I have seen so many different versions of these pop up on my tiktok For You Page so I decided to make a version of them.
Basically, you mix together canned chicken, cheese and egg and air fry them. They are super easy to make! Here is how I made them. 😊
.
RECIPE:
1. In a bowl, mix together 2 cans of chicken breast, 2 eggs, 1 cup of freshly shredded mozzarella cheese and season with your favorite seasonings. I used spicy on mine.
2. Form them into nuggets and place them in your greased air fry basket.
3. Air fry at 375° for 10 minutes.

*We dipped ours Famous Cluckin sauce that tasted just like Chick-fil-A sauce! They were so good and all four of my kids loved them! 🙌

This is such an easy meal but also delicious and filling. 🤤🙌

I like to use Nathan's hot dogs because...
#1. They taste so good!
#2. They only have 1g carbs each.
.
To cook these, I sliced them as shown in the video and then air fried them at 350° for 8 minutes.
.
I topped mine with some keto friendly chili, shredded colby jack cheese and jalapeños.
.
CHILI:
1. Sauté 1 tbsp of avocado oil, 2 tsp of minced garlic and 1 chopped yellow onion in a skillet for a few minutes.
2. Add in 1 lb of ground beef and cook until browned.
3. Stir in 2 tbsp of keto chili seasoning, 1 8oz can of tomato sauce, 1 cup of water and 1 can of mild Rotel.
4. Simmer over medium heat for about 5 minutes.
*Optional: You can add in some Eden Organic Black Beans if you'd like.

CHILI SEASONING (MAKES 2-3 SERVINGS):
1/2 tsp garlic powder
1/2 tsp oregano
1/4 tsp cayenne pepper
1 tsp paprika
1.5 tbsp chili powder
3/4 tbsp cumin
1 tsp salt
1/2 tsp pepper
1 tbsp nutritional yeast

I saw a video where a girl sprinkled some fat free jello on grapes and then froze them. My kids love grapes so I thought I'd make some for them and then I got the idea to make myself a keto version! 💡

THEY ARE SOOOO GOOD!!! 👏😋 We have been snacking on them the last couple days.

RECIPE:
1. Put your favorite, washed berries in a freezer safe container. I used blueberries, raspberries, blackberries and sliced strawberries.
2. Sprinkle on a little bit of sugar free jello. *I used some raspberry jello.
3. Put the lid on, give it a shake, and then sprinkle on a little bit more jello mix.
4. Place the lid back on and freeze.
*Keep in the freezer.

I made these before in my air fryer but baking them in the oven is definitely the way to go. These were so crispy on the outside, but tender and juicy on the inside. Yum!!!
RECIPE:
1. Place your bone-in, skin on chicken thighs skin side down in your cast iron skillet.
2. Rub with avocado or olive oil.
3. Generously sprinkle on some Spicy or Original seasoning.
4. Flip them over and repeat on the other side.
5. Bake at 350° for an hour and a half.

I was craving some cookies the other night so I threw some ingredients together and baked them in what my husband calls my "Adult easy bake oven." 🤣 (Ninja Foodi Digital Air Fryer)

They turned out soooo yummy! I hope you guys like them as much as we all did!
Ps...I had my kids try them and I asked them if they thought they were regular cookies or keto cookies. They said regular! 🙌🥰
.
RECIPE:
1.) In a bowl, mix together:
•1 egg
•1/3 cup golden monkfruit sweetener
•1/3 cup powdered monkfruit sweetener
•4 tbsp softened butter
•1 tsp vanilla extract
2.) Add in:
•1/2 tsp baking soda
•1 scoop of vanilla collagen @preferredketo
•1 & 1/4 cups almond flour
•1 tsp sugar free chocolate pudding mix.
3.) Mix it all together and then fold in 1/2 cup of your favorite sugar free chocolate chips.
4.) Refridgerate for 20 minutes.
5.) Roll into balls and place on a parchment lined pan.
6.) Bake at 350° for 8-10 minutes.
7.) Place on a rack to cool.
*They are very gooey when they first come out of the oven (which is my favorite way to eat them!) They will harden up as they cool.

I threw these bad boys together last minute tonight and THEY WERE SOOOO GOOD! 🙌

RECIPE:
1. Lay out your desired amount of boneless, skinless chicken tenderloins.
2. Place a small slice of colby jack cheese on each one.
3. Wrap each piece with a slice of bacon.
4. Place in your air fryer basket. *I line my pan with parchment paper and spray the basket with cooking spray.
5. Sprinkle on some Kinders The Blend (salt, pepper & garlic) and a little bit of cayenne pepper.
6. Air fry at 375° for 20-25 minutes. * I removed mine once the bacon was crispy and the chicken was cooked through.

