Vegan Blueberry Muffins With Coconut Flour

Made with coconut flour, these vegan blueberry muffins are an easy to make simple and sweet breakfast treat.

Ingredients
1 cup of coconut flour
1 cup of oat flour
1/2 cup of stevia
1/2 tsp of baking soda
1/2 tsp of baking powder
1 tsp of xanthan gum
1 tbsp of coconut oil
1 and 1/2 cups of almond milk
10 oz of blueberries

Directions
1. Preheat oven to 350F.

2. Add coconut flour, oat flour, stevia, baking soda, baking powder, xanthan gum, melted coconut oil, and almond milk to a bowl. Mix well. Fold in 10 oz of blueberries.

3. Potion 2-3 tbsps of mixture into each muffin tin. Batter should yield 12 muffins.

4. Bake for 30 minutes, or until muffins have browned.

5. Remove from oven and let cool completely. Serve and enjoy!
