We have an early start to our day and I try to be more productive. I make pimento cheese spread for the first time and it turned out delicious! PLEASE SUBSCRIBE, LEAVE A COMMENT & GIVE A THUMBS UP! PIMENTO CHEESE SPREAD Recipe yields 2 cups. Ingredients: 2 cups freshly grated sharp Cheddar cheese (It must be freshly grated or it will not mix well together.) 8 ounces cream cheese, cut into 1” cubes and softened at room temperature 4 ounces pimento peppers, well drained and chopped if in strips 2 tablespoons mayonnaise ¼ teaspoon garlic powder ¼ teaspoon onion powder Salt & pepper, to taste Optional: ¼ teaspoon ground cayenne pepper, and/or ½ medium jalapeño pepper, ribs and seeds removed, and minced. Instructions: In a large mixing bowl or the bowl of your stand mixer, combine the cheddar, cream cheese, pimento peppers, mayonnaise, garlic powder, onion powder, and if using - cayenne pepper and jalapeño. Beat the mixture together with a hand mixer, your stand mixer, or by hand with a sturdy wooden spoon or spatula. Beat until the mixture is thoroughly combined. Taste, and add salt and pepper to taste. [I added 1/2 teaspoon Lea and Perrins Worcestershire Sauce] Blend again. Transfer the mixture to a smaller serving bowl. Chill it in the refrigerator for up to 1 week. Remove from fridge about 30 minutes to bring up to room temperature to soften before serving. I didn't think this recipe for "No Sugar Artisan Bread" would turn out, but it did and it is delicious! We also will be serving beef brisket, coleslaw and a summer squash casserole. Easy No Sugar Beginner Bread Recipe Artisan Bread Big Family Homestead video: https://youtu.be/lbr6uYIjL4M Ingredients: Makes four 1-pound loaves 8-cups flour 4-cups warm water 2Tbsp salt 2Tbsp dry active yeast This dough can be stored in the refrigerator for up to 2 weeks before using. This is a two-part recipe. Directions: In a large bowl and add the salt, then the yeast, then add the warm water. Give it a stir to dissolve the salt. Then add the 8 cups of flour and stir to combine this. This will be a supper sticky dough. Use your hands to mix completely. (The dough will stick to your hands.) Put in a container and cover with plastic wrap and put the fridge for at least 1 day. It should look wet and a little bubbly. When ready to bake, dust a small amount of flour on top of the dough (that is in the container) and a small amount of flour also on your counter. Pull out some of the dough and place on your floured surface. Turn all sides of dough with the flour on your surface so it doesn’t stick to your hands. Do not over work this dough. Just tuck it under as you work around the dough to make a smooth surface on top of the loaf. Then let your loaf rest on a piece of parchment paper for 40 minutes. Preheat the oven to 450 degrees. (She used a pizza stone that was preheating in the oven to cook the loaves on, I just use a baking sheet.) Then place a pan in the oven to add water to later. This helps make the crust crispy. Beat an egg with a tablespoon of water and brush on the dough. Leave as is or sprinkle any seasoning you desire on top. Then score the top of the dough, otherwise it could pop and cause a hole in the loaf. Place the loaves on the baking sheet in the oven and then also add the water (1 cup) to the small pan that was placed in the oven. We slept in which is not like us at all! I also found some material to make a window covering for our French doors that matches our new paint colors and I decide to make meatballs from my mom's recipe with the ground beef I have in the fridge. Meatball Recipe: 2lbs. of ground beef, 1 1/2 cups bread crumbs, 4-5 garlic cloves (minced), 1 Tablespoon parsley, 1 teaspoon salt, 1/4 teaspoon pepper, 2 eggs, 3/4 cup milk, 1/2 cup Parmesan cheese Preheat oven to 375 degrees. Lightly spray or grease a baking sheet. Mix egg and milk together and add all the ingredients together making sure to incorporate everything together well. Form into balls placing them on the greased baking sheet. Cover with foil and bake for 30 minutes (varies according to size of meatballs). Remove the foil the last 15 minutes of baking time. Add to your favorite sauce or make meatball subs! Otherwise refrigerate until you are ready to use them. This is a delicious soup that I served on Christmas. It was so good I decided to share it with all of you... bon appétit! Ingredients: 8 thick-cut bacon slices, cut into 1⁄2 -inch pieces, 1 medium-size yellow onion, chopped (1 1⁄2 cups), 2 celery stalks, finely chopped, 3 large garlic cloves, minced (1 1⁄2 Tbsp.) 1 teaspoon ground cumin, 1 large sweet potato, peeled and chopped into 3⁄4 -inch cubes (3 cups) 1 1/2 cups dried brown lentils, 8 cups lower-sodium chicken broth, 1 (14.5-oz.) can fire-roasted diced tomatoes, undrained, 2 teaspoons kosher salt, 1/4 teaspoon black pepper, Chopped fresh flat-leaf parsley Directions: Step 1 - Cook bacon pieces in a large Dutch oven over medium-high, stirring often, until crisp, about 10 minutes. Drain on paper towels, and