Ambrosia salad is both easy to make and delicious! A beautiful and festive side dish for any holiday meal! After trying this recipe I can see why its called the food of the gods(Greek). To make ambrosia salad you will need:

1 can mandarin oranges(11oz) drained well
1 can pineapple tidbits(8oz) drained well
1c(8oz) vanilla yogurt
1 container cool whip(8oz)
1c shredded sweetened coconut
1 and 1/2 c mini marshmallows
1c maraschino cherries(8oz) drained well

Combine yogurt and entire container of cool whip in a large bowl. Mix together well. Add the mandarin oranges and pineapple tidbits to the cool whip yogurt mixture. Fold gently to avoid breaking fruit. Add 1 and 1/2c mini marshmallows and 1c sweetened shredded coconut. Fold together gently to avoid crushing fruit and marshmallows until well blended. Garnish with maraschino cherries. Chill in the fridge at least 1hr before serving. Enjoy!

Note: the recipe does call for 1 cup of maraschino cherries to be added along with the other fruit. I did not have enough so I used mine as a garnish.
You can both add 1c maraschino cherries and also use them as garnish as well. You can also add 1/2c chopped pecans if you like.
