Ingredients:
30 habanero peppers (use fewer if you prefer a milder sauce)
20 jalapeño peppers
12 red bell peppers
2 medium onions
3 mangoes
1 large pineapple
4 cloves of garlic
2 cups white vinegar (or apple cider vinegar)
1 cup water
1/4 cup freshly squeezed lime juice (from about 2 limes)
2 tbsp avocado oil
2 tbsp honey (optional, for added sweetness)
Salt, to taste about 4 tablespoons
1 Tablespoon of MSG

Cooking Up a Champion: How to Make an Award-Winning Midwest Style Chili
In this video, I'll show you how to make Midwest Chili, which is different from the Texas-style chili, with various ingredients that add flavor to the dish. I use chuck steaks, smokes them then add them to a pot with broth and chili paste, and adds beans, tomatoes, and even pineapple to create a unique blend of flavors. The chili is prepared by cooking the smoked beef with onions and garlic, then adding the other ingredients like diced tomatoes, jalapenos, green bell pepper, beef stock with chilies, and red beans. I cooked it down for about 2 hours. Then I adjust seasoning with cumin, MSG, cinnamon, and ground mustard, and lets it cook for another 45 minutes to let the flavors meld together. To complement the chili, jalapeno, ciabatta bread by toasting it with truffle oil and tops it with extra-sharp cheddar cheese. #MidwestChili #SmokedChili #texaschili #SpicyFood #ComfortFood #chilirecipe

Watch as we pre-salt brine a Tomahawk Steak for 24 hours, seasoning it with truffle oil, fresh ground black pepper, and garlic powder. Hey everyone, it's Joe from @bringthesmoke here and I'm excited to share my latest video with you all. In this video, I accepted a challenge from Jeremy Yoder from @madscientistbbq to smoke a pigs head cuben style. I even made a marinade injection to add some extra flavor. This video is edited from a two part 4 hour live stream, so you won't want to miss it!
But that's not all, I also ran a failed experiment of a hot and fast brisket just for fun. It's always important to try new things and learn from our mistakes, right?
After completing this challenge, I had a challenge back to Jeremy Yoder, which is to make a Beef Wellington entirely on an offset. Maybe we can even get Gordon Ramsay @gordnramsay to review it!
