Creamy Salmon Pasta
📕Recipe here:
❂ Ingredients:
2 steaks of Salmon
50g. Butter
1 Shallot Onion
2 Fresh garlic cloves
1 1/2 Cup Cream. Heavy cream/whipping cream.
Fresh Dill or Parsley
1/2 TspLemon zest
1/3 cup Dry White Wine
Salt and black pepper
200g. Pasta Penne
❂ Cooking process:
⁃ Cut the skin off the salmon fillets and dry them with paper towels.
⁃ Heat a nonstick frying pan or large skillet then sear the salmon, for 4-5 minutes until the crisp.
⁃ Turn over the steaks and add butter to the pan. Fry in butter for a few more minutes.
⁃ Remove salmon from the pan and set aside while you make the sauce.
⁃ In the same pan add an onion that you’ve diced finely. Cook for a few minutes until softened then add the crushed garlic. Allow to cook for 30 seconds until fragrant.
⁃ Then add white wine and fry until it evaporates.
⁃ Add a lemon zest.
⁃ Pour in the cream and add the fresh dill.
⁃ Season with salt and plenty of freshly cracked black pepper.
⁃ Simmer gently for a few minutes until the sauce coats the back of a spoon.
⁃ Then pour the cooked pasta into the sauce and mix.
⁃ Add the fried salmon on top, mix lightly and you’re done.
⁃ Cook the pasta: Bring a pot of salted water to the boil. Add the pasta and cook until al dente then drain and reserve a cup of cooking water.

8 pcs Fresh Scallops
3 Tbsp Butter
1 Lemon

❂ Cooking process:
⁃ Wash then dry the scallops very well with a paper towel.
⁃ Salt a little
⁃ Heat the nonstick sauté pan over medium-high heat until very hot. Add the avocado oil, and place the scallops in the pan.
⁃ Sear on the first side, without touching or flipping, for about 3 minutes, or until golden. Using tongs, turn the scallops over, add butter and drizzle with lemon juice, and sear for 1 to 2 minutes more, until the scallops are just cooked through.
⁃ Move the scallops to a plate. Make a sauce for scallops: In the same pan, add shallots, garlic, lemon zest, butter, and parsley.
⁃ Roast the pine nuts in a dry frying pan a little.
⁃ Place arugula and spinach on a large plate, and drizzle with a little olive oil.
⁃ Lay slices of peeled grapefruit on a pillow of greens. Then lay out the scallops and pour sauce over them. Sprinkle top with pine nuts.

❂ Ingredients:
500g. Beef thinly sliced
200g. Wheat noodles
1/2 Onion thinly sliced
2 cloves of Garlic, minced
1 Cucumber
1 Bunch of Radish
1/4 Cabbage
4 Tomatoes
4 Eggs
Сhilli powder to taste
1/2 Tsp Coriander
Salt/Pepper to taste
5 Tbsp Soy sauce
1 Tbsp Sugar
2 Tsp Sesame oil
1.5 Tsp Vinegar
1/4 cup Vegetable oil
1 liter of cold Water
Sesame seeds: for topping
❂ Cooking process:
⁃ Pour 1 liter of clean cold water into a small saucepan. Add 3 tbsp soy sauce, 1.5 tsp. vinegar, 1 tsp sesame oil. Season the broth with 1 tsp. salt and 1 tbsp. sugar. Cut tomatoes into small pieces of arbitrary shape. Add the tomatoes to the pot and stir well.
⁃ Cut the beef into thin (5 mm) strips. Transfer the meat to a clean bowl and mix with 2 tbsp. soy sauce and 1 tsp. sesame oil. and chilli powder. Leave to marinated around 30 min. Fry the beef in a frying pan 3 min, than add onion and garlic and cook around 5-7 min.
⁃ Boil the noodles until cooked, rinse with cold water.
⁃ Cut cucumber, radish and cabbage, sprinkle with salt and leave for 10 minutes, then squeeze and sprinkle with chili powder. In a clean frying pan, heat odorless vegetable oil. When the oil begins to give off a slight smoke, add the remaining chopped garlic, stir and immediately remove from heat. Pour the garlic and hot oil into the cucumber, radish and cabbage and stir.
⁃ Crack eggs into a bowl. Mix thoroughly until smooth and fry thin egg pancakes. Roll cooled pancakes into a tube and cut into strips.
⁃ Place the and noodles in a stack at the bottom of a bowl. Place piles of fried beef, cucumbers, сabbage, radishes, chopped and folded egg pancakes around it. Remove the tomatoes from the broth and place them on the side of the noodles. Pour desired amount of cold broth over ingredients, sprinkle with sesame seeds and serve. Enjoy🤤

