Can Wine Vinegar Really Transform Eggs? Let's Try Out This Egg 'Hack' And See
It seems every little cooking technique now days gets treated like a "viral hack". This particular technique, which has been showing up in my news feed a lot lately, is not actually new. It was demonstrated by French chef, Roger Verges in his 1979 cookbook.
In this video, I try out the technique of added wine vinegar both to over easy / fried eggs as well as to scrambled eggs to see what impact it would have.

🍬 Keto English Toffee Candied Almonds / Almond Brittle
This recipe is very similar to my keto candied pecans recipe, but I was really shooting for something that could be used along with chocolate in a fat bomb or candy bar that would come close to tasting like a Heath bar. You can make this either as candied almonds or as an almond brittle. Either way, you're looking at just 3g net carbs per ounce (which is a pretty generous serving).
I blend a number of sweeteners in this recipe because I find they each bring a little something to the party. You don't need to do this, but I do recommend that you do a 50/50 blend of white and brown sweeteners.
In this video, three of the sweeteners I used contain Erythritol (Lakanto, Swerve and Sukrin) -- so this batch had a more noticeable "cooling" effect in my mouth than a previous batch where my two white sweeteners were BochaSweet and allulose. If you have it or aren't put off by the price, I highly recommend using BochaSweet instead of a white Erythritol sweetener.
Also, if you're willing to accept a few extra carbs, you could use Truvia brown in place of one of the brown sweeteners. This will add 2g net carbs per ounce of this brittle. The total yield on this brittle was approximately 20 ounces.

In this video, I finally make a keto cornbread that tastes like cornbread, thanks to a recipe submitted to me from one of my executive channel members, Gigi Varnum. I've tried at least half a dozen different keto cornbread recipes and this is easily my favorite. Souvlaki - The Greek "Fast Food" That Just Happens to Be Keto
In this video, I make souvlaki, which is typically made from chicken or pork, rubbed with a blend of spices and cooked on skewers. I'll be making it both with chicken (grilled) and with little ground beef patties (baked).
Because this video is more about "how" to make souvlaki in various ways, I am not including the macronutrients or a printable recipe.
Herb/Spice Blend (enough for 2 lbs / 1 kg of protein):
- 1 tsp dried thyme
- 1 tsp dried organo
- 1 tsp Aleppo pepper flakes or smoked paprika
- 1 tsp sea salt or kosher salt
- 1 tsp ground black pepper
- 1 tsp ground fenugreek seed
Apply as a rub or toss with meat chunks in a large bowl to coat. If using ground meat (beef, lamb, chicken, pork, etc.), add one beaten egg for each pound of meat, then mix in the spice blend by hand.
Tomato/Onion Salad:
- 4 medium tomatoes, sliced into half moons
- 1 medium red onion, thinly sliced the long way
- 2 tsp dried oregano
- 2 TB olive oil
- 1 TB red wine vinegar
Cooking temps and time:
Air fryer: 395F (200C) for 12 minutes
Convection oven: 425F (220C) for 20 minutes
Grill: high heat for 15 minutes, flipping at halfway point
Skillet: this is only recommended for ground meat, as the rub may get bitter tasting if it burns.

Bacon Wrapped Sausage Fatty - Keto / Carnivore
I've been making bacon-wrapped sausage fatties in my smoker for years. You can fill them with just about anything you can imagine -- but usually it's a combination of cheese and meat, and maybe some veggies like peppers and onions.
For this video, I chose to bake the fatty in my oven -- since more people have ovens than have smokers and I wanted all my keto brothers and sisters to be able to make this.
NOTE: Especially if you are making this in an oven, you will want to use the thinnest bacon you can find, so that it fully cooks. In a smoker, where the bottom bacon and seam are exposed, it cooks nicely. If using an oven you may want to finish the fatty by broiling both the top and bottom. ALSO - this is not burnt, that's just the color from the BBQ rub.

