Ingredients I Avoid in Green Juices with my Autoimmune Disease
THIS 👏 MY 👏 FAV 👏 HORMONE-HELPING JUICE 👏 YO! (sry for caps, I am excited)
How do I justify buying a $9 jug of juice each week when I am a very cheap *ahem* frugal woman?
1) I drink 6 ounces per day rather than 8 to 12 to stretch it out
2) It's so much easier than juicing all the veggies
3) It's the only store-bought green juice I can find that doesn't contain immune stimulating algae like chlorella / spirulina (which are also not AIP compliant for the T-cell stimuli factor) or loads of sugary fruit juice added
4) Once, in spirit of experimentation and frugality, I actually bought all of the veggies listed on the jug to juice them at home...and spent a whopping $7.50. So the extra $1.50 is worth it to me to not have to wash, cut, cram, and clean them during the juicing process
5) It's a gently-powerful detoxify-er with parsley and mega loads of greens to help move adrenal- and thryoid-hormone disrupting toxins on outta my body
6) It tastes so good! Once you get used to it.... (add some apple juice and wean yourself down off the addition of apple for every couple of glasses you have)

Self Care to Ease Autoimmune Flares from Stress
Ya know the saying...it's more about how you react to stress rather than the stress itself? Well sometimes it's still just too much! Esp if you have a chronic illness like an autoimmune disease.
But self care is one surefire way to help manage your stressors, no matter how big or small or how many different stressors you have.
Love on YOU! Do some things just for you and take care of yourself. It helps to take your mind away from the stress. Self care can calm the stormiest of moments.
I opted for Paleo AIP pudding, put some makeup on, got dressed up (even though I wasn't going a dang place) and got my hair done-did! (By myself...at home LOL)

Sausage, Biscuit & Gravy Breakfast Casserole - Paleo, Nut-Free, Gluten-Free
Meal prep paleo time!
Before anyone yells at me....cashews are a drupe ;-) (The Paleo Mom says so)
You can easily sub out coconut milk and some extra tapioca starch as a thickener for the gravy if you have a cashew ish-shew. ;-)
When I was still doing private chef work, these were one of my client's FAVORITE meals, even the kiddos loved it. I hope you enjoy the casseroles too!
RECIPE:
1 lb uncured loose breakfast sausage, browned and crumbled
(for nightshade-free, check your sausage for ingredients like cayenne, paprika…or make your own at home with ground pork or turkey and your choice of safe seasonings)
GRAVY
2 cups homemade cashew milk (get the easy recipe here)
1/4 tsp smoked paprika (for nightshade-free: sub smoked salt and omit the Himalayan salt) get the recipe here
Himalayan salt and black pepper to taste
BISCUITS
1/2 cup cassava flour
2 Tb tapioca starch
1/4 tsp Himalayan salt
1/2 tsp baking soda
2 1/2 Tb sustainable palm shortening
1/4 cup cold water
2 tsp apple cider vinegar
6 eggs, whisked
Instructions:
Preheat convection oven to 375, or 425 F for conventional.
Brown the sausage, then use some of the fat to grease 3 small casseroles with oil.
Divide sausage between 3 casseroles and set aside.
Make the gravy by whisking all GRAVY ingredients together in a medium pot over medium heat until nice and thick, about 5 minutes.
Set aside to cool slightly while you make the biscuits.
Add dry BISCUITS ingredients to a medium bowl.
Cut in the shortening with a fork, then stir in the water and vinegar until smooth.
Knead to form a ball, then divide into 12 balls.
Pat the balls (using both hands) into approx 2.5" flat discs and set aside.
Pour the whisked eggs evenly over the top of the sausage in the casserole dishes.
Drizzle the gravy over the top of the eggs carefully but sort of haphazardly so it leaves some spaces for the egg to peek out.
Finally, gently place the biscuit discs over the tops of the casseroles.
Bake 20 mins or until eggs are ALMOST set. They will continue to cook after removed from oven, so its best to slightly undercook them versus over cook and have rubber casserole. ;-)
If doing for meal prep, reheat individual casseroles in a convection countertop oven (or in your oven) at 300F for about 15 minutes. Check the internal temp so it reaches at least 165F.

