Sheet Pan Cajun Bacon Cauliflower Rice - Whole30, Keto, Paleo & AIP
We don't need no stinkin' skillet! This simple and quick compliant cauli rice comes together with no standing over the stove required.
Ingredients:
refined avocado oil
1/2 pack uncured bacon, thinly sliced
1/2 large sweet onion, diced
2 lb riced cauliflower (found that big bag at Costco)
Cajun seasoning to taste (for AIP sub oregano, horseradish-or-ginger powder, and salt)
3 large cloves garlic, pressed
parsley to taste
Cook bacon and onion in a drizzle of oil on a sheet pan at 400 F for about 10 mins or til browned.
Add all remaining ingredients plus another good drizzle of oil then toss and spread out evenly.
Sprinkle with
Bake about 20 minutes longer or til edges are browned.
Toss and serve with fish, chicken, sausages or stews.