700g. New York Beef Loin Steak
1 Rosemary parmesan bread or any other bread
9 slices Provolone cheese
For Green Butter:
150g. Butter
20g. Chives
20g. Parsley
1 Jalapeño pepper
1 Head of garlic
Salt/Pepper to taste
❂ Cooking process:
- Green butter: Preheat oven to 400F (200C) and remove butter from refrigerator until soft at room temperature.
- Peel and remove almost all of the papery skin and cut off ½ inch from the tip of the head of garlic.
- Drizzle with oil, sprinkle with salt and place a sprig of thyme over the garlic. Wrap the garlic in foil and place in the oven for 20 minutes.
- Place the butter, green onion, jalapeno pepper, and parsley in a blender bowl, squeeze in the roasted garlic, and salt/pepper, and blend until smooth.
- Remove the tops and soft inside of the bread, leaving no more than half an inch at the bottom and sides of the bread.
- Fry the thin meat of the steak for 30 seconds on both sides, with salt and pepper.
- Brush the inside of the bread boat with green butter, put the fried steak in it, and put the cheese on top.
- Place in the oven until the cheese is golden brown.
- Decorate with fresh herbs and enjoy🤤

3 Lamb shanks
1 Yellow Onion
3 Stalks of Celery
3 Carrots
4 Cloves of garlic
1 Sprig of fresh Thyme

2 Bay Leaves
1 Tbsp Tomato paste
1 Thai pepper
1 Cup Port
2 Cups Broth
Olive oil
1 Tbsp Butter
Salt/pepper to taste
Mashed potatoes side dish
❂ Cooking process:
⁃ Preheat oven to 350°F (175°C).
⁃ Wash and dry the lamb shanks with a paper towel. Salt/pepper to taste.
⁃ Heat the oil in a heavy-bottomed braiser over medium-high heat. Fry the shanks in hot oil until golden brown on all sides.
⁃ Transfer to a plate, cover with foil to keep warm, and set aside.
⁃ In the same pan, fry the onion, carrots, celery, and garlic until soft, then add the tomato paste and mix well, then put the thyme and rosemary sprigs, and add Thai chili pepper and bay leaf. Pour in the port and bring to a boil.
⁃ Return the shanks back to the pan and season with salt/pepper to taste.
⁃ Add broth, bring to a boil on the stove, then cover with lid, transfer to the bottom of the oven, and cook at 350F for 2.5 hours.
⁃ While the lamb shanks are stewing, prepare the side dish.
⁃ When ready, carefully transfer the shanks to a separate plate.
For sauce:
⁃ Strain the sauce from pieces of vegetables and herbs and place the pan on the stove. Bring the sauce to a boil over medium heat, add 1/4 cup port. Cook, then turn off the heat and add a knob of butter. Stir well until it melts. The sauce is ready!
⁃ Place the lamb shank on mashed potatoes, garnish with herbs, and pour over the sauce. Enjoy!🤤

This rib roast was smoked at 225° with avocado oil, Neil's Sarap tasty bark, rosemary, and thyme until the internal temp reached about 125°.

The roast was seared on all sides until the internal temp reached about 132°, then rested in my cooler for about an hour before slicing.

I can’t tell you how often I’ve thought of making this ravioli. The inspo, believe it or not, came from the first time I ever had a private chef cook for me at my boss’s house 10 years ago, I was only in Australia fresh from the US for only 3 months. This chef made the most beautiful 5-course dinner, but to this day I still dream of her prawn and ricotta ravioli by hand. The pasta was super thin and the filling was lovely and soft. 10 years later, I still think of her and what a fantastic dinner she put on for us.
Now here I am, practicing and hoping one day I will make ravioli as beautiful as she did that night. There are quite a few things I would change here about my technique but one thing is for sure, whenever I make anything with shrimp or ravioli by hand for Bae, it is unique and from my heart even if it’s not perfect. As long as you kiss the cook, all is under control in that hot kitchen ❤️🔥

❂ Cooking process:
⁃ Grate the potatoes and onion. Transfer the mixture to a clean bowl and squeeze and wring out as much of the liquid as possible.
⁃ Add the egg, corn starch, salt, pepper, and ground coriander mix until combine.
⁃ In a medium heavy-bottomed pan over medium-high heat, pour in about ¼ inch of the oil. Once the oil is hot use a tablespoon to drop the mixture into the hot pan, cooking in batches. Use a spatula to flatten and shape the drops into discs.
⁃ When the edges of the latkes are brown and crispy, about 5 minutes, flip. Cook until the second side is deeply browned, about another 5 minutes. Transfer the latkes to cooling rack. Repeat with the remaining mixture.
Poached Egg:
⁃ Pour 4 caps of water into a small saucepan to a gentle simmer. 200F. Add 1 Tbsp vinegar.
⁃ Crack an egg into a fine sieve set over a medium bowl. let the watery whites drain into the bowl below; Carefully transfer the egg to a small bowl.
⁃ Use the spoon to swirl the water in the pot to create a micro tornado.
⁃ Pour the egg into the center of your tornado.
⁃ Boil 2-3 minutes

