🥩🌿🔥RIBEYE STEAK + BÉARNAISE | ALWAYS HUNGRY🔥🌿🥩
Serves 4 people • Preparation 25 minutes • Cooking time 60 minutes
Ingredients:
Ribeye Steak
•1 Ribeye steak bone in (70 Oz)
•4 tbsp olive oil
•Salt to taste
Oven Roasted Potatoes
•5-6 large Russet potatoes (cut in wedges)
•3 sprigs Rosemary (chopped)
•6 cloves of garlic (smashed)
•1 tbsp dried oregano
•1 tbsp paprika
•Olive oil
•Salt & Pepper
Béarnaise Sauce
•1/4 cup (60 ml) white wine vinegar
•1/2 cup (125 ml) white wine
•2 shallots (chopped)
•1 sprig of fresh tarragon
•4 egg yolks
•3/4 cup (180 ml) butter (melted + cooled down)
•1 tbsp (15 ml) fresh tarragon
•Salt and pepper
Preparation:
1.Pull out the steaks at room temperature at least 25 minutes before grilling. Using a paper towel, pat dry the steaks. Drizzle the olive oil over the steaks and season heavily with salt on all surfaces. In a bbq, place steaks directly on a hot grill (pre-heated at 400°F). Get some nice grill marks on all surface until you get a nice crust. Cook until you’re preferred doneness. Using a meat thermometer is recommended on big pieces like this. Place the steaks on a resting tray and rest for the same amount of time that it was on the grill to allow juices to stay inside the meat.
2.While the meat is resting, in a small saucepan, bring the vinegar and the wine to a boil with the shallots and the tarragon sprig. Season with freshly cracked black peppercorn. Reduce the liquid to almost dry, you should be left with about 45 ml (3 tbsp). Strain over a mixing bowl making sure to squeeze all of that shallot and tarragon goodness.
3.Place the mixing bowl over a double boiler and using a whisk, beat the vinegar/wine reduction with the egg yolks until the mix thickens and becomes foamy. Remove from the double boiler and drizzle in the melted butter while whisking constantly. Add the chopped tarragon. Check the seasoning, if the sauce is too thick, add a bit of warm water while whisking. Keep at room temperature and place back onto a double boiler a few seconds before serving to reheat.

Lamb Steaks With Garlic Mashed Potatoes
Ingredients:
1 - 1 ½ lb. of 100% Grass Fed Lamb Steaks,
½ cup red wine
2 to 3 tsp. Balsamic vinegar, good quality
5 cloves garlic, crushed a bit with a knife, leave skins on
6 - 7 sprigs rosemary 4 inches long
2 tsp. Avocado oil
⅔ cup butter, pasture raised, cut into chunks
Salt
pepper
Garlic Mashed Potatoes
6 - 8 large gold potatoes, organic, cut into chunks
1 ½ cups whole milk
Salt
Pepper
Directions:
Set the lamb steaks out for about an hour before you start cooking.
Place the potatoes in a stockpot and add water to cover potatoes by a couple of inches. Add the garlic (peeled) and cook until potatoes are fork tender. Preheat the milk and butter.
Drain the potatoes and add ⅔ of the milk/butter mixture and mash with a potato masher. Add plenty of salt and pepper and add as much milk/butter mixture to get the consistency that you like. Keep warm.
Preheat a cast iron pan over medium heat. When hot add the avocado oil and swirl it around. As you lay the steaks in the pan you should hear a sizzle. If you don’t, stop and wait till that pan is hot.
Let the steaks sear in the pan, don’t move them, for about 2 ½ to 3 minutes and then turn them over and repeat the process.
After the second side is done, turn the heat to low and add the butter throughout the pan along with the rosemary sprigs and garlic. Remember to leave those skins on the garlic.
Turn the heat up abit if needed. Baste the steaks with the butter infused garlic/rosemary sauce until they are done or about 145 degrees F. when tested with an instant read thermometer. You have one of those right? So needed and will save your butt every time!
Once the steaks reach 145 degrees F. remove them to a dish and keep warm. To the pan add the wine and stir with a wooden spoon to pick up those bits stuck on the bottom of the pan. Those are called flavor bits and you want them in your sauce.
Simmer the sauce for about 8 to 10 minutes stirring occasionally. Then add the balsamic vinegar and stir to combine.
Add the steaks back to the pan to reheat the steaks for just a few minutes and serve. These mashed potatoes and lamb steaks are so yummy with the wine sauce drizzled over all.

