ONE-PAN DELICIOUS BREAKFAST HASH ( ENJOY THIS EASY DISH ANYTIME OF THE DAY! )
This Breakfast Hash Recipe couldn’t be simpler. Sunny-side up eggs on an island of potatoes, peppers, onions, and tomatoes, seasoned with herbs and spices! The perfect one-pan meal recipe! You can also enjoy this dish for brunch, lunch, or even dinner.
Ingredients
4 Tbsp Olive oil
1 Large Potato (Diced)
1 Medium Onion (Chopped)
2 Medium Tomatoes (Chopped)
1 Medium Bell Pepper (Red or Green) Diced
1 Tsp Oregano
Salt and Pepper
Red pepper flakes (optional)
1 Large green chili (Cut into slices)
2 Tbsp cilantro(coriander leaves) (Chopped)
Method
Heat a wide pan to medium heat. Add olive oil and diced potatoes. Coat potatoes well with oil and leave to cook for 3 minutes (stirring occasionally). Stir in onions and leave to cook for 1 minute. Add tomatoes and stir well. Cover the pan with a lid and leave to cook on medium-low heat for 3-4 minutes. Remove the lid and add in the diced bell pepper of your choice (red or green pepper gives it a nicer taste). Stir well. Add in oregano and season with salt and pepper.
Spread the potatoes, onions, peppers, and tomatoes mixture evenly on the pan. Turn the heat up to medium now.
Crack 4-5 eggs and cover the pan with a lid for one minute or until the whites of the eggs start to cook. Remove the lid and generously sprinkle red chili flakes, slices of green chili, and coriander leaves. Cover the pan and let the eggs cook until yolks are runny and whites are cooked.

CREAMY DELICIOUS MOUTHWATERING CHICKEN CURRY (A MUST TRY!)

Ingredients Serves 4
Marinade:
6 Boneless Chicken Thighs, each cut in half
1 Tbsp grated ginger
1 Tbsp grated garlic
1/2 Tbsp Sea Salt and Pepper
1/4 Cup Vegetable Oil
1/2 Tbsp Cumin Seeds (Jeera)
1 Medium Onion (Grated)
Grated Garlic and Ginger, 1 Tbsp each
2 green chilies (finely chopped)
1/2 Tbsp Turmeric powder
1/2 Tbsp Coriander powder
1/2 Tbsp Garam masala
1 Medium Tomato, chopped
1 Can of coconut cream
Sea Salt
3 Tbsp Lemon Juice
1/4 cup chopped coriander and extra for garnish
Recipe instructions
-Marinate chicken with ginger, garlic sea salt, and pepper. Set aside for 30 minutes
-Heat oil in a large saucepan over medium heat
-Add cumin seeds, cook until they start to brown and sizzle
-Stir in grated onions and fry for 10 minutes till golden.
-Add the ginger and garlic, fry for a few seconds
-Then add the green chilies and fry well
-Add chicken pieces with the spices(turmeric, coriander, and garam masala)
-Mix well for 1-2 minutes
-Stir in the chopped tomatoes and cook for 1-2 minutes
-Add the coconut cream and mix well
-Cover and cook for 5 minutes
-Stir in sea salt, lemon juice, and chopped coriander
-Let the curry simmer for 2 minutes on low heat
-Garnish with some coriander and serve with rice or naan

GARLIC BUTTER SHRIMP SCAMPI RECIPE
INGREDIENTS
Olive oil
4 tablespoons unsalted butter
4-5 large garlic cloves, minced (or 2 tablespoons minced garlic)
400g large shrimp prawns, shelled with tails on or off
Salt and fresh ground black pepper to taste
1/4 cup Broth or Dry White Wine
½ - 1 teaspoon crushed red pepper flakes or to taste (optional)
2 tablespoons lemon juice
1/4 cup chopped parsley
DIRECTIONS
- Heat a Large Pan
- Add olive oil and 2 tablespoons of butter
- Add garlic and sauté until fragrant (about 30 seconds - 1 minute)
- Add shrimp and season with salt and pepper to taste
- Sauté for 1-2 minutes on one side and flip shrimp once it begins to turn pink
- Pour in broth or dry white wine
- Add red pepper flakes (if using)
- Stir in the remaining butter, lemon juice, and parsley
- Stir for 1- 2 minutes and immediately remove from heat (Do not overcook
the shrimp)

Quick and Healthy Mayonnaise
This simple, easy and quick mayonnaise recipe takes one minute to prepare. Using an immersion blender, you can prepare this for your family, for parties, or just in case you run out of Mayo! A healthy way of making a loved condiment for your favorite sandwiches and recipes.
Ingredients (Makes a little more than 1 cup of Mayo)
1 Egg (Room temperature only) (to be added first)
½ Tbsp Lemon Juice
1 Tsp White vinegar (preferable) or 2 Tsp apple cider vinegar
1/4 Tsp Dijon mustard or honey mustard
1/2 Tsp salt
1 cup Olive oil or Avocado oil (to be added last)
Add the ingredients in the order mentioned above and at the end add any lightly flavored oil. Insert an immersion blender and blend till all ingredients mix well together.
ENJOY! :)
Tips: Use a neutral, light refined oil for mayonnaise, such as olive oil, avocado oil, grapeseed oil, canola oil, sunflower oil, safflower oil or make blended oil (a mix of extra virgin olive and vegetable oils).
DO NOT use unrefined, extra-virgin olive oil, which has a strong flavor and may cause mayonnaise to separate.

