On this trip we travel to Beaver Lake near Eureka Springs, Arkansas to spend a weekend exploring the area. We set up camp at Big Clifty campground. There are only 4 camp spots there, and you can only make a reservation by calling 479-253-1755. We had camping spot number 1. Also on this trip we hosted our quarterly clean-up, and our co-host for the event was SUP Outfitters Eureka. We also got to enjoy Stand-up Paddle-boarding for the first time on Beaver Lake, Arkansas. Light grill to medium heat. 2. Peel sweet potato and cut into 1/4” thick rounds. Place in a frying pan and combine with olive oil, smoked paprika, garlic powder, and salt. 3. Fry sweet potatoes for 3 to 4 minutes until lightly charring, flip, and continue to cook for another 3 to 4 minutes. Sweet potatoes should be tender. Remove from heat, let cool slightly, and chop into smaller pieces. 4. While sweet potatoes are cooking, combine black beans, cilantro, and lime juice in a bowl, set aside. Once sweet potatoes are chopped, add to the black beans. 5. To assemble quesadillas, on one side, brush with olive oil and sprinkle with a pinch of garlic powder. Flip the tortilla over and add 1 ounce of cheese over the entire surface and then on one half, divide 1/4 of the sweet potato/black bean mixture. 6. Transfer quesadilla over indirect heat on the grill and allow to cook until the cheese has melted. Fold in half and transfer to direct heat. Allow to cook until the tortilla is golden and crisp, 15 to 60 seconds (depending on the heat source). Flip and repeat. Repeat with remaining tortillas and filling. We leave Moab, Utah and travel south east to Mesa Verde National Park. We then drive the million dollar highway to Ouray, Colorado where we camp at the Ouray KOA ( https://koa.com/campgrounds/ouray/ ). The next day we travel south back down the million dollar highway and to explore the San Juan National Forest. After that, our plans had changed. Therefore, we decided to rent a car and stay a few days in the state while the H3 is repaired. The following day we traveled further south to the Wichita Mountains Wildlife Refuge. On this adventure we left base camp (AKA Little Rock, Arkansas) and drove to Lake Ouachita in the Ouachita National Forest for a three day kayak camping and exploring trip. We arrived at the Buckville Use Area on the north side of Lake Ouachita. Lake Ouachita is one of the cleanest lakes in North America. The fact that Lake Ouachita (and all of it tributaries) is completely surrounded by the Ouachita National Forest helps protect its water quality. Lake Ouachita is also the largest lake within Arkansas. It is a great lake for Kayak Camping, fishing, and subdividing. We left our vehicle at the Buckville Boat Ramp and paddled out to and island to set up camp. We gave a review of our campground, and also provided a kayak 101 for kayak camping. On this trip we traveled to an Arkansas state park. Mount Magazine State Park. This park is located at the top of Mount Magazine, and is surrounded by the Ozark National Forest. Mount Magazine State Park is the tallest point in Arkansas at 2753 ft. Our first task was to set up camp, and provided a campground review at Brown Springs Recreation Area. After that we left to take a look at the views over Cameron Bluff Recreation Area. Our next stop was The Lodge at Mount Magazine. There we had an amazing meal. The next morning we woke up and did a cooking tutorial on breakfast burritos. Once done with breakfast, we still had to check in at the visitor center. There we provided a quick tour of the Mount Magazine Visitor Center. Once done, we went back to camp where we did yoga, and some trail running. For dinner, we cook salmon and couscous. Our finial activity on this day was a sunset at Cameron Bluff. The next morning we made a quick breakfast, packed up camp, and left Mount Magazine State Park to go exploring in the Ozark National Forest. Exploring Rocky Mountain National Park was the focus of this trip. We began our trip by driving from Little Rock, Arkansas to Boulder, Colorado. There we picked up food for the weekend at Trader Joe’s. Once done there we drove on to Mary’s Lake Campground in Estes Park, Colorado. The next morning we had a quick breakfast before heading to Rocky Mountain National Park. There we drove to hike at a trail that we have done once before, and really wanted to experience the amazing trial again. That trail is the Sky Pond Trail. It is such an amazing place. After we finished the Sky Pond Trial in Rocky Mountain National Park, we drove back to Mary’s Lake Campground in Estes Park. There we cleaned up before driving to Boulder, Colorado to hang out on Pearl Street. For dinner, we had an amazing meal at The Post Brewing. The next morning we cooked pancakes for breakfast. After that, we left for downtown Estes Park to do a little shopping. After a short time there, we drove back to Rocky Mountain National Park. We drove up the Old Fall River Road to the Alpine Visitor Center. We spent some time touring the area then left to drive the rest of Trail Ridge Road. We then left the park thinking we were going to explore some of the National Forest in the area. However, we ended up driving to the