I love steak. There, I said it! This one takes me back to my childhood. Every summer we went camping and this was ALWAYS on the menu. Mom would marinate this for days before we left and freeze it, so it stayed cold longer. That didn't help the texture any but who cared! We were camping and this was delicious. Enchiladas de Pollo Rojo
Enchiladas are so much fun. With the way I make them it is quick and easy to make a few up on any day of the week. This recipe is all about the Pollo Rojo, or Red Chicken. I am using 1 ½ lbs of boneless, skinless chicken thighs and it's going on the grill to get all that great grill flavor. The marinade is key and is not spicy. You could make it spicy but that is up to you. The full list of ingredients is below. Marinade it for at least 2 hours or overnight if you have time. The rest of the magic is all in the video above. Enchiladas de Pollo Rojo Marinade:
1 ½ lbs. boneless skinless chicken thighs
1 tbsp Guajillo powder
1 tbsp Ancho or Chili powder
1 tbsp Paprika
1 oz Achiote Paste
1 tbsp Garlic powder
1 tbsp Onion powder
1 tsp Ground Cumin
1 tsp Black Pepper
Around a ¼ cup of water to make the mixture a slurry (add a tbsp of oil if you like)
Mix thoroughly to combine. Add the water slowly until it forms a loose paste. Add your chicken and marinate in the refrigerator for at least 2 hours of overnight. Grill 20-25 minutes or so over medium heat (350f-400f) until chicken reaches 165f internal temp.

Simple Mexican Rice | Short Sides
Mexican Rice is really easy to make at home from scratch. There is no reason to buy a boxed rice mix that doesn't taste very good. I showed you step by step how to make perfect rice every time. Enjoy!
Mexican Rice Spice mix
1 tsp Garlic powder
1 tsp Onion powder
1 tsp Paprika
1 tsp Chili Powder (ancho powder works as well)
1/2 tsp HOT chili powder (Cayenne or Chipotle, that sort of thing)
1/2 tsp cumin
1/2 tsp Turmeric (for color mostly)
Salt and Pepper to taste

Long Forgotten Taco Bell Bell Beefer
Way back in the day Taco Bell had a burger, sort of. It was called the Bell Beefer and it was basically a taco on a hamburger bun. It has long been discontinued and for good reason. Nobody ever ordered it (it wasn't actually listed on the menu board) and keeping hamburger buns around for no reason was silly. Well, as luck would have it, I worked there when it was still a thing. I have recreated this long-lost fast-food relic and it is still tasty! Make one for yourself and enjoy!

Shrimp Alio e Olio w/Broccolini
This is a great, simple oil and garlic pasta sauce. I add the shrimp but you could use any protein or NO protein to this. That is up to you. Experiment and play with it. Here is the basic sauce recipe
Alio e Olio Recipe:
1 pound of shrimp, shelled and deveined.
1/2 cup olive oil
3 cloves of garlic plus 5 cloves of garlic
1/2 jar marinaded artichoke hearts, diced
1/4 cup white wine
2 tsp crushed red pepper flakes. 1 for the shrimp, 1 for the sauce
1 dzn cherry tomatoes, sliced
1 tbsn butter for shrimp and 2 tbsn butter for finishing the sauce
6 or 7 fresh basil leaves chiffonade, or 1/2 tsp dried basil
bunch of broccolini, washed and trimmed
salt and black pepper, to taste

Chewy Oatmeal Cookies Recipe
3 1/2 cups quick /instant oats
1 1/4 cups AP flour
3 sticks of butter, softened (1 1/2 cups)
3/4 cup brown sugar
3/4 cup granulated sugar
2 eggs
1/2 tsp baking soda
1 tsp salt
2 tsp vanilla extract
chocolate chips, toasted walnuts or ... raisins (eww) as you desire.
Bake in a 325f (163c) oven for 11 to 12 minutes.

I Finally Share My World-Famous Chocolate Chip Crack Cookies Recipe | How to Cook(e)
Let's face it, with a last name Cooke you grow up with the nickname Cookie. You can either embrace it or spend years in therapy. I decided to make the world's greatest cookies. These are my Crack Cookies. They are a modifies Chocolate Chip cookie and they are NOT made with actual crack. They are just about as additive though so be warned, when you make these, they will change your life.
This is also another technical snafu video. I had to dub the audio as the microphone decided not to work for some reason. Some of you seems to like these videos so I hope this one makes you happy.
Ingredients
2 1/4 cups AP flour
1tsp baking soda
1tsp salt
1 1/2 cups softened butter, not melted
1 cup brown sugar
1 cup granulated sugar
2 large eggs, room temp
2tsp vanilla extract
1/2 bag semi-sweet chocolate chips, mini chips preferred by me
1/2 bag Heath Toffee bits
Cook at 350f for 7-8 minutes or until almost starting to brown but not quite done yet. Rest on the cookie sheet until cool enough to move. Eat and repeat as necessary.

How To Cook(e) a Tri Tip! Reverse sear method!
Tri Tip is an amazing cut of beef. If you are not from the western half of the country, there is a chance you have not heard of this or not had a chance to cook one. here is everything you need to know to make a great Tri Tip.
Reverse sear! This means you start cold and slowly bring the temp up. Start on a cold grill on low and flip it back and forth every 10-15miins for about 35-45 minutes.
Then crank up the heat and add your glaze. Trust me, this is really delicious!
Pull it off the heat at about 125f to 130f degrees. Let it rest 15 minutes in a warm'ish place and you are ready to slice.
Slice against the grain of the meat for the most tender bites.
Serve alone or with a sauce. A demi-glaze is wonderful or a chimichurri gives a nice bright flavor to the meat. Make sandwiches out of left overs or fry up some slices with eggs and breakfast potatoes. Not good on ice cream, sorry
