Bringing Back the Chilito, aka Chili Cheese Burrito from Taco Bell
This was one of my all-time favs from TB. I get why they could not keep it around but that doesn't stop us from making it for ourselves. This is an easy recipe and one that just about anyone can do. Get your ingredients and start cooking! It is as good as you remember
Chilito recipe (makes about 4 Chilitos)
1 lb ground beef, browned and drained
¾ cup water
1 packet McCormicks Original Taco Seasoning
¾ Can Rosorito Refried Beans
¾ Cup Mild Red Enchilada Sauce (an entire 7.5oz bottle of Taco Bell Mild Taco Sauce works too)
1 tsp Paprika (optional)
1 tsp Chili Powder (optional)
1 tsp Garlic Powder (optional)
4 Burrito Size Flour tortilla (warmed)
1 1/2 cups grated cheese (cheddar or mexican blend cheese)

Zesty Buffalo Cauliflower Bites | Short Sides
I used to eat these things all the time back home at Bonfire Grill in AZ. They are so good and do NOT taste like cauliflower. It took me a few tries to get the recipe just right but this is really close. I'll have to go back there to try them again to make sure... Oh gee darn!
Buffalo Cauliflower Recipe
1 head of cauliflower, cut into small pieces
1 cup AP Flour
3 tsp Garlic Powder
3 tsp Onion Powder
2 tsp Paprika
1 tsp Cayenne Pepper
2 tsp Salt
1 tsp Black Pepper
3 tbsp Milk
1 cup Beer, Club Soda or Sparkling Water
¼ cup Franks Red Hot Sauce
Deep fry battered cauliflower bites at 325f for 7 1/2 minutes. Drain and let cool slightly before eating

Oktoberfest Schnitzel with Mushroom Gravy
In honor of our German friends, I made a pork schnitzel with a mushroom gravy and roasted Brussel Sprouts and potatoes. This is so delicious and not very hard to make. Just don't burn your schnitzel and you should be fine! Here are the recipes for all three components or the dish. Enjoy!
Mushroom Gravy
2 strips of thick cut bacon, cut into pieces
1 onion, diced very small
2 cloves Garlic, chopped
16oz fresh mushrooms, sliced
2 tbsp of butter and flour (for the roux)
2 cups Beef Broth
1 tbsp balsamic vinegar
1/4 tsp dried thyme
Salt and Pepper to taste
Roasted Potatoes and Veggies
1 large onion, course chopped
1 lb brussel sprouts, trimmed and cut in half
1 lb baby potatoes, halved
2 apples, course chopped
1/4 cup apple cider vinegar
3 tbsp brown mustard
3 tbsp brown suger
salt and pepper to season
Schnitzel
Pork Loin chops, pounds to 1/4" thick
Breading (flour, egg and breadcrumbs)
Oil for frying

My Baked Pasta, Not Baked Ziti and Sorta'ish Lasagna Recipe
I have been making this meal for many years and I still don't have a great name for it. It is sort of like Baked Ziti except is uses Penne, not Ziti. It has elements that remind you of Lasagna but it is nothing like Lasagna. I just call it the Pasta Bake and I call it delicious. It's got a few steps to it but it is a lot easier than lasagna and way better than a Baked Ziti. Here are all the things you need to make it
Pasta Bake
1 lb Meatballs, cooked
1 lb Italian Sausage, cooked
¾ box Penne Pasta, cooked
1 lb Mozzarella cheese
Sauce (see recipe below) or 2 jars tomato based pasta sauce
Ricotta Cheese Mix (see below)
Parmesan and/or Romano Cheese (as much as you like or don't like)
Tomato Pasta Sauce
1 28 oz can whole (chopped up) or crushed San Marzano style tomatoes
1 28 oz can Tomato sauce
1 6 oz can tomato paste
1 onion, diced (about 1 cup)
5 cloves chopped or pressed garlic
5 Fresh Basil leaves, chopped fine(or 1 tbsp dried basil)
1 tbsp fresh chopped oregano or 1 tsp dried oregano
2 tbsp sugar (or 1/3 cup red wine +1 tsp sugar)
1 tbsp olive oil
1 tsp salt (adjust to taste)
Meatballs
1 lb ground beef
1 egg
1/3 cup panko bread crumbs
up to 3 tbsp milk
1/4 cup grated yellow onion
1 large clove of garlic, minced
1 ½ tbsp Parmesan cheese
1 tsp dried oregano
dash of salt and pepper
up to 1 tsp red pepper flakes (optional, for heat)
Ricotta Cheese Mixture
1 cup Ricotta cheese
1 egg
1/3 cup Grated Parmesan Cheese
1 tsp Dried Basil
1 tsp Dried Oregano