Heart-shaped churros with homemade chocolate-hazelnut spread 🍫
Ingredients:
260 g water
55 g unsalted butter
1 tbsp / 15 g granulated sugar
¼ tsp salt
140 g all-purpose flour
1 egg
½ tsp vanilla paste or extract
Cinnamon-sugar
Frying oil
Batter:
Add flour to a large bowl and set aside.
Add water, butter, sugar, and salt to a small pot. Bring to a boil and simmer until the butter is melted.
Pour the hot mixture over the flour and stir with a silicone spatula until combined.
Rest for 10 minutes.
Add egg and vanilla paste and mix with an electric hand mixer until nicely incorporated.
Transfer to a piping bag with a small star nozzle attached.
Pipe little hearts onto baking trays lined with parchment paper.
Transfer to the fridge for 20-30 minutes while you heat up the oil:
Frying:
•Add frying oil to a large cast iron pot. Heat oil to 355F/180C (use a thermometer for accuracy.)
•Take your churros out of the fridge. Using scissors, cut the paper around each churro to make it easier to transfer into the hot oil.
•Place 3-4 churros into the hot oil with the parchment paper. Remove the paper with a pair of thongs; after a couple of seconds in the oil, the paper should easily slip from underneath the churros.
•Fry the churros for 1.5-2 minutes on each side.
•Transfer to paper towels and toss in cinnamon sugar while still warm.
Chocolate-hazelnut spread
Ingredients:
220 g hazelnuts
60 g powdered sugar
30 g unsweetened cocoa powder
1 tbsp neutral oil
1 tsp vanilla extract
1/2 tsp salt
150 g milk chocolate, melted
Instructions:
Roast hazelnuts at 375F/190C for 10-12 minutes. Transfer to a kitchen towel and rub until the skin comes off.
Blend in a food processor or blender until liquid and smooth. This will take around 5 minutes, depending on your blender. Scrape down the sides.
Add powdered sugar and cocoa powder, and blend for 30 seconds.
Add vanilla extract, oil, and salt, and blend for another 30 seconds.
Lastly, add the melted milk chocolate and blend until combined.
Serve warm with the churros Leftover spread can be stored in a jar at room temp for up to two weeks.

❂ Cooking process:
⁃ Steam lobster tails 5 minutes.
⁃ Take it out of the shell and cut.
⁃ Melt butter in a frying pan over low heat.
⁃ Add garlic, dill, smoked paprika and lemon zest to the melted butter. Set aside.
⁃ Finely chop the celery stalk.
⁃ Cut the buns just a little bit on the sides, brush with butter and fry from both sides.
⁃ Before putting the lobster into the bun. Pour the lobster into the warm butter sauce and stir.
⁃ Add celery and put on a bun.
⁃ Sprinkle with chives.

Dough:
I used the dough from my ‘Ultimate Homemade Focaccia’ recipe. All you need is flour, water, yeast, salt, and some good olive oil. The full recipe is linked in my profile!
Recipe for garlic confit:
2 garlic heads
Olive oil
Fresh rosemary
•Preheat your oven to 210F/100C.
•Separate the garlic heads and peel all the garlic cloves.
•Add cloves to a small casserole dish.
•Add olive oil until the garlic is fully submerged.
•Place a couple of rosemary springs on top and cover with a lid.
•Transfer to the oven and roast for 1 ½ hours - until tender and lightly golden.

I love salmon and polenta, but Bae loves fried polenta this time, so I crusted it with panko and made sure it was crispy. Before laying it on a pool of Basil Crema sauce with chili flakes, we like a little heat 🔥.
Beautiful salmon with the skin on was seared crispy skin side down and seasoned with a spice blend by yours indeed, smoked and spiced to perfection. What can I say? I’m a smoke show 😮💨
Garnish with microgreens, edible flowers, pea sprouts, and radishes. A mix of beautiful textures and flavors, Bae can never say no to crispy fish and polenta. Rich and creamy on the inside, crispy and delightful on the outside. Just like me, the hard exterior for sure, but I’m a ball of gooey love on the inside. 💜💫

