinate. Can do it hours before, the day before, it's up to you.
2. Prep salsa before cooking chicken and place in the fridge.
3. In a large pan on medium-high heat add some avocado oil. Once hot add in the chicken. Cook for 7-10 min per side or until the thickest part is 165 degrees internal. Remove and most minor rest for ~10 min
4. Chop up your chicken, and build your tacos.

• Season 1.75 lbs of chicken breast (diced) with garlic lovers, everything spicy & Himalayan salt + 1 tbsp olive oil then grill with the lid on (low heat).
• Wash 1 cup of rice. Add 2 cups of water. Cook on high heat until rice absorbs the water. Then lower the heat until the rice is fluffy. Turn it off and let it sit for 8-10min.
• Sauce: Roast 1/4 of red onion, 2 garlic cloves, & 2 tomatoes. Put everything in a blender with 5 chillun de Arbol (tostadas) 1/2 7oz can -of chipotle peppers (in adobo sauce) & half a cup water then blend!
• Pour the sauce on the chicken. Let it come to a simmer. Next, add 1.5 cups of chopped broccoli. Mix it. Then add 1 cup fat-free mozzarella cheese.
• Serving per container: 1/2 cup rice, divide cheesy broccoli chicken mix evenly (About 1/3 cup) & enjoy🔥