☆We dipped ours in my homemade ranch dressing. 😋
☆Some of the cheese melted off onto the parchment paper and formed little cheese crisps. They were delicious!!

Guys...run and make this ice cream! It is amazing!!! 👏👏 I saw Mayra from low crab make this and I HAD to try it. I made one first with just vanilla and then decided to add some peanut butter. Mind blown! 💥 So, so good!!! So then I decided to make another batch but I added peppermint extract instead. Again....wow!!! 😋🥰🙌

RECIPE:
1. In a mixer, whisk together 1 cup of heavy whipping cream, 1/3 cup of allulose and 1.5 tbsp of pure vanilla extract.
☆If you are going to add in a flavor, do that now as well.
🥜 Peanut butter...I added a big spoonful of Crazy Richard's.
🌱 Mint...I added 1/2 tbsp of vanilla & 1/2 tbsp of peppermint extract.
2. Whisk until peaks start to form (about 1-2 minutes.)
3. Add the mixture to a mason jar. Pat the bottom to try and get the air out.
4. Place a lid on the jar and freeze it.

I have been ordering these from my local pizza shop but after making a homemade version of it, I won't be ordering out anymore! THIS WAS SOOOO GOOD! 👏🎉🥰

RECIPE:
1. Spray a small, aluminum foil pan or baking pan with cooking spray. (Mine was 7")
2. Spread on 1 tbsp of low carb pizza sauce or marinara sauce.
3. Sprinkle on some shredded mozzarella.
4. Add your favorite toppings in layers along with 2 more tablespoons of sauce.
*I added sandwich pepperoni, mushrooms, mini pepperoni and fresh mozzarella.
5. Bake at 350° for 10 minutes.
6. Broil for 2 minutes.
I garnished mine with basil from my garden. 🌱

This is a super easy and yummy low carb snack! I love to dip stuff so these come in handy. 🙌 I dipped mine into Fried Pickles & Ranch Dip from Sam's Club.

RECIPE:
1. Cut 8 slices of THINLY Sliced cheese into fourths. I used half cheddar, half colby jack.
2. Space them out on a parchment lined pan and sprinkle with pink Himalayan salt if desired. *I sprinkled on a tad.
3. Bake at 250° for 20 minutes.
4. Let them cool. They will crisp up.

This was only 2 net carbs for the whole thing! I used thinly sliced colby jack cheese that was VERY low in carbs. We are talking less than 1 carb for 3 slices. 🙌 Be careful when choosing your meat from the deli. I always look through the glass at the nutrition labels and pick the lunch meat with the least amount of carbs and sugar. This turkey was 0 carbs & 0 sugar as was the bacon. :)
My 9 yr old saw me make this and asked for half so I shared with her. Usually I save the other half for lunch the next day. These are very filling. 🙌

RECIPE:
1. Lay out 6 slices of thinly sliced colby jack cheese on a silicone pan or parchment lined pan. Make sure they are just slightly overlapping.
2. Bake at 375° for 4 minutes.
3. Remove it from the oven and add on turkey, bacon, lettuce and mayo.
4. Roll it up and then blot it with a paper towel. *that part it optional but it is very greasy if you don't.

I absolutely love making Keto Chicken Nuggets for lunch! I decided to try it this time using rotisserie chicken instead of canned chicken. They turned out delicious! My kids loved them too. 🙌

RECIPE:
1. Shred or cut up 2 cups of rotisserie chicken.
2. In a bowl, mix together the chicken with 1 egg, 1/4 cup of colby jack cheese, 1/4 cup of parmesan cheese and a dash of salt & pepper.
3. Form into nugget shapes and place in a greased air crisp basket.
4. Air fry at 375° for 8 minutes.

Caprese Salad using fresh tomatoes and basil from my garden is one of our favorite things to eat for lunch in the summer. I saw a recipe similar to this last year on Facebook and it recently came up in my memories. I decided to make my own version of it. My family loved it!! 🥰🥰

RECIPE:
1. In a blender or food processor, puree:
•1 cup of fresh basil
•2 tbsp of avocado oil
•1/4 cup parmesan
•1 tsp minced garlic
•1/8 tsp black pepper
•1/8 tsp salt
2. Cut 3 chicken breasts in half (or use 6 thin chicken breasts.)
3. Season with salt & pepper.
4. Top the chicken with the pesto and bake at 400° for 15 minutes.
5. Remove chicken from the oven and top with fresh tomato slices, fresh mozzarella and parmesan cheese.
6. Bake for another 5 minutes.
I garnished ours with fresh basil leaves. 🍃

2pm came around and I had been so busy that I had not eaten lunch yet. I decided to make myself a cherry pie on the Blackstone and enjoy it with some of my keto vanilla ice cream I made the other day. This delicious dessert was 9 net carbs and worth every one of them! 😋

