Here we go... the first full cook on the Lone Star Grillz Inverted Vertical Cabinet.

And it's a RibFest! I've got some locally sourced wagyu beef plate short ribs and pork spareribs. I had some things to do so I got the IVS up to temp, put the ribs on, fired up the Fireboard, and I just walked away. We went out for 4 hours and everything just went fine.

I let the IVS go for as long as it would keep going on 10lbs of lump charcoal. Can you believe it went 16 hours?!?! On 10lbs of lump!!!

All in all, it was a great success. Beef ribs were really tender, the middle one maybe a little too tender. But it was the first cook and I've learned some things so it's just going to get better from here on out.
