MUTTON WHITE KARAHI RECIPE
INGREDIENTS
Mutton – 1 kg
Yoghurt – 1 Large Cup

Karahi Gosht Masala – 1 tbsp
Cooking Cream – 2 tbsp
Mutton Stock – ½ Cup
Hot Water – as per Required

Preparation Method :-
Take a big Casserole Pot add 1 Kg Chopped Mutton Pieces , add 1 tbsp of Ginger Garlic Paste & mix it , then add Hot water & further boil for 30 to 40 mins , then cover with lid and boil further for 5 mins on Medium flame , then uncover and remove the skim on the top of Water , then stir again , take out ½ Cup of Mutton Stock and keep aside. Cook till the meat is soft and tender, mutton stock is reduced .Take another pot add ½ Cup of Oil , add 3 Finely Chopped Large Onions chopped finely ,add all the spices, 1 tsp of Cumin seeds , 4 Green Cardamom , 5 to 6 Cloves and 1 Cinnamon Stick , add 1 Medium Size Chopped Green Capsicum , saute them till the Onion is Translucent and changes its colour , then add cooked Mutton Pieces , 1 tbsp of Ginger Garlic Paste, 7 to 8 Crushed Green Chillies , 1 tbsp of karahi Gosht Masala , 1 tsp of Coriander Powder ,1 tsp of Salt , 1 tsp of Black Pepper & 1 tsp of White Pepper, mix by stirring for a while then add 1 large bowl of Yoghurt , stir and cook 5 more mins till the Oil is Visible, add ½ cup of Mutton Stock, Cook till the Gravy is thickened , add 2 tbsp of Cooking Cream also (due to Camera error , it was not recorded ), then Garnish with Chopped Coriander leaves, chopped Green Chillies & Julian Cut Ginger.
It’s ready to be Roti or Pita Bread

Preparation Method
Step 1-Caramalizing Lime Slices :-Take a Frying Pan , add 2 tbsp of Sugar & 2 tbsp of Water , boil it with low flame till bubbles Pop up , then add all the lime slice in it to get it Caramalized when it changes the colour little then flip the lime other side, when the Colour turns light Golden in Colour and bit sticky , its done.
Step 2-Whipping Cream Mixture:-Take a bowl add 390g of Condensed Milk , 1/4th Cup of Lime Juice Extract, 1 tsp of Cinnamon Powder , 38g ( 2 Sachets) of Whipping Cream , Mix it with a Machine Blender, when they turn thick & smooth its done. Take 2 tbsp of this Cream & add few drops of Green Colour , mix it , you can use this for Topping decoration .
Step 3- Layering
Take a Pyrex Glass Tray , lay biscuits at the bottom as 1st layer , Lay the Cream as 2nd Layer , Repeat the process for 3 times , when reach to last Cream Layer , Decorate the top with the Green Cream on your own innovative design, drop some Crushed Biscuit on the sides & lay the Caramelized Lime on Top.
Serving:
Serve it Cold with any Tea or Coffee

Ginger Garlic Paste – 2 tbsp Each
Salt – ½ tsp of Chicken Marination
Raisins /Cashews for Garnishing
Fresh Coriander Leaves for Garnishing
Salt for Rice – 2 tbsp
Oil for Deep Frying
Preparation Method
Step 1-Chicken Marination:-
Take 1100g of Chicken pieces in a bowl , add 1 large lime extract in it , add ½ tsp of Salt & ¼ tsp of Food Colour , 3/4th Cup of Yoghurt & 1 tbsp of Tandoori Masala , keep it for Marination at least for 1 hour. Then deep fry the Chicken pieces till light golden brown in Colour .
Step 2-Chicken Gravy Method:-
Take a Cooking pot , add the same oil of Fried Chicken , in it add the Golden Raisins & Cashew Nuts , Roast them and keep aside . Then add 1 tsp of Cumin seeds , 1 Cinnamon Stick & 2 Bay leaves , Saute for a while then add 4 Medium size Chopped Onions , 1 Cup Chopped Spring Onions , 1 Cup Chopped Green Capsicum , mix all well & Cook for a while till the Onions get soften & Transparent , then add 1 tbsp of Garlic & 1 tbsp of Ginger Paste , Stir again , add 1 tbsp of Crushed Green Chillies approx. 6 to 8 , (you can reduce or increase as per your taste), stir all well , now add 1 tsp of Coriander Powder , 1 tsp of Garam Masala & 1 tsp of Red Chilli Powder , add 1 tsp of Kasoori Methi (Fenugreek Leaves) , 1 tbsp Achar Gosht Masala , 1 tbsp of Bombay Biryani Masala , 1 tsp of Salt & 1 tsp of Food Colour , 2 Chicken Cubes & Mix & Stir , so the masala get mixed & Cooked well , then add 2 tbsp of Tomato Paste & 5 Medium Size Tomatoes (Blended), add also the left over yoghurt marnation mixture of Chicken , Stir all well then add the fried Chicken , stir then add 1 or more glasses of Water as per requirement , Cook for 5 mins with lid on then, check the chicken if its cooked its done then , sprinkle some Chopped Coriander leaves on top then go for Next Step
Step 3-Rice Preparation Method
Take another big pot, add enough Water for boiling Rice, in it add 2 tbsp of Salt ( Sorry for inconvenience , adding salt was not recorded) , 3 bay Leaves , add all the dry spices , few Cumin Seeds , 1 Large Cumin Stick ,4 to 6 Cloves , 2 Star Anise & few Whole Black Peppercorn, add 1 tbsp of same Oil , Boil till the flavor goes in Water then remove it by Strainer , then add the Soaked 5 Cups of Rice , Cooked till half Cooked then Strain the Water .
Step 4-Layering Steps
As First Layer -Lay little Gravy at the bottom of Pot , Second Layer White Rice , Third Layer Chicken with Gravy , Fourth Layer White Rice , Last Layer little left over Gravy , Food Colour and for topping & Garnishing Roasted Golden Raisins & Cashew Nuts & Chopped Coriander leaves on top. Keep it on low flame with lid on to Simmer for few Seconds then Serve it after some times.