*When I eat a higher carb lunch like this, I just make sure to eat a lower carb dinner. 🙌

RECIPE:
1. Cut a circle out of a flatbread. *I used about 1/3 of one.
2. Butter up your griddle or skillet.
3. Place the tortilla on the butter and then add on some no sugar added cherry pie filling. *I added on about 1/4 of a cup.
4. Fold the tortilla over and put a little butter on it to help the cinnamon sugar stick if needed.
5. Sprinkle on some golden monkfruit sweetener and cinnamon.
6. Flip it over and repeat on the other side.
I ate mine with 1 scoop of my @preferredketo Vanilla Collagen keto ice cream. It was FABULOUS!

These zucchini fries were crispy and sooo good! My youngest daughter tried one and couldn't stop. She devoured them! 😋🤣

*If you are allergic to almonds, just omit the almond flour. This can be done with just the grated parmesan cheese and seasonings.
*You could also replace the almond flour with crushed pork rinds.
.
RECIPE:
1. Wash and slice your zucchini into thin strips.
2. In one bowl, whisk 2 eggs with a spoonful of my homemade ranch dressing.
3. In another bowl, mix 1/2 cup almond flour, 1/2 cup grated parmesan cheese, garlic powder, salt and pepper.
4. Dip the zucchini first into the egg mixture and then into the flour mixture.
5. Place them on a greased air crisp basket and air fry at 400° for 10 minutes.
*It is important that you spray your air crisp basket or else they will stick to it.
*We dipped ours in my homemade ranch dressing.

I was craving some zucchini bread and have an abundance of the vegetable in my garden this year! So, I decided to make some low carb zucchini bread. It turned out super moist and oh so delicious!

I made 2 batches of it, experimenting with ingredients to see which I liked the best. For the 2nd batch, the only thing I did differently was add in 2 tsp of vanilla instead of 1 and I also added in 1/4 cup of golden monkfruit sweetener. The 2 batches didn't taste very different so I decided to do away with the added golden sweetener. I hope you all love this if you decide to make it! We have been snacking on them all week!

RECIPE:
1. Grate a zucchini until you have 1.5 cups.
2. Drain it as much as you can using a cheesecloth or strainer.
3. In a bowl, mix together:
•2 cups almond flour
•1 tsp baking powder
•1 tsp cinnamon
•2 tsp pure vanilla extract
•1 tsp nutmeg
•1/4 tsp salt
•1/2 cup classic monkfruit sweetener
4. In another bowl, whisk 2 eggs and 1/4 cup of melted butter.
5. Add butter and egg mixture to the flour mixture.
6. Stir in the zucchini and add 1/4 cup of chopped walnuts if desired.
7. Put the mixture into a greased mini loaf pan *you can also use a regular loaf pan.
8. Bake at 350° for 30 minutes.
**If using a regular loaf pan, it may take slightly longer to bake.

Macros for 1 mini loaf (8 total servings):
3 net carbs

25g fat

Wow!!! These turned out better than I thought they would and I have been enjoying them for the past 3 days! I stored the leftovers in a ziplock bag in the fridge and then toasted them when I was ready to eat one. I made a sandwich with one yesterday and then enjoyed a couple toasted with cream cheese. 🤤🤤🤤

RECIPE:
1. In a microwave safe bowl, add in 1.5 cups of freshly shredded mozzarella cheese and 4 oz of cream cheese.
2. Microwave in 30 second intervals until melted. It took mine 1 minute.
3. Remove and immediately stir it up until combine.
4. Add in 2 eggs, 1.5 cups of almond flour, 2 tsp of baking powder and 1/4 tsp of salt.
5. Stir it all together and then knead it for a couple minutes. *I oil up my hands for this part because it is super sticky.
6. Cut it into fourths and then roll each piece into a log. Connect the ends to form your bagel.
7. Place on a parchment lined pan and sprinkle with white and black sesame seeds.
8. Bake at 400° for 12 minutes.
*Keep an eye on them as it gets close to the 10-11 minute mark to make sure they don't burn.

**Next time I make them, I will cut the ball of dough into fifths to make 5 instead of 4.

1. Heat up your griddle or skillet.
2. Cook your meat of choice. I cooked 3 slices of Canadian bacon.
3. Melt 1 tbsp of butter on the griddle/skillet and pour on 2 eggs whisked with a splash of heavy cream, salt & pepper.
4. Place your keto bagel or bread on the egg with the outside facing up.
5. Flip the whole thing over.
6. Add your meat to one side along with a slice of cheese.
7. Fold it over and then cook for about 30 seconds per side or until the outside is toasty and the cheese is melted.

*6 net carbs for the entire sandwich. 🙌
