EASY AUBERGINE PARMIGIANA RECIPE
In this video I want to share with you my version one of my favourite Italian dishes, aubergine parmigiana. A humble but very delicious recipe that is super easy to make, and my version is completely waistline friendly!

On my last trip to LA, I went to see my buddy @owen.han to shoot a video together. We had a recipe planned out for a duck sandwich that didn't work because I couldn't fennel at the grocery so we decided to go with a duck Banh Mi instead. It was sooooooo good that I had to go an do it in a long format video to make it easier for everyone to try at home.
Here's the recipe:
Ingredients
Pickled carrots and daikon
2 pounds carrots (about 5 medium), peeled
2 pounds daikon radish, peeled
1 cup plus 4 teaspoons sugar
2 teaspoons salt
2 1/2 cups white vinegar
2 cups warm water
star anise
pickling spices
Duck Banh Mi
1 duck magret (or 2 duck breast)
1 baguette
2 tbsp mayo
cilantro to taste
1 jalapeños (thinly sliced)
1 green onion (chopped)
1 cucumber (julienne) forgot to add it in the video
Maggi seasoning
Infused honey
400g liquid honey
1 shallot
1 knob of ginger
2 stalks of lemongrass
2 chilli peppers
4-5 cloves of garlic
2 star anis
1 cinnamon stick
1/2 tbsp coriander seeds
1/2 tbsp black peppercorn

Ingredients:
* 3 pounds Fillet Mignon ( Center cut beef tenderloin)
* 1/2 cup pancetta (4 oz)
* 2 small shallots, chopped
• 1 1⁄2 cups cremini mushrooms, chopped
• 1 cups shiitake mushroom, chopped
• 1 1⁄2 cups white mushroom, chopped
• 1 cups cranberry sauce
• 28 oz frozen puff pastry, thawed
• 1-2 medium egg, beaten
1 sprig fresh rosemary
1 sprig fresh thyme
• 1/2 cups dry vermouth
• 6-8 prosciutto slices, thin
• 2 tbsp unsalted butter
• 3-4 tbsp extra virgin olive oil
3 tbsp dijon mustard
Salt and pepper to taste

How To Make Crunchy Roasted Chickpeas | Rockin Robin Cooks
Roasted Chickpeas
I will show you how to make this so that it turns out crunchy. The secret is roasting the beans first before spicing them up. Share this recipe with anyone who might enjoy a vegan snack or just a delicious snack that's healthy.
Ingredients:
1 can garbanzo beans, canned
Olive oil
1 Tbsp. Pasture raised butter
Cinnamon & Sugar Spice
1 ½ Tbsp sugar
1 ½ tsp cinnamon
½ tsp. Ancho chile powder
Directions:
Combine the sugar, cinnamon, and Ancho chile powder to a bowl and stir to combine.
Mexican Style Spice
1 ½ tsp ground cumin
1 tsp. Chipotle chile powder
½ tsp. Smoked paprika
½ tsp. Garlic powder
½ tsp. Onion powder
Pinch of salt
Directions:
Combine all ingredients in a bowl and stir to combine.
Directions For Roasted Chickpeas
Preheat oven to 400 degrees F.
Drain and rinse the garbanzo beans. Pour them out on a baking sheet and pat dry. Place in the oven and roast for about 40 to 50 minutes. Check the beans every 10 minutes to stir to prevent sticking.
You can also place parchment paper on the pan to help with keeping the beans from sticking and make clean up easier.
Watch the beans closely during the last 10 minutes as they can burn quickly. You will notice the beans split and dry out as they cook. You want to make sure the beans are crispy so taste one when you think they are done to be sure. It should be crunchy.
Take them out of the oven and set aside. Heat a small fry pan over medium heat and add about 2 Tbsp. of olive oil and 1 Tbsp of butter to the pan. Once hot, add the beans to coat and then sprinkle on the spices.
Stir to coat the chickpeas and add more oil and butter if it seems too dry. You need enough moisture to dissolve the spices.
Once the beans are coated you are ready to serve the chickpeas. These make a tasty snack and are customizable. You can use any spices you like. Enjoy!

6 hours after harvesting this whitetail deer, we process the venison and put it on the plate. The tenderloin and backstrap of the deer are delicious but chewy under these circumstances. I want to try and aging process and see what the formula is for making tender venison at home.

Stephanie's Wild Game Roast Recipe
1-2 lbs Whitetail deer Back Quarter Roast
4 Table Spoons of Butter on bottom
2 large chopped carrots
1/2 Cup of sliced shallots
1/2 Orange sliced into 4 pieces
1 whole cinnamon stick
2 cups of Apple Cider heated up with 1/2 cup brown sugar slowly blended on cooktop
Put roast in then top with olive oil, fresh rosemary, salt pepper and garlic powder, then add apple cider brown sugar mixture and then 1 cup of water
Cook on low for 6 hours
Shred at 6 hours and continue to cook for 2 more hours
Enjoy

Spanish style SARDINAS al horno — homemade oven-grilled fresh sardines
In today's episode let's cook some fresh, in-season sardines Spanish-style, al horno! Fast and easy way to enjoy these flavor-packed fish using just a key ingredients!
INGREDIENTS:
- Fresh sardines
- Olive oil
- Oregano
- Peppercorns
- Red hot chilis
- Lemon
- Salt and black pepper
PROCEDURE:
1. Wash thoroughly and drain the fresh sardines. Rub with salt, crushed black pepper and oregano.
2. Drizzle olive oil on baking pan or dish. Lay down seasoned sardines. Add crushed garlic, sliced red chili pepper, black peppercorns, squeeze half lemon then put lemon wedges in between the sardines. Cover with plastic wrap and set aside to quickly marinate while waiting for the oven to reach cooking temperature.
3. Set and pre-heat oven to 250ºC. Remove plastic wrap and put it in the oven and cook for 10-15 minutes but always best to eyeball it. Enjoy it with steamed rice and cold beer!

The recipe above is his recipe and the white snapper turned out incredible. We finished the fish in one sitting.

250 gr Strawberries
85g Sugar
8 Shortbread
Cut the strawberries and add 20 grams of sugar, 4 cl of rum and let macerate. Add the cream in a bowl and semi-mount. Once semi-mounted add the mascarpone, 65 g sugar and rum 4 cl. Mix the ingredients while just whip the cream. Crumble the biscuits. In a glass put the cookie on the bottom, a layer of macerated strawberries, cream, another layer of strawberries and finally the juice that comes from the maceration of strawberries. Garnish with a mint leaf.
