Preheat oven to 375 degrees. Spray a 9 x 13 inch baking dish with oil; set aside 2. Cook noodles according to package; set aside. Skip this step if you're using oven ready gluten-free lasagna noodles. 3. For the sauce: In a large saucepan, cook beef, onion and garlic until the meat is brown. Break the meat apart as it cooks. 4. Add the un-drained tomatoes, tomato sauce, tomato paste, basil, oregano, salt and pepper and stir until combined. 5. Bring the sauce to a boil, then reduce the heat and simmer for 5 minutes, stirring occasionally. 6. For the ricotta filling: Combine the whisked egg, Ricotta, Parmesan and dried parsley. 7. To layer the gluten-free lasagna: Spread a little sauce on the bottom of the pan. Add a layer of lasagna noodles over the sauce. Spread half the ricotta mixture over the noodles. Then, spread half the sauce mixture over the noodles. Add the second layer of lasagna noodles, ricotta mixture and sauce mixture. Top with shredded mozzarella. 8. Place the lasagna pan on a baking sheet and bake for 30-35 minutes or until heated through. HOWEVER, if you're using oven-ready noodles, cover the lasagna with foil and bake for 40-45 minutes. Remove foil, then bake an additional 10 minutes. 10. The end result is delicious. We have a personal story of our fabulous times dining at Buca di Beppo (you're so fortunate if you still have one in your town). We'll tell it at the end. (wink) But, more importantly, we NEVER went to a Buca without ordering the Lemon Chicken. We felt that no one did it better. On a mission to find out how to make it, we think we've succeeded. Bon Appetit, friends. We'd love an invitation if you're making it! 🍋 ▶︎Recipe INGREDIENTS: 1 egg 3 tablespoons lemon juice 1/3 cup all-purpose (or GF) flour 1/8 teaspoon garlic powder 1/8 teaspoon paprika 4 boneless skinless chicken breasts 1/4 cup melted butter 2 teaspoons chicken bouillon 1/2 cup hot water 1 tablespoon capers ▶︎Recipe DIRECTIONS: 1. Combine egg and 1 tbsp lemon juice in a small bowl; beat well with a whisk. Combine flour, garlic powder and paprika in a small bowl; stir well. Put chicken breasts between two sheets of waxed paper. Pound until the chicken is flattened and even in thickness. 2. Dry the chicken off by patting it with paper towels. The dryer your chicken, the more the batter will adhere to the chicken. 3. Dip chicken in egg mixture; dredge in flour mixture. Brown chicken in melted butter in a large skillet over medium-high heat 2 - 3 minutes on each side. 4. Dissolve bouillon in hot water. Add bouillon mixture and 2 tablespoons lemon juice to chicken. 5. Bring to a boil; cover; reduce heat; and, simmer 10-15 minutes or until chicken is done. Plate. Mix together melted butter, lemon juice, paprika, oregano, garlic salt, salt and pepper in a bowl or resealable bag. 2. Add chicken breasts and marinate in the refrigerator for 3 or 4 hours. 3. Preheat the oven to 325 F. 4. Transfer the chicken to a baking dish, skin-side up. Pour marinade over the chicken. 5. I mean everything's listed right there in the title. Wrap shrimp in bacon and voila! But, there's more of an art to it than that. This Bacon Wrapped Shrimp How-To will give you lowdown on exactly how to buy your shrimp; how much bacon you need; how to prep it with the right ingredients; and how to cook it properly with great success the very first time you try it. How do I know? Because this was OUR first attempt, and it came out PERFECT! I'll list the ingredients below so you can refer to them again and again. ***ENJOY! 😋 ▶︎Recipe INGREDIENTS: 8 slices of bacon, halved 16 large raw shrimp, peeled except for the tail, de-veined 1 tablespoon olive oil salt & pepper ▶︎Recipe DIRECTIONS: 1. Preheat oven to 425 degrees F. 2. Arrange bacon slices, leaving space around each, on an oven-safe rack placed on a baking sheet. Bake for 8-10 minutes, depending on the thickness of your bacon. It should still be pliable when you remove it from the oven. 3. Meanwhile, place shrimp in a medium bowl. Add olive oil, salt and pepper. Coat the shrimp thoroughly. 4. When partially cooked bacon slices are cool enough to handle (about 5 minutes after you remove from oven), wrap each slice of bacon around one raw shrimp, securing with a toothpick. Return to baking sheet. Repeat with remaining shrimp. 5. Lemon Juice Salt & Pepper ▶︎Recipe DIRECTIONS: 1. Heat large skillet over medium heat and add 2 Tbsp. of butter. 2. Add chicken breasts and brown each side for 2 minutes. Before flipping, lightly salt and pepper each side. Set them aside in separate pan and cover. 3. Chop mushrooms and shallots. Measure wine and heavy cream. 4. In the first skillet on medium heat, add the other 2 Tbsp. of butter. 4. Place chopped mushrooms into pan and stir until soft and brown. Mix shallots in with the mushrooms. Stir. At this point, add the tsp. of lemon juice. Continue stirring over low-medium heat. 5. Add cream to the mushrooms and stir until blended. (Option: add 1/8 cup flour to thicken sauce) 5. Place cooked chicken into the sauce, and spoon the sauce over chicken. 6. Serve. This was adapted from a recipe that was adapted from a recipe 😳***The blog 'Loving Life and Living Yeast Free' is where we found it***The blog 'How Sweet Eats' is where SHE found it***Either way, THIS is the Paul and Judy Version with lots of surprises along the way***ENJOY! ▶︎Recipe INGREDIENTS: 1 (or 2) Wholly Gluten Free 9" pie shell (or use a crust recipe from 'How Sweet Eats') 1 pint grape tomatoes 2 Tbsp olive oil 6 large eggs 1 1/2 C heavy cream (or Dairy-Free Soy Creamer) 3/4 C freshly grated gruyere cheese 3 Tbsp chopped fresh basil + extra for garnish (I forgot that part 🥴) 1/2 tsp black pepper 1/8 tsp salt 2 oz thinly sliced prosciutto torn into pieces 4 oz goat cheese crumbles ▶︎Recipe DIRECTIONS: 1. Preheat oven to 350 degrees 2. Heat skillet over medium heat and add olive oil. Add the tomatoesand toss gently, cooking until the tomatoes start to burst. Add a pinch of salt and stir. Set them aside until they cool. 3. Separately whisk together the eggs, cream, gruyere cheese, herbs, salt and pepper. 4. Place helf of each of the tomatoes, prosciutto and goat cheese into the crust(s) and pour the egg mixture over the top. Add the remaining tomatoes, prosciutto and goat cheese mixing them in gently. 5. Bake for 55-60 minutes or until golden on the top and set in the center. Let cool slightly before serving.