4 or 5 whole Jalapeños
2 whole garlic cloves
1 tbsp of vinegar

Tips and storage
- For a thinner sauce add a few tablespoons of hot water
- Remove seeds to make sauce milder

INGREDIENTS SERVES 4
Olive Oil (Extra Virgin or Light)
1 Onion (chopped)
4 Cloves garlic (finely chopped)
1 Red Pepper (deseeded and diced)
1 Orange Pepper (deseeded and diced)
800ml or 4 Cups canned chopped tomatoes
Roasted garlic and sun-dried tomato sauce (see link above)
1 Tsp Paprika
20-25 pepperoni, sliced (you can use any pepperoni you like e.g pork, beef, vegan etc)
2 Cups of Penne Rigate Pasta, cooked to el dente ( You can use your favourite pasta)
2 Tbsp chopped fresh parsley
Reserved Pasta water ( I used 1/4 Cup for this pasta dish, but keep a little extra to use as needed)
Salt and pepper
Grated Parmesan to sprinkle on finished Pasta
METHOD
-Heat 3-4 Tbsp of Olive oil
-Add the onions and cook over medium heat (stirring occasionally, for 5 minutes, or until softened).
-Stir in the chopped garlic and fry till fragrant.
-Add the red and yellow peppers and fry the peppers till they are slightly cooked
-Then put in the pepperoni slices and fry briefly for 1-2 minutes
- Add the diced tomatoes and their can juices, roasted garlic and sun-dried tomato sauce,
paprika to the pan. Stir to combine well.
-Reduce heat to low and simmer uncovered for 15-20 minutes
-Add a pinch of pepper and stir well (if you want you can also add some salt to taste).
-Cook your favourite Pasta and pour into sauce ( make sure the pasta is freshly cooked and still warm )
-Toss the Pasta around to coat with the sauce
-Add the chopped parsley, reserved Pasta water and mix to combine
-Turn off the heat
-Finish off with a drizzle of olive oil, mix and serve immediately
-Warm the serving dish before adding the pasta in it
-Top with grated parmesan cheese
-Serve immediately and enjoy it with mixed salad leaves or garlic bread.

INGREDIENTS (makes a little more than 1 Cup of sauce)
-1 Cup Sun-Dried Tomatoes
-5 Roasted garlic cloves (see below for instructions)
-1 Tsp Dried Oregano
-1 Tsp Dried Thyme
-1/2 Tsp crushed red pepper flakes (optional but add a little kick in the sauce)
-1/2 Tsp Sea salt
-1/4 Tsp Cracked Black Pepper
-1 cup Olive oil (Extra virgin or Light)
METHOD
- In a heat proof bowl, soak sun-dried tomatoes in hot water for 30mins to an hour to rehydrate it
- Drain and blot dry.
- In a blender or food processor, add the rehydrated tomatoes and rest of the ingredients.
- Blend or process all the ingredients for a few seconds until smooth (Pulse until well blended).
- Give the sauce a good stir to mix the tomatoes well with the oil.
- Use immediately or store in an air tight container and refrigerate (tastes even better the next day).
TIPS:
- Soaking the sun dried tomatoes in warm or boiling water shortens the soaking time, but if you are not in a hurry you can leave it in the refrigerator overnight.
- Rehydrated tomatoes can easily be pierced with a fork.
- The liquid used to rehydrate the tomatoes contains vitamins and may be used in cooking
- Refrigerate the sauce for up to 2 weeks in an airtight container OR in the freezer for 3-4 months.
- Just note that when it is refrigerated, the sauce will solidify so you’ll want to keep it out an hour before using or serving.
- When using as a pasta sauce, add a little of the pasta cooking water to thin the sauce.
HOW TO ROAST GARLIC
-Peel and discard the papery outer layers of the whole garlic bulb.-Leave the skins of the individual cloves of garlic intact
-Using a sharp knife, cut 1/4 to a 1/2 inch from the top of cloves, exposing the individual cloves of garlic.
-Drizzle a few teaspoons of olive oil over each exposed head, and use your fingers to rub the olive oil over the exposed garlic cloves.
-Season with salt and pepper
-Bake at 400°F (205°C) for 30-40 minutes, or until the cloves are lightly browned and feel soft when pressed with a spoon.
-Leave to cool completely before using.

1/2 Cup Red lentils (Masoor Dal)
1/2 Cup Split chickpeas (Chana Dal)
Salt and Pepper
1 Vegetable stock cube (low sodium or you can use a normal veg cube)
HERBS & SPICES
1 Tsp Dried Oregano
1 Tsp Dried Thyme
1 Tsp Mixed Dried Italian herbs
1/2 Tsp Turmeric
1/2 Tsp Cayenne Pepper
METHOD
1- In a large cooking pot, heat 3 Tbsp Olive oil
2- Add onions and garlic (Sauté for 2-3 minutes till onions are almost translucent)
3- Put in the carrots and celery (Stir and cook for 2-3 minutes)
4- Season with salt and pepper
5- Add in the chopped Kale and Spinach (cook for a minute)
6- Now put in the lentils, mix well and cook for a minute.
7- Season with salt and pepper
8- Add all the dried herbs and spices and mix well
9- Pour in 8 Cups of water
10- Bring this to a boil and drop in a veg stock cube
11- Cover and simmer (on medium low heat) for 20-30 minutes or until lentils and vegetables are cooked through.
12- Remove cover and season with salt (if needed)
13- Serve hot and Enjoy!
Tip : If not using the Veg stock cube , you can use 4 cups of store bought Veg stock and 4 Cups of water)
