Sometimes, it takes me years to try something new. (Not always, but sometimes.)
But I’ll tell you, once I have a reason to break my habits and try something new, I’m all in.
One new thing I tackled this summer, in the kitchen, is the air fryer.
Now we don’t have an actual air fryer. What we have is an accessory lid that turns our Instant Pot into an air fryer.
My favorite thing to make in it is Air Fryer French Fries. They are SO good. 😋
What might surprise you is that I bought the air fryer accessory several years ago, maybe even close to 5 or 6?
Yet… I only just started using it this spring/summer.
And I really only use it for potatoes and maybe a couple other roasted veggies.
And do you know why I finally started using it?
Because our students were asking for info on how to use it.
There’s nothing like someone else’s needs to get me motivated! (I am motivated by my own needs, too!)
Anyway, I thought I would tell you this today in hope that it encourages you… if you are known to be a stick in the mud like me. 😉

I have some liquid plant food I got for our houseplants. 🪴
When I first got it, I noticed it was blue and thought that was interesting. Filed it away for later.
Yet because water inevitably spills or sloshes, when I'm watering the plants, I've got a towel with me to mop up whatever mess I make. I try not to make messes, but it's quite hard! 😂
Which means if the water is getting on the towel, it's also getting on me...
And then the full circle moment!
Since I'm touching the plant food, is there something in it that might not be good for me?
Why is the plant food blue? 🤔
I looked on the label. That blue is a copper additive.
Now I know, from testing, that I have excess copper in my body (which may be contributing to the hormone issues I'm trying to overcome).
So now... I wear gloves when I water our houseplants... because I don't want to absorb any more excess copper!
I thought today I would just share that story with you, not to scare you or anything, but to demonstrate that we should always be learning and keeping our eye out on things.
Not to live in fear, but to live in awareness.
Like... if you've gone years buying a certain packaged food, only one day to realize it contains hidden sugar or something else that you're trying to avoid... or maybe they changed the formula and now it has something in it that it never did before.
On the other hand, there aren't any of these surprises with Eat God's Way!

My favorite knife broke! 😢
Here I'm using my chef's knife, but normally I use my Cutco vegetable knife, which my mom gave me many years ago.
A couple of weeks ago, the tang broke (the narrow part that gets inserted into the handle).
Anyway, Cutco has a forever guarantee. So last week, I shipped it off to Texas.
They are either going to repair it or replace it, so I'll get my vegetable knife back. 🙌

Yet really think about this... 💭
You have to eat and you're putting time and energy into it regardless.
Even if you're ordering takeout, going through the drive thru, or going to the grocery store and bringing home processed foods... you're putting time and energy into that.
Why not, even in a busy time of life, put your energy toward keeping up with or learning a few simple healthy cooking skills?
Think about the impact! 🙌
Better energy, better sleep, better digestion... from NOT going back to the old way that had you sick and tired.
To me, it seems easier all around to eat with whole foods and whatever traditional cooking methods you know at the time. 💕
Much easier than being sick and tired and dealing with the takeout, drive-through, or junk food that just leaves you sick and unable to do anything, much less keep up with the busyness.
Eat better so that you can keep up with the busyness of life better!
You can more easily meet your obligations if you're not sick and tired from eating poorly. 🙂
It just makes more sense to stick with it, even if you have to slow down the pace a little bit and stop learning so much so fast.
It's ok to slow it down, but keep it up. Don't give up! 🙏🏻

Keep it simple. 😌
Keep your menu simple with only one or two foods for most categories.
For instance, instead of five different flours, stick with one or two!
The same goes with your meats, grains, beans, nuts and seeds.
The less variety, means the less money you're spending, and the less space you need to store it. It's also more likely you'll eat it rather than it getting lost or wasted.
It also keeps our minds simple and less overwhelmed.
This tip is from my daughter Haniya, and I love it. 💕

Because... time flies and everything takes longer than you thought it would, and then you're behind. AGAIN.
Yet, if you get in the kitchen just 5 to 10 minutes earlier, you can use this time for getting dishes further along (wash as you go), or other tasks that need doing... feed starter, take out garbage, pull up/down blinds, water plants, start grains/beans soaking, wipe down counters, sweep floor, tidy half bath, etc.
Try it! You'll likely find that you're at least caught up, if not ahead, just from that extra 5 minutes. 🙌

We were having to run the dishwasher twice a day. And one night it failed to run, so breakfast was... chaotic.
Just that ONE little thing meant breakfast was chaotic!
And then one day after lunch, I was announcing, "Okay, I'm going to start the dishwasher. Does anybody have anything else to add?"
I loaded the dishwasher, got the soap in it, and I failed to hit start! Then we left for a few hours.
So, that dinner was chaotic because I failed to run the dishwasher. 😵💫
These things matter. They really matter.
We got backed up!
Having said that... we can't be perfect either. Little things matter, but they are still going to happen!
Thankfully, Eat God's Way is for real people who make mistakes and don't do things perfectly.
There's lots of room for mistakes!
We can't be perfect. Perfection is so impossible we would starve long before ever attained it (not that we could).
If we make mistakes, which we WILL do, no doubt about it... we must laugh and give thanks, dust ourselves off, and move along. Because the next breath we take brings an opportunity to try again.

"I always thought sourdough was only bread, only artisan loaves of bread. And it isn't. It's everything. Chocolate cake, for Pete's sake. Who knew? And the muffins, just everything, the crackers. Like not only the bread, but so many things you can do with it. And it doesn't always have to be a long process. Like I said, a lot of mornings we'll whip pancakes up. I chatted with Tracey the other day and she shared:
"I have noticed that if I eat grain products now, I don't get tired after like I used to. I would have just a horrible crash in mid-afternoon if I had something like a sandwich at dinner. Or evenings, if I'd sit down after supper, I'd almost fall asleep most of the time. And that doesn't happen anymore. It just doesn't, which I find quite amazing.
I have a son who's sensitive to gluten. He's never done well with it. When he was home at Christmas time, I was just starting this journey. I made your soaked muffin recipe. And he tried a couple of muffins. And he said, "This is okay. I can eat this."
I think next, I had my sourdough starter going enough that I had discard, so I made pancakes. And he had a couple and said, "I can eat this." And it was like, "Oh my goodness!""

Formula for "Soaked" Baked Goods...
1️⃣Combine flour with liquid and an acid*.
2️⃣Let it soak for 7 to 8 hours, or overnight or even up to 24 hours, at room temperature.
3️⃣Then, proceed with the rest of the recipe... incorporating the other ingredients and baking.
It really is that easy! 🙌🏻
*The acid de-activates the anti-nutrients, like phytic acid which otherwise contributes to mineral deficiencies.

My favorite egg replacer... chia seed meal (ground up chia seeds).
My favorite egg replacer... chia seed meal (ground up chia seeds).
You combine 1 tablespoons chia seed meal and 3 tablespoons water for each egg in the recipe.
Then mix together. It's really fun how the mixture starts gelling up and giving you that gloppy egg consistency within seconds. 🙌🏻
Then you add it to your recipe as if it was eggs... voila!
