INGREDIENTS :

1 puff pastry sheet
2 salmon darnes ( skinless )
80 grams baby spinach ( 2.82 oz )
65 grams chopped onion ( 2.29 oz )
100 grams cream cheese ( 3.52 oz )
25 grams butter ( 0.88 oz )
55 ml heavy cream ( 1.85 fl oz )
1 minced garlic clove
1 egg
1/8 teaspoon + extra ground black pepper
1/8 teaspoon + extra teaspoon salt
1/2 teaspoon dried chives

INSTRUCTIONS :

.in a pan on medium heat add 25 grams butter
.once melted add 65 grams chopped onion, cook for 1 to 2 minutes
.add 1 minced garlic clove, cook for 1 to 2 minutes
.add 100 grams cream cheese & mix well
.add 55 ml heavy cream, 1/8 teaspoon salt
.add 1/8 teaspoon ground black pepper, 1/2 teaspoon dried chives & mix well
.add 80 grams baby spinach, mix well & cook for 2 to 3 minutes
.vertically cut puff pastry sheet in half
.place 2 salmon darnes on 1 half of pastry sheet
.season with salt & pepper
.place spinach sauce on top of salmon
.beat 1 egg & brush on sides of pastry
.place other half of pastry sheet on top & press in
.roll in edges & fork down
.brush on egg wash
.score pastry with diagonal lines
.season with salt & pepper
.place in preheated oven 180 c / 356 f for 25 to 30 minutes
