Cuban Cinnamon Sugar Cookies
Cuban Cinnamon Sugar Cookies (Clean Eating and Vegan):
1/2 cup butter and 1/2 cup shortening (To make this clean eating I use 1/2 cup Earth Balance Brand Vegan Butter Sticks and 1/2 cup Spectrum Brand Non-Hydrogenated shortening. Both found in either health food stores or the health food aisle in a grocery store)
1 1/2 cups sifted powdered sugar also known as confectioner’s sugar (Organic confectioner’s sugar is available but I make my own by throwing some organic granulated sugar or coconut palm sugar in the Vitamix and grind it to a powdery consistency.)
1 tbsp vanilla extract or Brandy
2 cups flour (I always use Whole Wheat Pastry Flour)
1/4 tsp sea salt
1/2 cup finely chopped pecans or walnuts
1 tsp ground cinnamon

Homemade Oreo Cookies
Healthy, homemade, vegan, clean eating Oreos
120g Spelt Flour (you can also use whole wheat pastry flour or all-purpose if you’re not eating healthy)
30g dutched process cocoa powder
80 g coconut sugar (you can also use organic sugar, stevia blend, or any other dry sweetener)
1/4 tsp salt
1/4 tsp baking soda
1 tsp pure vanilla extract
44 g canola or coconut oil
3 tbsp milk of choice
2 tbsp pure maple syrup
Filling:
55 g organic powdered sugar (Make your own here)
1/2 tsp pure vanilla extract
58 g coconut butter, or non-hydrogenated shortening (such as Spectrum), or Earth Balance spread
Keep these in an airtight container to retain freshness.

Mini Chocolate Cinnamon Buns
2-1⁄4 cups Whole Wheat Pastry flour (If you don’t follow a clean/whole foods diet, all purpose flour can be used)
2 tablespoons organic sugar or coconut palm sugar
1 teaspoon baking powder
1⁄4 teaspoon baking soda
1⁄4 teaspoon salt
1 cup low fat buttermilk
5 tablespoons Earth Balance Vegan Buttery Sticks, melted & divided (Unsalted butter can be substituted)
1 cup Ghirardelli 60% Cacao Bittersweet Chocolate Baking Chips, divided in half
1⁄4 cup organic light brown sugar (make your own Organic Brown Sugar)
1⁄2 teaspoon ground cinnamon
4 ounces low fat cream cheese, softened
2 tablespoons organic confectioners’ sugar (make your own Organic Confectioner’s Sugar)
Homemade Organic Brown Sugar
1 cup organic sugar to 1 tablespoon black strap organic molasses for light brown sugar.
1 cup organic sugar to 1/4 cup black strap organic molasses for dark brown sugar.
Mix together well. You might need to adjust the amount of molasses based on your own preference.
Homemade Organic Confectioner's Sugar
1 cup organic sugar (I have not tried this with coconut palm sugar yet, but I don’t see why it wouldn’t work as long as you don’t mind it brown in color)
1 tablespoon cornstarch
Blend this in a food processor or high powered blender such as a Vitamix until powdered.

1/2 cup hot espresso
2 tablespoons raw sugar
1 tablespoon rum or 1/2 to 1 teaspoon rum extract. Adjust this amount to your taste. I don’t like a lot of rum so I used the lesser amount. *
Cupcakes:
6 eggs, at room temperature
1 cup fine raw sugar or organic sugar
1 tablespoon rum or 1/2 to 1 teaspoon rum extract. *SEE ABOVE
1 cup all-purpose flour (if you are new to my recipes, I always use whole wheat pastry flour instead of white flour to make my baked food a little healthier. The choice is yours)
1/4 teaspoon sea salt
1/3 cup unsalted butter, melted, plus more for greasing
For the Mascarpone Frosting:
1 cup heavy cream
8 ounces mascarpone cheese, room temperature
½ cup confectioners’ sugar, sifted
Unsweetened cocoa powder, for dusting

Vanilla French Sables (Butter Cookies)
Makes about 40 cookies
Make sure the cookie dough is well chilled and firm so that it can be uniformly sliced. After the dough has been wrapped in plastic it can be frozen for up to 2 weeks.
1 large hard boiled egg
10 tablespoons (1 1/4 sticks) unsalted butter , softened
1/3 cup plus 1 tablespoon granulated sugar (2 3/4 ounces)
1/4 teaspoon table salt
1 teaspoon vanilla extract
1 1/2 cups unbleached all-purpose flour (7 1/2 ounces)
1 teaspoon large egg white , lightly beaten with 1 teaspoon water
4 teaspoons sugar
TO HARDBOIL AN EGG: Place egg, still in shell, in small saucepan, cover with 1 inch water, and bring to boil over high heat. Remove pan from heat, cover, and let sit 10 minutes. Meanwhile, fill small bowl with ice water. Using slotted spoon, transfer egg to ice water and let stand 5 minutes. Crack egg and peel shell. Separate yolk from white; discard white. Press yolk through fine-mesh strainer into small bowl.

7/8 to 1 cup warm water*

Disney Cruise Lines Peanut Butter Pie Recipe
Delicious Peanut Butter Recipe from Disney Cruise Line
Yields 8 servings
1 1/2 cups creamy peanut butter (I always use all natural)
8 ounces cream cheese, softened (you can use reduced fat or regular)
3/4 cup sugar
2 tablespoons butter, melted
1 cup heavy cream, whipped stiff
1 baked 8- inch pie shell (in the video, I used mini-pie shells)
To make the Ganache:
1/2 cup heavy cream
4 ounces dark chocolate, chopped