N'awlins BBQ Shrimp, in just 30 minutes!
I love this meal. One of my go-to's whenever I see it on a menu. Making it at home was always a pain because it took so long to make. Not anymore! I got it down to 30 minutes (give or take) for the sauce. the shrimp only takes 4 minutes so you could be eating this in under an hour if you left for the store now. See the shopping list below and GO!
N'awlins BBQ Shrimp Sauce recipe for 1 lb of shrimp, adjust for more shrimp
2 cups Stock, chicken or shrimp stock
1 cup Worcestershire sauce
2 tbsp Apple Cider Vinegar
3 cloves Garlic, chopped
2 tbsp Creole Seasoning, divided (see recipe below)
½ cup Onion, finely chopped
2 tbsp Olive Oil, divided
½ cup White Wine
¾ cup Tomato Juice
½ cup Apple Juice
½ Cup Heavy Cream
3 tbsp Butter, divided
1 Roma Tomato, cut into 8 pieces
1/2 lemon, cut into 4 wedges
1 lb shrimp
French Bread for sopping up the sauce
Creole Seasoning Recipe
2 tsp Paprika
1tsp Garlic Powder
1 tsp Onion Powder
1 tsp Chile Powder
½ tsp Cayenne Pepper
1 tsp Dried Oregano
1 tsp dried Thyme
1 tsp Salt

Flan Recipe
1 cup Granulated Sugar
1 can sweetened condensed milk
4 eggs, room temperature
1 1/4 cup whole milk or heavy cream or half and half
1 tsp vanilla extract
Cook at 350f for 1 hour 15 minutes. remove from oven and let cool on the counter for 1 hour. Chill in fridge for minimum 4 hours

The Most Delicious Meatballs Ever
Spaghetti and Meatballs was one of the first meals I ever made when I was a kid. It was terrible but it started a journey. I spent years working on a better meatball recipe. I even got an old, translated from Italian, recipe from a grandmother of a friend. That was the turning point for me. I tweaked it a bit, as some of the things just aren't available or practical here in the US. What I got was a recipe for moist, flavorful and crave-tastic meatballs. Easy Italian Meatballs Recipe:
1 lb ground beef
1 egg
1/3 cup panko bread crumbs
up to 3 tbsp milk
1/4 cup grated yellow onion
1 large clove of garlic, minced
1 ½ tbsp Parmesan cheese
1 tsp dried oregano
dash of salt and pepper
up to 1 tsp red pepper flakes (optional, for heat)

Tacos Al Pastor in the Oven... and the frying pan
My all-time favorite tacos are Tacos Al Paster. That and every other kind of taco of course. The marinade is what sets them apart. That and the fact it is cooked on a vertical spit cooker like a shawarma, which is a bit weird if you don't know the history of Mexico. You don't need the special equipment to make this but you do need the right marinade. Here is that recipe
Al Pastor Tacos Marinade:
1/2 block of Achiote Paste
2 tbsp Guajillo Chili powder
1 tbsp garlic powder
1 tbsp ground Cumin
1 tbsp Paprika
1 tbsp ground Mexican oregano (Italian or Greek can be sub'd)
1/2 tbsp each salt and pepper
1/2 tbsp Cayenne pepper (optional for heat)
3/4 cup vinegar (white or apple cider vinegar)
1 cup pineapple juice
Slice 1 to 3 pounds of boneless pork shoulder roast 1/4 inch thick and place in a bowl with the marinade. Coat it very well and cover with plastic wrap, not aluminum foil! Place in fridge for 2 to 4 hours max.
Slice two 1 inch thick slabs of fresh pineapple and put 3 skewers in one of the pieces of pineapple. This is the bas. Stick pork slices on the skewers until you run out of pork. Put the second slab of pineapple on top of the pork and cook in the over for 2 1/2 hours at 300f. Baste every 30-45 minutes with juices in the bottom the pan. Crank the heat up to 375f and cook a final 30 minutes to get the outside nice and browned. Chop into small piece and cook in a frying pan to crispy up the small piece and serve with small pieces of diced pineapple, onions and cilantro. Enjoy!