Chicken Fried Steak & Gravy - Whole30, Paleo w/ AIP Option
Slap that steak, make it crispy, then smother it in gravy! Gluten-free, grain-free, dairy-free, leftover-free. 🤣🤣
INGREDIENTS:
STEAKS
1 cup refined avocado oil
3/4 cup tapioca starch
1/4 cup coconut flour
1/2 tsp Himalayan salt
cayenne pepper or black pepper to taste (for AIP, sub ginger powder or horseradish powder to taste)
1 egg (for AIP, OMIT, then simply brush steak scaloppini cuts with a tiny bit of water)
1 lb beef filet, sliced width-wise into scaloppini cuts
-or- 1 lb cube steak pieces
GRAVY
1 cup beef bone broth
2 Tb cashew milk (for AIP sub coconut milk or tigernut milk)
2 Tb arrowroot starch whisked into 1/4 cup room temp water
1/8 tsp smoked paprika (for AIP, sub 1/8 tsp smoked lapsang souchong tea leaves, finely ground)
salt to taste
cayenne pepper or black pepper to taste (for AIP, sub ginger powder or horseradish powder to taste)
INSTRUCTIONS:
Heat oil in large skillet over medium-medium-high heat. Oil is ready when tested with a pinch of the excess flour blend below and it sizzles.
Add tapioca starch, coconut flour, salt and pepper to medium mixing bowl, whisk together well.
Beat egg in second medium mixing bowl, then add the steak pieces to coat well (skip this step for AIP and simply brush with a tiny bit of water).
Dredge steak in flour mixture, then fry in batches for about 2 to 3 minutes per side, until crispy and golden brown. Drain on paper or kitchen towels.
To make the gravy, whisk all gravy ingredients together in a medium pot with the stove heat turned off. When well whisked, turn the heat to medium-high.
Bring to a boil, then reduce heat to simmer for about 1 minute until thickened and starch has cooked off.
Serve with mashed white taro!

Korean BBQ Zoodle Meal Prep Bowls - Whole30, Keto w/AIP Option
**FOR AIP: Check beneath the recipe below for easy subs / instructions!**
Spiralize 3 medium zucchini and place in 4 storage containers.
In a large skillet over medium-low heat, caramelize 1 large julienned sweet onion in some oil for about 25 minutes. Add to top of zoodles.
Use the same skillet for the following steps.
Over medium-high heat, sear 1 lb salted and peppered beef filet steaks to medium-rare. Set aside to rest (do not slice yet).
Dry-saute 1 lb sliced baby bella mushrooms, then add to top of zoodles.
Sear 2 large sliced jalapenos in a splash of oil, then add to top of zoodles.
Slice the steak thinly, then add to top of zoodles.
Make the quick Korean BBQ Sauce:
In the same skillet (off the heat first) whisk 4 cloves garlic, 1/2 cup water, 1/4 cup tamari or coconut aminos, 1 Tb arrowroot starch (omit for keto if you're super lowcarb ), 1 Tb honey (omit for Whole30 or use a couple drops of stevia for keto ), 1 tsp ginger powder, and 1 tsp red chili flakes.
Turn heat to medium and whisk to get all the lovely bits from the steak n veg off the bottom of the pan into the sauce.
Simmer til desired thickness (keto version will be thin if you skip the starch).
Serve sauce over the top of the steak and veg. Either cool before covering and storing, or serve now and nom away, my dear!
**FOR AIP: Omit the pepper, jalapenos, and red chili flakes. Use the coconut aminos (not the tamari) and the honey (not the stevia)**

Primal Sweet Potato Enchilada Casserole with Irish Cheddar - Gluten Free, Grain Free with AIP Tips
*Check under the recipe below for nightshade-free or AIP tips!*
Add to a lightly greased 9x13 baking dish:
*1/2 a thinly-sliced jumbo sweet potato.
*1/2 a taco meat mixture made with 1lb browned ground beef and Primal Palate Taco & Fajita Seasoning: https://bit.ly/2UYhORv (aff link) , cooled for 10 minutes then mixed with 1 egg.
*1/2 cup homemade taco sauce.
*1 cup shredded Kerry Gold aged grass fed cheddar.
*Repeat layer
*Bake 350 F for 50 minutes til golden brown on top, bubbling around edges, and potatoes are just barely tender.
*Top it off with sliced avocado, chopped cilantro and a squeeze of lime juice.
*Serve over shredded lettuce with a splash of Frank's Red Hot sauce.
Nightshade-free and AIP tips:
*For the taco seasoning -
Nightshade-free: substitute a blend of cumin, oregano, Himalayan salt, achiote, coriander and black pepper.
AIP: substitute a blend of oregano, turmeric, ginger and salt.
*For the taco sauce -

Sheet Pan Cajun Bacon Cauliflower Rice - Whole30, Keto, Paleo & AIP
We don't need no stinkin' skillet! This simple and quick compliant cauli rice comes together with no standing over the stove required.
Ingredients:
refined avocado oil
1/2 pack uncured bacon, thinly sliced
1/2 large sweet onion, diced
2 lb riced cauliflower (found that big bag at Costco)
Cajun seasoning to taste (for AIP sub oregano, horseradish-or-ginger powder, and salt)
3 large cloves garlic, pressed
parsley to taste
Cook bacon and onion in a drizzle of oil on a sheet pan at 400 F for about 10 mins or til browned.
Add all remaining ingredients plus another good drizzle of oil then toss and spread out evenly.
Sprinkle with
Bake about 20 minutes longer or til edges are browned.
Toss and serve with fish, chicken, sausages or stews.

A nut free paleo smoothie that's full of fat, protein, fiber and reduced-oxalate greens.
Blanching your greens before adding to raw meals helps reduce the oxalate acid in them...making them easier to digest, reducing the mineral-binding and depleting effect in the body, and making the greens easier on the thyroid.