Wild Basin Entrance to the Rocky Mountain National Park. We were not aware that when we turned down this dirt road that it would be another area of the National Park that is not as well known. We found a great place on the St. Vrain Creek to put up some hammocks and relax. We left there to go back to Mary’s Lake Campground to cook dinner. This trip started with us setting up camp at near the Albert Pike Campground that was closed in the Ouachita National Forest in Arkansas. We gave a tour of our campground and talked about the changes that occurred do to the recent flooding in that area of the Oucahita National Forest. We cooked a pesto gnocchi with a cream sauce. The next morning we woke up and enjoyed a breakfast scramble. Once done, we drove to one of the many trailheads of Eagle Rock Loop, and hiked to the winding stairs of the Little Missouri River. after that we went back to camp and cooked salmon with parmesan rice. The next morning we had a quick breakfast before leaving the Albert Pike area of the Ouachita National Forest, and drove to Slate Rock Brewing in Amity, Arkansas. This camping trip began with us leaving Little Rock, Arkansas and driving to Richland Creek Recreation wilderness in the Ozark National Forest. We set up camping outside of Richland Creek Recreation Area next to the Richland Creek Wilderness boundary line. After setting up camp we made black bean, mushroom, and spinach quesadillas. That even we went for a swim down Richland Creek further into the Ozark National Forest. The next morning we woke up and made eggs with pastries. We started this trip by driving 14 hours from Arkansas straight through to New Mexico with a quick stop at Roswell, New Mexico. After that, we finished our drive by arriving at Oliver Lee Campground at Oliver Lee Memorial State Park in New Mexico. For dinner that night, we cooked steak. The next morning we hiked the Dog Canon Trail in Oliver Lee State Park. After that, Kellie cooked pancakes and bacon. Once breakfast was over, we left for Cloudcroft to ride the Rim Trail in the Lincoln National Forest. One of us got a flat so we had to cut it short to go back to Cloudcroft. Once the tire was fixed, we rode the High Altitude Race Loop. Once that was done, we check out the campgrounds at Organ Mountain-Desert Peaks National Monument. For dinner, we kept driving west to Las Cruces. The next morning we cooked breakfast burritos, and then left for White Sands National Monument. After enjoying some time at White Sands National Monument / White Sands National Park, we drove back to Cloudcroft to hike on the Rim Trail where we set up hammocks and relaxed. Once we were done relaxing, we cooked walnut ravioli. Once dinner was over, we drove back to White Sands National Monument / White Sands National Park for an amazing sunset. This weekends camping trip took us up to North Central Arkansas to the Ozark National Forest. We found a primitive camping spot near North Sylamore Creek. The first night we cooked black bean spicy quesadillas. The next morning we made french toast. Once we were done eating we hiked off to explore the Ozarks. We hike along the Sylamore Creek Trail. After the trail we visited Gravity BrewWorks in Big Flat, Arkansas. That evening we went back to camp and prepared spaghetti carbonara. The last day, we took our kayaks and canoes to the top of Sylamore Creek and paddled down river. While on the river, seen a old car, wild hog, and a non venomous water snake. For part 2 of “Camping at Fort Pickens National Seashore,” we continued our trip by making breakfast burritos. Once done with breakfast, we drove over to the University of West Florida for some mountain bike riding. Pensacola Off-Road Cyclists (P.O.R.C.) have made some amazing MTB trials. After riding, we wanted to make a stop at Joe Patti’s Seafood to pick up some red fish. We left Pensacola and drove back through Gulf Breeze, Pensacola Beach to Fort Pickens. The next morning we toured the Fort Pickens historical military base. Next, we went back the one of the whitest beaches in the world. That evening we cooked blackened red fish, coconut rice, and sautéed squash and zucchini. For part 1 of “Camping at Fort Pickens National Seashore,” we started our trip by stopping at Cotton Blues in Hattiesburg Mississippi. After having an amazing meal, we went in search for a primitive campground in De Soto National Forest. Next morning woke up, took down camp, and headed for Pensacola Florida with our first stop being Maria’s Fresh Seafood Market. There we pick up a pound of shrimp, then left there and headed to Publix in Gulf Breeze to do a little grocery shopping. Once the errands were done, we were free to head on over the bridge, pass through Pensacola Beach, and check-in at Fort Pickens Campground. Took a moment to pitch a tent, and then we were finally free to go to the whitest beaches in the world. That evening Kellie made shrimp and grits from with the shrimp we picked up from Maria’s Fresh Seafood in Pensacola. The next morning Cody went for a walk on the beaches of Fort Pickens National Seashore near Pensacola Beach. After the walk, Kellie made breakfast, and then we were ready for our first full day at the beach.