I Finally Share My Famous Chocolate Chip Crack Cookies Recipe
Let's face it, with a last name Cooke you grow up with the nickname Cookie. You can either embrace it or spend years in therapy. I decided to make the world's greatest cookies. These are my Crack Cookies. They are a modifies Chocolate Chip cookie and they are NOT made with actual crack. They are just about as additive though so be warned, when you make these, they will change your life.
This is also another technical snafu video. I had to dub the audio as the microphone decided not to work for some reason. Some of you seems to like these videos so I hope this one makes you happy.
Ingredients
2 1/4 cups AP flour
1tsp baking soda
1tsp salt
1 1/2 cups softened butter, not melted
1 cup brown sugar
1 cup granulated sugar
2 large eggs, room temp
2tsp vanilla extract
1/2 bag semi-sweet chocolate chips, mini chips preferred by me
1/2 bag Heath Toffee bits
Cook at 350f for 7-8 minutes or until almost starting to brown but not quite done yet. Rest on the cookie sheet until cool enough to move. Eat and repeat as necessary.

Making A Tri Tip, Reverse Sear Method
Tri Tip is an amazing cut of beef. If you are not from the western half of the country, there is a chance you have not heard of this or not had a chance to cook one. here is everything you need to know to make a great Tri Tip.
Reverse sear! This means you start cold and slowly bring the temp up. Start on a cold grill on low and flip it back and forth every 10-15miins for about 35-45 minutes.
Then crank up the heat and add your glaze. Trust me, this is really delicious!
Pull it off the heat at about 125f to 130f degrees. Let it rest 15 minutes in a warm'ish place and you are ready to slice.
Slice against the grain of the meat for the most tender bites.
Serve alone or with a sauce. A demi-glaze is wonderful or a chimichurri gives a nice bright flavor to the meat. Make sandwiches out of left overs or fry up some slices with eggs and breakfast potatoes. Not good on ice cream, sorry

World Famous Juicy Lucy Burger
I LOVE burgers. It may be my favorite food behind pizza, Mexican food and BBQ. Oh, and steak. OK, I love a lot of foods but burgers have a special place in my heart. The Juicy Lucy is amazing because it stands out. The person who first thought of stuffing cheese inside a burger is a legend. Thank you for your contribution to society. Rolled Meatloaf - 6 Minute Quickie Version
This video is the 6 minute, super quickie version of the longer, more in depth Meatloaf video. This has just the crucial info you need if you are an expert meatloafalogist. For more info I still recommend the full length version available on his channel. I know it's a bit long but this is a very involved recipe and I wanted to make sure you had everything you need to make this for yourself. All the ingredients are still listed below. Meatloaf Recipe:
2 lbs ground beef
2 eggs
½ cup bread crumbs or 1 or 2 torn stale bread slices
¼ cup of milk
2 tbsp tomato sauce
1 tbsp tomato paste
or substitute with 3 tbsp ketchup
1 tbsp BBQ dry rub seasoning
¾ to 1 cup grated onion
(optional) 1 tsp Worcestershire sauce
1 package of thick sliced bacon
Bread Crumb Stuffing
½ cup Panko bread crumbs
½ cup plain bread crumbs
2 tbsp butter
½ cup grated onion
1 clove garlic, minced
1 cup grated mozzarella cheese
Chipotle Glaze
½ cup ketchup
1-2 tbsp canned Chipotle adobe sauce (not the peppers, just the sauce it comes in)
2 tbsp brown sugar
1 tbsp Worcestershire sauce or Maggi seasoning

Making Yummy Shrimp Stock from Old Shells
This is a kitchen basics video about making shrimp stock. It is not readily available to buy so here is a very easy way to make it at home for basically free. Add some onion, bell pepper, thyme, garlic, black peppercorns and a bayleaf. Fill the pot with water and simmer for 90 minutes. Then just freeze the stock and you are all ready to start cooking your favorite cajon dishes. Enjoy!