I had my doubts. Sassy came up with an ideal to for a stuffed flank steak recipe smoked on the Traeger pellet grill I think you'll really like. We rolled it up in some leftover stuffing and it came out great. Flank steak is often an overlooked item in the meat section but I'm a new found lover of this cut. It isn't exactly stuffed, more like rolled then smoked. I used regular pellets, I think Pit Boss pellets, then smoked at 250 until the internal temperature came up to about 140. This was to make sure the leftover Thanksgiving stuffing was fully cooked.

WORLDS BIGGEST MCDONALD’S ‘MCRIB’ CHALLENGE! It’s Back! McDonald's BBQ Rib Sandwich Challenge
The McRib is back!?! Today we take on the Worlds biggest "McRib" a McDonalds favorite. A BBQ pork rib sandwich that is a classic and now rare McDonalds food item. The sandwich is generally a massive pork patty smothered in bbq sauce and topped with pickles and onions! This Massive bbq sandwich (officially the bbq pork Banh mi on the menu) modeled after the mcrib really did deliver on the McDonalds vibes! For todays challenge we are at Cafe de L'Asie in Oklahoma City, OK and have only 30 minutes to get the meal for free, other wise we will be paying the $60 price tag. This sandwich was giant weighing in about 6lb, and was equivalent of about 6 of their normal sized variation.

The usual challenge is 7lb with a 45 minute time limit to eat a full rack of ribs, a 1lb meatloaf sandwich, 1lb of brisket, 1lb of pulled pork, 1lb of mac and cheese, 1lb of deep fried potato salad and 2 cornbread muffins.. Sassy shops at Trader Joe's all the time and the best thing about that store is the selection of pre-marinated dishes, meats, and all kinds of goodies she brings home to try on our BBQ. We took one such package of pre-marinated shawarma chicken thighs and grilled them on the Weber 22 inch charcoal grill. Our kettle barbecue is awesome! I used real wood chunks such as pecan and cherry over Ridge charcoal for that perfect amount of smoke.
A perfect side dish to go along with this easy chicken shawarma recipe is seasoned steamed rice and mixed veggies. Our rice cooker is a must! If you don't have one you are doing it the hard way! Sassy added butter, parsley, garlic salt and a pinch of bruschetta. That's all it needed for a great taste to go along with this awesome shawarma chicken recipe!

SPG Seasoned Smoked Chuck Roast Weber Kettle Texas Post Oak | Charcoal
With the prices of meat nowadays its no wonder folks are skipping the high priced beef brisket and going for alternatives like beef chuck roast. This example I show you how to use a Weber kettle charcoal grill and slow cooked a 7 lbs chuck roast smoked low and slow on the Weber Performer 22" inch charcoal grill. Its an iconic cooker that is probably the most versatile BBQ brill around. Many try to copy it but none can perfect the simplicity and elegance of this Weber kettle grill. I basically take a chuck roast and season with salt pepper and garlic, or SPG. I even used Texas post oak chunks and Ridge real hardwood charcoal for that Texas brisket style barbecue but using a much cheaper piece of meat. And I think more forgiving. I used the snake method to set up my coals and I show you how I did that.

I told you we would be firing up our trusty Yoder Smokers Loaded Wichita offset smoker, better known as a stickburner. With plenty of hickory wood for smoking and some leftover Texas post oak firewood chunks for good barbecue, we set out to make the best BBQ smoked babt back ribs recipe for backyard parties. These baby back pork ribs already came pretty well trimmed so I didn't even touch them.
I didn't want to overpower these backyard cooking smoked ribs, I wanted maximum yield. That hickory smoke would add plenty of flavor if done right! Story: Upon arrival and talking to them about what I had planned they informed me that "they might run out of ribs" and that they "might not have enough".. Essentially, I might EAT ALL THE FOOD! However, they insisted I stayed, ate there, and they really did make it a memorable experience and put their best food forward. Today, a couple of my YouTube friends join me as we test a new BBQ Dry Rub and BBQ Sauce from Lobel's of New York. The Berkshire St. Louis cut Pork Ribs were also provided by Lobel's and we smoke the ribs on the Kamado Joe for 5 1/2 hours. The results were outstanding!! Everyone loved the flavors of the rub and sauce on the pork ribs.

All this was done on my Weber Summit Charcoal Grill at 245-250 degrees for 4.5 hours with a final internal temp of 193-196. They are glazed with Kosmos Cherry Apple Habanero Rib Glaze.