ROASTED GARLIC BREAD ROLL
INGREDIENTS
Bread Rolls – as per requirement
Turkish Labneh – 350g
Garlic Head (Roasted) - 2
Mozzarella Cheese – 1 & ½ Cup
Italian Seasoning – 2 tbsp
Oregano - 1 tbsp
Black Pepper – 1 tsp
Dry Parsley – 1 tsp
Olive Oil - 2 tbsp
Butter – 50g

Preparation Method
Step 1-Garlic Roasting
Tak 2 Garlic Heads, cut the tops and keep it on Aluminum Foil and Butter Paper , pour 2 tbsp of Olive Oil , 1 tsp of Salt, 1 tsp of Black Pepper & 1 tsp of Italian Seasoning , Wrap it & then keep it in Oven for Roasting for 15 mins at 200C , when it gets soften , take it out and Squeeze out the Roasted Garlic Cloves in a Bowl.
Step 2- Add the Roasted Garlic Cloves in 50g of Butter, along with it add 1 tsp of Italian Seasoning & 1 tsp of Black Pepper then smash it with a Spoon to mix well or you can also use Hand blender to get a smooth Texture.
First Layer -Take the Bread Roll Slice and Spread the Roasted Garlic Mixture on it, lay all of them in an Oven Tray .
Second Layer- Take a spoon full of Turkish Labneh and spread on the top as well, total usage in my recipe is of 350g of Turkish Labneh.
( Note : you can increase or decrease the quantity according to your on taste and likings ), Spread the Labneh Cream evenly on top of Bread Rolls.
Third Layer –Put Some Mozzarella Cheese on Top of all the Bread Roll Slices, for Garnishing and Better Taste sprinkle some Italian Seasoning, Oregano & Dry Parsley Leaves ( approx. 1 tsp of each). Keep the tray in Oven for another 5 min till the Mozzarella Cheese Melts, when it turn light brown , the recipe is done.
Serving:
Serve it with Morning Tea for Breakfast or take it as an evening Snack

Take one full Chicken 1100g , Divide it in two half , make cuts on it so that marination spices goes into cuts too, you can wash the chicken in Vinegar Water (Take a bowl with water add 1tbl sp of Salt & 2 tbl sp of Vinegar , Soak the Chicken in this Vinegar Water for ½ hour ) or you can wash it also with plain water.
Step 2: Chicken Marination :-
Take a big bowl, add the Chicken into bowl , add all the spices in it , by adding 1 tsp of Salt , 1 tbsp of Kashmiri Red Chilli Powder , 1 tbsp of Coriander Powder , 1 tbsp of Crushed Coriander Seeds , Chicken Masala Powder 1 tbsp , Garam Masala 1 tbsp , Garlic Powder 1 tbsp , Food Colour 1 tsp , Onion Powder 1 tsp , Crushed Red Chilli Powder 1 tbsp ,All Purpose Flour 1 & ½ tbsp , Poppy Seeds 1 & ½ tbsp , Lemon Juice 2 tbsp , Pomegranate Molasses Syrup 2 tbsp , Olive Oil 3 tbsp , Mix all the spices with Chicken and keep it for 1 hour , so the spices get into Cuts and get better taste , keep it in Oven at 200C , Roast both sides for 15 mins , total 30 mins in Oven , when it’s golden in Colour , its ready to be served .
Serving:
Serve it with Tandoori Naan & French Fries & Roasted Onion & Tomatoes

When it get’s thickened then it’s done, you can also make this special dish on Eid Day.
