My husband wanted me to make a recipe he found online, Glazed Orange Loaf Cake. It was good and very sweet. I substituted 6 drops Young Living orange essential oil with 2 Tablespoons water in place of the orange juice. Remember: Life Happens... let's enjoy it! Recipe for Orange Glazed Loaf Cake INGREDIENTS: Baking Spray 1 pkg Orange Cake Mix 1 cup water 2/3 cup vegetable oil 2 eggs ICING: 1 cup confectioners' sugar 2 tablespoons orange juice (I substituted 6 drops of orange essential oil in 2 Tablespoons of water) 1 tablespoon butter, melted Directions • Preheat oven to 350°F. Spray 9x5-inch loaf pan with baking spray. Cake will not fit in a smaller pan so if your loaf pan is not 9x5-inch, bake in a Bundt pan instead. • Beat cake mix, water, oil and eggs in large bowl with a handheld electric mixer on low speed 30 seconds. Beat on medium speed for a full 4 minutes. • Pour into pan. Tap pan on counter a few times to release air bubbles. Bake in center of oven 45 to 50 minutes for loaf pan or 35 to 40 minutes for Bundt pan, until toothpick inserted in center comes out clean. Do not open oven door while baking, it may cause the cake to sink in the center. Cool on wire rack 20 minutes, remove from pan and cool completely. • ICING: Whisk together confectioners’ sugar, orange juice and butter in small bowl. Pour over cooled cake. Let stand 10 minutes, until glaze is hardened. Slice and serve. Saltine Cracker Candy Preheat to 400-degree oven 2 sticks of butter (1 cup) 2 cups chocolate chips 1 cup packed brown sugar (dark or light) ¾ cup pecans 1 sleeve saltines In a sauce pan on low heat add the butter and brown sugar, stirring to mix, be careful not to burn; bring to a boil and boil for 3 minutes. (It should be a hard boil, stirring for the 3 minutes On a cookie sheet with sides that has been covered with parchment paper, line up the crackers (close together and single file, breaking some in half if needed to fit). Pour the sugar mixture over the crackers; and smooth the caramelized sugar over all the crackers. Place into the oven and set the timer to 6 minutes. Remove from oven and spread the chocolate chips over the top. Cover with foil and set timer for 3 minutes. After the 3 minutes uncover and gently spread the now melted chocolate chips evenly around. Then sprinkle the chopped pecans over the chocolate. Place the tray of cracker Candy in the fridge Once hardened brake into pieces. These gingerbread men cookies are made with honey instead of sugar and are a holiday favorite of ours. This recipe calls for all purpose flour but I use gluten free "Bob's Red Mill 1 to 1 flour" and they are delicious! Remember: Life Happens... let's enjoy it! HONEY GINGERBREAD COOKIES: Ingredients: 1 1/2 cups honey 3/4 cup butter (softened to room temp) 1 egg 5 cups flour (I used Bob's Red Mill gluten free 1 to 1 flour) 2 teaspoons baking powder 1 Tablespoon ginger 1 Tablespoon cinnamon 1 teaspoon ground cloves Directions: In a large mixing bowl cream butter and honey. Beat in egg. In another bowl stir together flour, baking powder, cinnamon, ginger and cloves. Gradually add the flour mixture to the creamed butter mixture until combined. Wrap dough in plastic wrap and chill for at least 2 hours. (I made mine the night before.) Dust work surface with flour and roll out dough to about 1/4 inch thick. (Use a spatula and work under rolled out dough to make sure it is not stuck on the counter.) Cut to desired shape with cookie cutters and transfer to well-greased baking sheet. Bake at 350 degrees for 10-12 minutes. (My cookie cutter is large so it took 18 minutes to cook.) Immediately remove cookies from cookie sheet and cool on wire rack.
