Sugar-free Flourless Brownies 🍫
𝙍𝙚𝙘𝙞𝙥𝙚 𝙄𝙣𝙜𝙧𝙚𝙙𝙞𝙚𝙣𝙩𝙨 📑
1 cup almond butter
1/4 cup cocoa powder (unsweetened)
1/2 cup of low-carb sweetener (half allulose and half xylitol)
1/2 tsp baking powder
1 tbsp of butter
2 eggs at room temperature
pinch of salt
Toppings: Hazelnuts and choc zero chocolate spread
𝙄𝙣𝙨𝙩𝙧𝙪𝙘𝙩𝙞𝙤𝙣𝙨 🔪
At 350 degrees F, preheat your oven.
Mix the almond butter, sweetener, and eggs. If the batter is too thick, you can put it in the microwave for 5 seconds. Please don’t overheat it, or you could cook the eggs!
Add the butter, cocoa powder, and baking powder and mix well.
Prepare and line an 8x8 baking dish with parchment paper.
Pour the brownie batter into the prepared baking pan and spread it evenly with a spatula. Add the hazelnuts.
Bake the brownie batter for about 10-15 minutes in the preheated oven. Don’t overcook it, so they keep a fudge consistency. Allow the brownies to cool, then slice them into bars (optional). Drizzle the chocolate spread.

2 cups almond flour
2 teaspoons baking powder
3 eggs
1/2 teaspoon salt
1/2 cup butter, melted
1/4 cup sour cream
1 cup shredded cheese
2 ounces cream cheese, softened
𝙄𝙣𝙨𝙩𝙧𝙪𝙘𝙩𝙞𝙤𝙣𝙨 🔪
Place all the ingredients into a large bowl. Mix well with a spatula until the mixture is fully combined.
Form the dough into 1-inch balls. Place onto a baking sheet lined with parchment paper or a silicone baking mat. Bake at 350° for 16-18 minutes.

Eggplant Rolls 🥘
𝙍𝙚𝙘𝙞𝙥𝙚
𝙄𝙣𝙜𝙧𝙚𝙙𝙞𝙚𝙣𝙩𝙨 📑 for 4 servings
2 eggplants (approx. 600g)
400g feta cheese
30g olive oil
1 tablespoon of salt (dashed)
1 handful of parsley
1 clove of garlic
A little water or milk
1 pinch of pepper
Some chili flakes
Some lemon juice
𝙄𝙣𝙨𝙩𝙧𝙪𝙘𝙩𝙞𝙤𝙣𝙨 🔪
Wash eggplants, and cut off the upper end. Cut strips about 5-8mm thick. Then, for example, line a baking tray with baking paper and place the strips next to each other on it. Sprinkle half of the salt on top, turn the strips, and put the second half on top. Place kitchen paper on top & let rest for at least 1 hour. After the resting time, pat the eggplants dry on both sides with kitchen paper!
Heat a grill pan over medium heat. Spread some oil on the eggplant strips and fry them on both sides until they are cooked.
For the filling, put feta cheese, parsley, garlic, and pepper in a blender. Blend until everything is chopped. Add 1 dash of water (maybe a little more) or milk as needed for a creamy consistency.
Spoon the filling onto the ends of the eggplant strips and roll them up. Place them on the plates.
Add lemon juice on top and sprinkle some chili. Garnish with parsley and serve!

Mushroom Oven Omelet 🍳

𝙄𝙣𝙜𝙧𝙚𝙙𝙞𝙚𝙣𝙩𝙨 📑
10 eggs
250g mushrooms
70g baby spinach
100g feta cheese
40g milk
15g butter
Some parsley
1/4 tsp salt
1 pinch of pepper
1 pinch of nutmeg
𝙄𝙣𝙨𝙩𝙧𝙪𝙘𝙩𝙞𝙤𝙣𝙨 🔪
Mix eggs, milk, salt, pepper, and nutmeg with a whisk. Finely chop the parsley. Coarsely chop spinach. Mix parsley and spinach into the batter. Cut mushrooms into bite-sized pieces. Heat an ovenproof skillet over low heat. Melt butter in it. Sauté mushrooms over high heat for about 6-8 minutes until golden brown, season with a little with salt and remove. Grease the pan again if necessary.
Preheat oven to 180 degrees.
Pour the batter into the pan and crumble the feta cheese over it. Spread the fried mushrooms on top of the mixture as well. Bake in the oven for about 20 minutes. Makes a perfect meal prep! ❤️

𝙄𝙣𝙨𝙩𝙧𝙪𝙘𝙩𝙞𝙤𝙣𝙨 🔪 Wash tomatoes and bake in a preheated oven at 200 degrees convection for about 15 minutes. Pat the tuna steaks dry with kitchen paper and then fry them with oil in a hot pan on both sides (medium-high heat). Meanwhile, place pistachios, spinach, cream cheese, garlic, and pepper in a blender. Blend until you get a lump-free cream, add 2 tablespoons of water if the cream is not liquid enough. Pour the cream on a plate. Place the tuna steaks on top. Remove the cherry tomatoes from the oven and place them on the plate as well. Decorate with chopped pistachios and serve!

In the meantime, mix yogurt with garlic, a little salt and pepper. Melt olive oil and butter in a pan. Add the paprika powder and fry briefly on low heat as soon as the butter sizzles. Place the cauliflower in a small bowl, add the yogurt, and mix a little. Now pour the butter sauce over it and then enjoy.
