Vegan Panang Curry with Tofu & Vegetables
This authentic vegan panang curry with tofu and vegetables is rich and creamy, with a balance of sweet and spicy flavors, and so easy to make in under 30 minutes. This vegetarian and gluten-free Thai curry served with jasmine rice is a hit with the whole family.
INGREDIENTS
▢ 14 ounces of Tofu Extra Firm
▢ 1 tablespoon Oil
▢ 3–4 tablespoon of Curry curry paste; adjust the amount based on spice preference
▢ 1 can Coconut Milk, 14oz
▢ 1 tablespoon Peanut Butter
▢ 1 tablespoon Brown Sugar
▢ 2 tablespoon Soy Sauce, or Tamari for gluten-free
▢ 8–10 Kaffir Lime leaves; crush to release oil
▢ 1 cup Green Bell Pepper, seeds removed and cut into 1-inch squares
▢ 1 cup Red Bell Pepper, seeds removed and cut into 1-inch squares
▢ 1 cup Broccoli, cut into florets
▢ 1 cup Zucchini, slit in half and sliced, optional
▢ 12–15 Thai Basil Leaves

IDEAS FOR VEGAN BREAKFAST AT WORK & SCHOOL
1. Coconut, Vanilla and Passionfruit Chia Pudding
(Makes 1-2, depending on how much you eat.)
Ingredients:
3/4 cup chia seeds
1 1/2 cup coconut milk
2 tbsp. Vanilla Bean Coyo (*)
pulp of 2 passionfruits
splash of vanilla
Method:
1. Mix all ingredients together in a jar
2. Put lid on the jar and place in fridge for a couple of hours or overnight
2. Banana and Walnut Breakfast Muffins
(Makes 12)
Ingredients:
1 flax egg (1 tbsp flaxmeal + 3 tbsp water)
3 bananas, mashed
1 cup buckwheat flour
1 cup almond meal
a pinch of himalayan salt
1/2 cup maple syrup
1 cup almond milk
1 teaspoon baking powder
splash of vanilla
- 3 handfuls of walnuts, chopped
Method:
1. Mix dry ingredients in a bowl
2. Gradually add wet ingredients and mix well
3. Add chopped walnuts to mixture and mix well
4. Place 1 heaped tablespoon of mixture in each section of a greased muffin tray
5. Bake in the oven for 25 minutes at 180 degrees Celsius.
6. Leave to cool and enjoy!
3. Baked Oat and Nut Butter Granola
(Makes 3–4 servings.)
Ingredients:
1 cup oats
1/2 cup quinoa puffs
1/2 cup rice bran cereal
1/4 cup sunflower seeds
1/4 cup cacao nibs
2 tbsp. flaxmeal
a pinch of himalayan pink salt
a handful of roasted hazelnuts
1 jar of macroorganic brazil nut, almond and cashew butter
1/2 cup maple syrup
Method:
1. Combine all ingredients in a bowl until well-combined
2. Place mixture into a baking tray and bake in the oven at 180 degrees Celsius for 20 minutes

Today, we are sharing a healthier version of pista badam kulfi falooda that is prepared without cow's milk. That means it's vegan, so if you are lactose intolerant or are trying to quit dairy, then this recipe is for you.
As the temperatures soar, we take refuge indoors and indulge in chilled treats to keep cool. How can we talk about summer without talking about kulfi? That's right, kulfi is one of the most beloved summer desserts in every household across the country. I hope you enjoy making this recipe, and if you do, then please share your experience in the comments below.
Ingredients for Kulfi
1 liter plant milk (coconut, almond, or cashew works best)
1 tbsp. corn flour (mixed in with 3 tbsp. of warm milk). (You can alternatively use coconut milk powder.)
A few strands of saffron (pre-soaked in water)
2-3 tbsp. chopped almonds and cashews
1 cup sugar (adjust as per your taste)
1 tsp. green cardamom powder
Recipe
1. Place milk in a pot on medium heat and add corn flour slurry to it.
2. Cook till the milk thickens and reduces to 1/3 of its original quantity.
3. Add saffron water, nuts, sugar, and cardamom powder.
4. Let the mixture cool and transfer it to kulfi molds. ( I used glasses as molds.)
5. Transfer the molds to a freezer and let the kulfi set for at least 6 hours.
Ingredients for Falooda Sev
1 cup corn flour
2 1/2 cups water
1 tbsp. sugar
Recipe
1. Keep stirring the mixture and let it cook on medium heat.
2. The mixture is ready once it thickens.
3. Take ice-cold water in a bowl.
4. Transfer a small amount of mixture to a sev maker and squeeze the mixture, with the help of the sev maker, into the bowl with ice water.
5. Leave the sev in the water and place the bowl in the fridge for at least 2 hours to set.
To serve
1. Take a bowl of water at room temperature. Take a mold with kulfi, give it a swirl in the water, and gently pull the kulfi out of the mold.
2. Cut the kulfi into small pieces and add the strained sev to them.
3. Drizzle some rose syrup or shahtoot syrup and decorate with some more chopped nuts before serving.

