Serrano Peppers are a real treat. While; they are several times hotter than their cousins, the Jalapenos, they are calm enough to provide a pleasing, great tasting food addition for folks with cooler sauce appetites. This video is Part 1 of a two video series on an Alabama Hot Sauce Fermented Serrano hot sauce that will be made in the Louisiana style, with the addition of garlic. an ingredient not typically natural to the style. However, it will make a very nice taste sensation.
In this short video, I deal with the process of creating a pepper mash and fermenting ese wonderful green Serrano peppers, using vacuum fermenting to protect against uncontrolled yeast and mold growth. Vacuum fermentation is, in my opinion, the cleanest way to ferment hot pepper sauce.

Orange Habanero Mash - How to Vacuum Ferment #orange habanero hot sauce, #fermenting habanero
Few peppers are more delicious than the Orange Habanero. Here we ferment orange habanero peppers using the vacuum fermentation method to product a clean, fresh, and yeast free pepper mash. Nothing enhances the great flavor of the habanero like proper fermentation and aging. The initial crisp, floral taste of the Orange Habanero pepper is quickly followed with the whole mouth warming that the habanero is famous for. Fermentation adds the funk we are accustomed to from quality fermented sauces.
Alabama Hot Sauce uses the vacuum fermentation technique to assure absolutely clean fermentation, free of wild yeast growth and other pathogens that can occur in any vegetable food. This technique removes the oxygen-rich air from the headspace of the fermentation container to prevent the growth of these yeasts, molds, and other pathogens.

Making sauce is a multi-step process. There are a variety of processing methods that can be employed to prepare the hot chili peppers for the final blending. Processing pepper into a mash is the beginning step in creating a great fermented hot sauce. In this video, I show you a very condensed version (10 minutes) of how you make a pepper mash using Jalapeno and Fresno chili peppers. Two pepper mashes and two vacuum jar ferments. This video does not contain any spoken narration, but text prompts explain exactly what is happening throughout the entire process. That, and the clear close-up video should make for an enjoyable ten minutes. In addition, I have provided some beautiful instrumental music to entertain you as you watch.

Blending Jalapeno Hot Sauce - From Special Vacuum Ferment
Jalapeno Hot Sauce - a wonderful taste from the pepper source so well known by all pepper lovers. This video begins with a special vacuum ferment that spanned 102 days. In addition to the long fermentation time, this ferment was maintained under vacuum FOR THE ENTIRE time of the ferment! Each day during the ferment, a new vacuum was pulled in the container. I anticipated that this would impart an extra "funk" to the pepper source not typically found in a ferment. Hot sauce blending is always fun, but the unpredictable taste from this experimental batch was a surprise. Mash fermentation is the best way to begin the hot sauce process. Many people use various methods of fermentation, but I prefer mash fermentation using the vacuum fermentation method. It is the cleanest and safest way to ferment. In this video, you see me preparing beautiful, fresh Reb Habanero peppers for a mash fermentation. This method can be done by anyone, right in your own kitchen. When this ferment is mature (about two or three weeks), I will publish another video as I further process this mash into a great Mr. Phil's Alabama Hot Sauce. Hope you enjoy!