set aside. Remove and discard all but 2 Tbsp. drippings from Dutch oven. Step 2 - Add onion, celery, and garlic to Dutch oven. Cook over medium-high, stirring often, until softened, about 5 minutes. Add cumin, and cook, stirring constantly, until toasted, about 1 minute. Stir in sweet potato, lentils, broth, tomatoes, salt, and pepper. Bring to a boil over medium-high. Reduce heat to medium-low; simmer until lentils are tender, 1 – 1 ½ hours. Spoon soup evenly into 6 bowls. Top with reserved bacon pieces, and sprinkle with parsley. Happy New year! Today I make "Pretzel Salad" a wonderful dish for any occasion. Many of us make New Year resolutions and today's devotion helps us to start off the year right! Strawberry Pretzel Salad For the Crust: 2 cups crushed pretzels (I always add a little more) 3 tablespoons sugar (regular or brown sugar) Add the sugar to the crushed pretzels 3/4 cup butter, melted Mix together and press firmly into 9x13 pan Bake at 375 for 8-10 minutes For the Filling: 12 ounces cream cheese, softened (1large 8oz & 1 small 3 oz) 1 and 1/2 cups heavy whipping cream and 1 cup sugar, adding the sugar and beat to stiff peaks Or use 12 ounces whipped topping and 1 cup sugar Gently mix the cream cheese and whipped topping together. and spread over the cooled pretzel crust. For the Topping: 2 6-ounce packages of strawberry gelatin dessert (or 4-3oz.packages) 2 cups water, boiling (do not add any additional water) Add the boiling water to the jello and stir until dissolved, add 1-pound (16 ounces) strawberries, fresh or frozen that has been thawed. Once the jello with fruit is lukewarm pour on top of the crust and filling mixture, and refrigerate until set. It's just a couple of days until Christmas! Join me for a Christmas chit-chat and I make Saltine Cracker Candy that is extra yummy because of its sweet & salty flavor. Cracker Candy video from 2018: https://youtu.be/mrp0L1AYQeg LTE CRACKER CANDY RECIPE: Preheat to 400-degree oven 2 sticks of butter (1 cup) Do not use vegetable oil spreads 2 cups chocolate chips 1 cup packed brown sugar (preferred dark brown) ¾ cup pecans 1 sleeve saltines In a sauce pan on low heat add the butter and brown sugar, stirring to mix and not burn; bring to a boil and boil for 3 minutes. (It will be a hard boil stirring for the 3 minutes On a tray (a cookie sheet with sides) that has been covered with parchment paper, line up the crackers (close together and single file, breaking some in half if needed to fit). Dump the sugar mixture over the crackers; and smooth the caramelized sugar over all the crackers. Place into the oven and set the timer to 6 minutes. Remove from oven and spread the chocolate chips over the top. Cover with foil and set timer for 3 minutes. After the 3 minutes uncover and gently spread the now melted chocolate chips evenly around. Then sprinkle the chopped pecans over the chocolate. Place the tray of cracker Candy in a cool place to harden (or in the frig) about 12 hours. Once hardened brake into pieces. Lemon bar cookies are one of our families favorites for Christmas. And it works well with Bob's Red Mill 1 to 1 gluten free flour too! LEMON BAR COOKIES: 1 cup flour, 1/2 cup butter (1 stick), 1/4 cup powdered sugar, 1 cup sugar, 2 teaspoons grated lemon peel if desired, 2 Tablespoons lemon juice, 1/2 teaspoon baking powder, 1/4 teaspoon salt, 2 large eggs, some powdered sugar to sprinkle on top when finished. Preheat oven to 350 degrees Mix flour and powdered sugar together in a bowl with butter and press into a 8x8 or 9x9 pan building up a half inch around the sides. Bake for 20 minutes. Beat the remaining ingredients together with an electric mixer until light and fluffy. Pour over the hot crust and bake for 25-30 minutes. Cool pan on wire rack. Dust with some powdered sugar and cut into squares. This is a great tasting gingerbread cookie made using honey instead of sugar. This recipe also works great with gluten free flour and dairy free butter. The recipe is below. HONEY GINGERBREAD COOKIES: Ingredients: 1 1/2 cups honey, 3/4 cup butter (softened to room temp), 1 egg, 5 cups flour (I used Bob's Red Mill gluten free 1 to 1 flour), 2 teaspoons baking powder, 1 Tablespoon ginger, 1 Tablespoon cinnamon, 1 teaspoon ground cloves Directions: In a large mixing bowl cream butter and honey. Beat in egg. In another bowl stir together flour, baking powder, cinnamon, ginger and cloves. Gradually add the flour mixture to the creamed butter mixture until combined. Wrap dough in plastic wrap and chill for at least 2 hours. (I made mine the night before.) Dust work surface with flour and roll out dough to 1/4 inch thick. Cut to desired shape with cookie cutters and transfer to well-greased baking sheet. Bake at 350 degrees for 10-12 minutes. (My cookie cutter is large so it took 18 minutes to cook.) Immediately remove cookies from cookie sheet and cool on wire rack. (I did not use a wire rack to cool these cookies, instead I placed them on wax paper rolled out on my counter top.)