GF Choc Granola:
2 cups quinoa flakes
1 cup cashews
2/3 cup sunflower seeds
1 tbsp. pumpkin seeds
1/4 cup sesame seeds

1 tbsp. maca powder
3 tbsp. maple syrup
3/4 cup peanut butter
3 tbsp. coconut oil
Baked at 180 degrees Celsius for 20 minutes, turning once
Creamy sundried tomato pasta sauce (serves 3–4):
3/4 cup cashews, soaked for 1 hour
15 sundried tomato halves
1 tsp. smoked paprika
1 teaspoon onion powder
1/2 teaspoon salt
1/4 cup nutritional yeast
juice of 1/2 a lemon
1 clove of garlic
1 + 1/4 cups water
Blended in Vitamix until smooth
Nachos (Serves 2):
Nachos served with corn chips, charred corn, store-bought salsa and spring onions
Cashew Cheese Sauce:
1 cup cashews, soaked for 1 hour
1 cup water
juice of 1/2 a lemon
1 garlic clove
1 teaspoon onion powder
1/4 teaspoon salt
1/2 cup nutritional yeast
Blended in Vitamix until smooth
Guacamole:
1 avocado
juice of 1/2 a lemon
1/2 teaspoon salt
Mashed until desired consistency
Smokey Black Beans:
1 can black beans, rinsed
1/2 teaspoon salt
1 teaspoon onion powder
2 tsp. smoked paprika
3 tsp. liquid smoke
1 tablespoon olive oil
Fried for 5–10 minutes
Cauliflower and Butter Bean Curry (serves 2–3):
1 head cauliflower, cut into florets
2 sprigs spring onion, chopped finely
1 tsp. coconut oil
1/2 cup water
1 tbsp. vegeta (veggie stock)
1/2 tbsp. yellow curry powder
400 400ml coconut cream
1 tbsp. tomato paste
1 tsp. salt
1 can butter beans, drained
large handful of spinach
Fry spring onions in a large saucepan in coconut oil. Add all ingredients (except spinach) to a large saucepan and cook for 20 minutes. Add spinach at the end and cook for another 5 minutes. Serve with rice and coconut yoghurt.
Smokey Black Bean Chilli (serves 2):
1 sprig spring onion, chopped finely
3 cloves of garlic
1 teaspoon olive oil
1/2 tsp. chilli flakes
3 tsp. liquid smoke
1 can black beans, washed
1 cup passata
1 tsp. salt
1/2 tsp. cumin
Cook all ingredients over medium heat in a large saucepan for 10–15 minutes. Serve with rice and fresh coriander.
Pancakes (makes 6-7 pancakes):
1 cup buckwheat flour
1/3 cup almond meal
1 cup soy milk
1 tbsp. apple cider vinegar
1/2 tsp. vanilla
a pinch of salt
1/4 cup maple
1/2 teaspoon baking soda
Blend well in a vitamix; add chocolate chips if desired.
Cookies (makes 8–12 cookies, dependent on size):
1/2 cup vegan butter
1 tsp. vanilla
3/4 cup brown sugar
1/2 tbsp flaxmeal + 3 tbsp water (1 flax egg)
1 cup buckwheat flour
1/4 cup almond meal
1/2 cup cocoa powder
1 teaspoon baking soda
a pinch of salt
70g vegan white chocolate
Mix butter, vanilla, sugar, and flax egg together until well combined. Add buckwheat flour, almond meal, cocoa powder, baking soda, and salt, and mix well. Add white chocolate and mix lightly. Roll into balls and bake on a lined baking tray for 20 minutes at 190 degrees Celsius.

With all due respect, I created this recipe based on Seitan that dates back 1,500 years ago Buddhist monks in the sixth century as a meat substitute.
White Flour contains 10 – 12% of protein which makes it one of the suitable choices to make Seitan (Vegan Chicken) with. Someone who is off white flour (with high protein) can use any other flour including atta. Seitan is one of the plant-based meat alternatives that comes closest in texture to chicken, duck, or steak which are high in fat leading to heart dieases.
According to Harvard Health Seitan is listed as one of the healthy plant based diets. "Here are some foods and nutrients to pay special attention to. Protein. A variety of vegan foods are rich in protein. They include soybean products (tofu, edamame, tempeh), seitan, lentils, beans..."
Seitan is made from gluten hence, people with celiac disease can not consume it. The protein in the flour that, when mixed with water, becomes stretchy and elastic. Because the starches are removed during the washing process seitan is made, it has very little fat and carbs. In addition to protein, seitan contains the nutrients selenium, iron, phosphorus, and calcium.
