I've Got A Strawberry Mousse Recipe That Will Knock Your Socks Off!
My strawberry mousse recipe is made with only a few organic ingredients and is super easy to make and there is no white sugar in this. Your Valentine will love it.

Strawberry Mousse Recipe
Ingredients:
1 ¼ lbs of organic strawberries, rinsed and stems removed
1 - 2 ½ Tbsp. maple syrup, depending on strawberry sweetness
½ tsp. Vanilla extract
1 tsp. Gelatin, I used 100% grassfed beef gelatin
4 tsp. Cold water
1 cup organic whipping cream
1 - 2 Tbsp. maple syrup
1 tsp. Vanilla extract
Directions:
Blend the strawberries in a blender until smooth. Pour the strawberries into a fine mesh strainer over a bowl to remove the seeds. Once strained, pour the strawberry juice into a saucepan. Add the maple syrup and vanilla extract and stir.
Cook this over medium heat or a good simmer. Once it starts to slightly boil, reduce the temperature so it doesn’t burn. Stir constantly for 10 - 12 minutes so the strawberries reduce about ¼.
Turn off the heat to cool. Place the gelatin in a small microwavable dish that contains the water. Stir. Let this sit for 3 minutes to bloom. After 3 minutes place the dish in the microwave and cook for 10 second increments. I cooked mine for 15 seconds. It will get very hot so be careful.
Once the gelatin is completely dissolved and looks clear, add 2 to 3 Tbsp. of the strawberry puree and stir to temper the puree. Then add this back to the pan with the rest of the strawberries and stir to combine.
To quickly chill the strawberry puree, place the pan into another dish filled with ice water and stir occasionally.
In another bowl whip the whip cream, vanilla extract and maple syrup using either a whisk, hand mixer or a kitchen aid type mixer until you get stiff peaks.
Pour the chilled strawberry puree into the whip cream and fold gently until the color is uniform pink and there are no white streaks.
Spoon into individual serving dishes and chill at least 4 hours. Serve with a dollop of whip cream, slices of strawberries and organic blueberries sprinkled on top.
This makes a fantastic Valentine's dessert!

Peanut Butter:
1 cup natural unsalted peanut
Pinch of salt
Almond Protein
1/4 cup flax seed (the brown ones are actually healthier but I was out!)
1 cup natural almonds
Nutelaaa
1/2 cup peanut
1/2 cup hazelnut (I keep the skin)
Once liquid.. 2 tbsp raw cacao powder or protein powder!
Adjust with sweetner after blended (not in the mixer or it will seize!)
Method:
For all roast the nuts either 6:30minutes on the grill, 4minutes at 200C or in a pan
Then let it blend in a food processor!

INGREDIENTS
225 gm plain flour 1.5 cups
1.5 teaspoons baking powder
30 gm cocoa powder - dark
200 gm caster sugar 1 cup
250 ml water 1 cup
1 Tablespoon white vinegar or any vinegar
125 ml vegetable oil ½ cup
1 teaspoon vanilla
For chocolate ganache:
500 gm Sweet Potato unpeeled uncooked weight - you might need two
350 gm dark chocolate cut into pieces
INSTRUCTIONS
Oven 170 C / 350 F deg, to bake the cake / 8 inch cake tin - 20 cm. 200 C / 180 F to bake the sweet potato
Put the flour, baking powder and sugar in a bowl with the cocoa powder.
Add the water, vanilla, oil and vinegar. Mix until a smooth batter is formed
Pour into a lined round tin. Bake gently for 30-40 minutes or until cooked in the centre when tested with a toothpick. If you have a hot oven bake at 160 C.
The Sweet Potato ganache
Break or chop the chocolate up into tiny pieces and put into a bowl. Scoop out the potato and put into the bowl with the chocolate and mix till melted. Use a hand mixer to give the ganache a beating and cool it down
Alternatively *******
You can peel and put the potato into a food processor and whizz till smooth and the chopped chocolate and process till smooth.Make sure the sweet potato is hot. This will melt the chocolate.
The ganache will get firmer as it cools so if you want to pipe do it straight away.

Italian “Antipasto” sushi - a unique appetizer for your next party
Ingredients:
Chilled risotto *recipe following
Prosciutto
Salami, slices
Mozzarella, sliced
Blanched asparagus
Artichoke pesto *recipe following
Balsamic glaze
Micro greens
Directions:
Spread rice on a sushi mat (9.5”x9.5”) bout halfway in an even thin layer
In a single layer: place slices of prosciutto, salami, mozzarella and asparagus in the middle
Roll, gently pressing in and tucking in the sides.
Cut in half, then each half in half again, yielding 8 pieces.
Spread artichoke pesto on the bottom of the plate. Arrange sushi, drizzle with balsamic glaze and top with micro basil. Optional toppings: olives – different colors, red peppers
Risotto “sushi” rice:
4 cups unsalted chicken stock, warmed (you can also substitute vegetable broth or stock)
1 tablespoon unsalted butter
1 tablespoon olive oil
1 cup Arborio rice
1/3 cup freshly grated Parmigiano-Reggiano or Pecorino-Romano cheese
1/3 cup white cheddar cheese
1/3 cup mozzarella cheese
Melt the butter and heat the oil in a large wide-bottomed pot. Add the rice; stir to coat.
Add 1 ladle of broth (½ cup to ¾ cup), stir, and let simmer until broth is nearly absorbed, a few minutes
Keep adding broth, one ladle at a time, until rice is creamy.
Stir in all cheese.
Cool on a sheet pan, keep refrigerated until ready to use.
Artichoke Olive pesto:
Add 1/2 cup marinated artichokes in oil (with the oil marinade) to 1 cup pesto. Blend in the food processor.
Basic Pesto:
2 cups fresh basil leaves, packed (can sub half the basil leaves with baby spinach)
1/2 cup freshly grated Romano or Parmesan-Reggiano cheese (about 2 ounces)
1/2 cup extra virgin olive oil
1/3 cup pine nuts (can sub chopped walnuts)
3 garlic cloves, minced (about 3 teaspoons)
1/4 teaspoon salt, more to taste
1/8 teaspoon freshly ground black pepper, more to taste