Smoked Cream Cheese - Outdoors or Indoors - Super Low Carb / Keto
I love smoked foods and I love cream cheese, so this recipe has rapidly become one I make every few days. It's super easy to make, and if you have the right hardware (linked below), it can be made indoors or outdoors.
Be aware that different brands of cream cheese can have different carb counts. Kraft Philadelphia cream cheese has .5g of carbs per ounce (26g), but some generic brands can have over 2g of carbs per ounce. I've also found that generic brands tend to be more creamy, likely due to the various combinations of gums (including xanthan, locust bean, acacia, etc.).

🍋 Sour Cream Lemon Sherbet - Keto - 2g net carbs per serving 🍨
In this video, I keto-fy a recipe from Johnny Iuzzini's cookbook, "Sugar Rush" and create a wonderfully creamy sherbet that balances sweet and tart. The consistency of this is a lot closer to ice cream than it is to sherbet, and I found through a couple of trials that the blend of allulose and Erythritol create a texture that's not too soft, but also doesn't freeze rock hard. My narration gets this backwards -- I meant to say that using all Erythritol creates an ice cream that is TOO HARD, rather than too soft.
I'll definitely be playing with this recipe going forward, as I think it would lend itself well to some keto-friendly berries.

The Best Keto Refried Beans
Most keto refried beans recipes either use black soybeans or taste like pureed eggplant. While this recipe does use eggplant, it also uses lupini bean flakes. This makes the recipe way closer to the taste of real refried beans, while also decreasing the net carbs. I also add cream cheese to not only make this recipe creamier, but to help the fat from the chorizo keep from separating.

Are You Kidding Me?!? Puffs Made from Radishes?!? So Tasty!
Sometimes, my recipe experiments yield unexpected results. That was certainly the case here, where I was attempting to make a keto "tater tot" from radishes. Over the course of several trials, my "tots" wound up morphing to puffs, with a popover-like consistency.

Turkish Stuffed Flatbread - Keto / Low Carb
In this video, I take a recipe from Milk Street Magazine and make a few tweaks to it and delivering a keto meal that no one will suspect is low carb. This brings a fantastic Middle Eastern / Mediterranean flavor, and when paired with a little tzatziki, it will tickle your yummy button.
BEFORE YOU COMMENT: my hands have taken a beating due to yard work this past week. Try not to let it bother you. Also, I took a 475F baking sheet out of the oven and hit my left bicep with it -- hence that scar. On the bright side, my finger nails are looking quite a bit better.

Keto Pumpkin Cheesecake Mousse - Whipping Siphon Recipe
You don't have to be on keto to enjoy this recipe. I realize a lot of my subscribers probably don't have a whipping siphon, but I did get a lot of requests for more videos using it, so here's an incredibly simple and wonderfully delicious treat -- pumpkin cheesecake mousse.
I discovered after posting this video that if you dispense the mousse into serving bowls and refrigerate them, uncovered, for another hour or so, you really get a wonderful texture out it -- more like a cream cheese mousse than the whipped cream texture you get straight from the whipping siphon.

Keto Candied Bacon🥓 (aka Pig Candy) 🐷🍬
In this video, I make "pig candy" from the end scraps of the homemade bacon I recently made. I also describe how to you essentially the same recipe to make candied bacon strips.
I like a little spice with my sweetness, so I use a fair amount of my keto BBQ rub. If you're looking for more sweet than heat, you can substitute and equal amount of brown sugar substitute for however much rub you remove. If you are doing strips of bacon, you can also brush the bacon with a sugar free maple/pancake syrup before adding the rub/sweetener.

Keto Panna Cotta - Six Different Versions - So Easy, So Delicious!
Prior to this video, I had never eaten panna cotta, an Italian chilled molded dessert. All I can say is "WOW". I may have just found my new favorite keto dessert. This is so easy to make and packs so much flavor payoff, I'll be making this a lot going forward.
The base version has only 3g net carbs and the toppings or add-ins that I used probably only raise them by 1g (if that). If you're looking to add more fat to these, use half-and-half instead of whole milk. I've also had viewers say that they have substituted almond milk or coconut milk for the whole milk.
In this video, I make the following variations: vanilla, coffee, matcha, blueberry, topped with lime zest, and topped with grated dark chocolate and crushed hazelnuts.
