Lemon chia seed muffins #shorts
This is the recipe I “created:”
- 2 cups all-purpose flour
- 3 Tbsp chia seeds
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 1/2 cup coconut oil
- 1/3 cup honey
- 2 whole large eggs
- Zest of 2 lemons
- 1 tsp + an accidental splash of vanilla extract
- 1 cup plain Greek yogurt
Instructions:
1. Preheat oven to 360 degrees Fahrenheit. Prepare 12 cup muffin tin with parchment paper liners (or whatever).
2. Sift flour, baking powder, baking soda, and salt into a small bowl. Add in chia seeds. Set aside.
3. In a separate bowl, whisk together the coconut oil and honey. Beat in eggs, one at a time, mixing well with each addition.
4. Mix lemon zest and vanilla into your wet ingredients.
5. Use a rubber spatula to mix the yogurt and some of the flour mixture into your wet ingredients.
6. Continue stirring in the dry ingredients, a little at a time. (I think I ultimately did it in 4 additions—but feel free to march to the beat of your own drum.)
7. Use a cookie scoop (or not) to fill your muffin liners with batter.
8. Bake for 20 minutes, and then do a toothpick test to confirm you won’t poison yourself.

You've never seen shepherd's pie like this [traditional shepherd's pie with ground lamb]
Shepherd’s pie made with ground lamb has been on my to-do list for SO LONG, and today, we’re FINALLY doing it! You could make this recipe with ground beef, but I’ve heard lamb is traditional, so we’re going all out in this one! The meat base is packed with savory flavor from our onions, carrots, peas, rosemary, Worcestershire sauce, and of course, the ground lamb! Top that with creamy, buttery homemade mashed potatoes, and you’ve got yourself a real Irish delight. I garnished it with some fresh sprigs of rosemary, but that was really just to make it look pretty… this dish needs no additional seasoning or embellishment (in my slightly-biased opinion). St. Patrick’s Day may have already passed, but I *dare* you not to enjoy this hearty shepherd’s pie any day of the year! Pair it with a Guinness if you so wish for an even more Irish experience (or, you could always go with a beer that actually tastes good, y’know?). How to make Chinese food [pork lo mein]
This pork lo mean has everything good! Noodles, veggies, soy sauce, sesame oil, pork (duh), and TONS of flavor! Best of all, you get leftovers, which means no cooking, at least for a little while. As you’ll see in today’s video, I found it helpful to prep my veggies (onion, carrot, and red bell pepper) and measure out all of my sauces while my sliced up pork loin was marinating— doing it that way just makes it easier to add everything into the pan as you need it once you start cooking. I also mentioned this in the video, but our cut of pork was almost double the size of what the recipe calls for, so I just marinated and cooked it all up! Now, we’ve got some nice Chinese-style pork strips waiting for us in the freezer, so another night’s dinner’s already half-way done—all we need are some more noodles! (Sidenote: what’s your go-to lo mean order? Do you prefer pork, chicken, shrimp, or vegetable noodles when you order Chinese takeout?) You'll win over the pickiest eaters with this [creamy sausage + pasta one pot dinner]
Sausage meets pasta meets marinara sauce meets heavy cream. There’s really nowhere to go but down from here—this one pot dinner has EVERYTHING GOOD! Plus, it’s relatively easy to make (especially if you learn from my mistakes 😅), you get TONS of leftovers, and I have to say, this is a great way to stretch out a pound of meat if you’re feeding a family. I’ve eaten two more giant bowls of this pasta since recording this video, and there’s STILL a huge glass bowl with more waiting for me in the refrigerator. It feels like such a decadent dish, I almost can’t believe I made it myself—with some help from Billy’s sauce, of course… but, like I mentioned, you don’t need to start out with homemade sauce if that’s not something you’re comfortable making. Just a nice can of crushed tomatoes and some seasoning will suffice! I love pasta. I ADORE cream sauce. And sausage is pretty good, too! So, when this got a positive review, how could I not be over the moon? Okay, I think I’ve finally written enough to please the cooking a-l-g-o gods. How to make lentils actually taste good [lentil pumpkin soup recipe]
This lentil pumpkin soup is DELICIOUS and SO EASY to make! It’s inspired by Indian cooking, although I’ll be honest: I’m not too familiar with that many Indian dishes. I will say it comes together pretty quickly—it took me maybe 45 minutes from start to finish (and keep in mind, I still have yet to find my rhythm in the kitchen). I like to eat this for lunch on busy weekdays, but I think it’d make a nice dinner, too, if you throw in some already-cooked chicken (maybe even a Costco rotisserie bird to keep things nice and simple!). I also want to mention: the recipe says to use red lentils, but I’m sure it’ll come out perfectly fine with any other colored lentils you’ve got. Then again, I haven’t don’t that yet, so if you do, tell me what you think!