Ingredients
Dough:
350 g bread flour
15 g sugar
15 g milk powder (optional)
7 g instant dry yeast
7 g salt
200 g whole milk, at room temp
1 large egg
60 g unsalted butter, softened and cut into cubes
+ 1 egg for egg wash
Filling:
200 g shredded mozzarella (can also use block mozzarella or string cheese, cut into cubes)
Garlic butter:
60 g butter
2 large cloves garlic, minced
1-2 tbsp fresh parsley, chopped
Pinch of salt
Instructions
1. Make the dough:
•Add all the ingredients, except butter, to the bowl of your stand mixer. Knead on low speed for 10 minutes until the dough comes together.
•Slowly add the butter, one cube at a time.
•Once all the butter is added, knead for 10-20 more minutes at low-medium speed until the dough passes the window-pane test.
•Proof for 60-90 minutes until doubled in size.
2. Shape:
Once doubled, weigh the entire batch of dough and divide the weight by 20.
Divide the dough into 20 equal pieces using a bench scraper and roll into balls.
Flatten each dough ball and add cheese to the center. Wrap the dough around the cheese and pinch to seal.
Arrange bread bites in a round 12-inch/30 cm baking pan, seam-side down.
Cover and proof for about 30 minutes until nice and puffy looking.
3. Bake:
Preheat oven to 350F/180C.
Brush bread bites with egg wash.
Bake for 15-20 minutes.
Meanwhile, make the garlic butter:

Add butter and garlic to a pot and heat up until the butter is melted.
Simmer for a minute.
Add herbs and salt to taste, and remove from heat.
Brush garlic butter over the bread bites immediately as they come out of the oven. Enjoy warm

Blueberry Sourdough Bagels with Blueberry Cream Cheese. This recipe uses the sourdough starter as the only leavening agent - please read through the entire recipe before you start baking
Sourdough levain
50 g active sourdough starter
50 g water
50 g bread flour
Main Dough
600 g bread flour
320-360 g water - start low, add more if needed
150 g levain
35 g barley malt syrup
10 g salt
30 g freeze-dried blueberries
For Boiling
3 liters/quarts water
45 g sugar
1,5 tbsp baking soda
Blueberry Cream Cheese
100 g frozen blueberries
50 g granulated sugar
½ tsp lemon juice
200 g cream cheese
Levain
Add the ingredients to a bowl. Mix, cover, and rest in a warm spot for four hours or until doubled in size.
Main Dough
Add flour, water, and levain to the bowl of your stand mixer fitted with a dough hook. I recommend starting with the minimum amount of water recommended. Every flour is different, so adjusting the hydration may be necessary.
Turn the mixer on for 2 min until the dough comes together. Cover and rest for 30 min.
Turn the mixer on and add salt and barley malt syrup. Knead for 10 min at medium speed. Add freeze-dried blueberries at the very end and knead until incorporated.
Place the dough in a lightly oiled bowl. Cover, and rise at around 75°F/24°C for four hrs.
Transfer the dough to the fridge overnight.
Next morning: Shape
Divide the dough into 10 equal pieces. Shape into seamless rounds. Press a finger through the center of each round to create the bagel shape.
Place on a lined baking tray, cover, and rest for 2-3 hrs.
Boil & Bake
Preheat oven to 430°F/220°C, and boil a large pot of water.
Add sugar and baking soda to the boiling water. Boil the bagels, 2-3 at a time, for 1 minute on each side.
Place the bagels on baking trays and bake for 15 min, until golden brown.
Blueberry Cream Cheese
Add berries, sugar, and lemon to a pot. Simmer on medium heat until thickened. Allow to cool and combine with cream cheese.

190g. Unsalted Butter, at room temperature,
190g. Granulated Sugar
1 Tbsp Lemon Zest

⅛ Tsp Salt
¼ cup Lemon juice
200g. Fresh blueberries
For Icing:
160g. Confectioners’ sugar
2 1/2 Tbsp Lemon juice
❂ Cooking process:
⁃ Preheat the oven to 350°/180°C. Grease all 12 molds of a regular muffin pan with butter and dust lightly but thoroughly with flour or sugar.
⁃ Place the butter, sugar, and lemon zest in the bowl of an electric mixer. Beat on medium-high speed until light, then add the eggs and almond meal. Sift the flour, baking powder, and salt into a bowl, then add this to the mixer and turn the speed to low. Finally, add the lemon juice and beat until combined.
⁃ Using a pastry sleeve, squeeze the mixture into each mold, or use a spoon and divide blueberries between the cakes: push them down slightly so that they sink into the batter.
⁃ Bake for 30-35 minutes, until the edges are lightly golden and a skewer inserted into the middle of the cake comes out clean. Remove from the oven to cool for 10 minutes before gently tapping the cakes out onto a cooling rack so that they are sitting upside down. Set aside until completely cool.
⁃ To make the icing, combine the confectioners’ sugar and lemon juice (can also be used in place of lemon juice water, or milk) in a bowl and stir until it has a thick pouring consistency.
⁃ Using a pastry sleeve (or spoon), squeeze the icing on the top of the cakes. Top with fresh blueberries🤗
