Blueberry preserves made with liquid pectin. Recipe from Ball Complete Book of Home Preserving pg 76.
Ingredients:
4 Cups blueberries/cherries
4-1/2 Cups sugar
2 tbsp lemon juice (1oz)
1 packet liquid pectin
Mix fruit, sugar, lemon juice and let stand 20 min. Bring to boil in saucepan. Add pectin, return to boil and boil hard, stirring constantly, for one full minute. Turn off heat, fill hot jars, water bath process at full boil for 10 minutes. Wait 5 min, remove from canner, cool, clean, label and store.
