Chicken Noodle Casserole / Quarantine Cooking

1 12 oz Pkg Egg Noodles
1/2 C Butter
1/4 C Flour
1 tsp Salt
1/2 tsp Pepper
1/4 tsp Garlic Powder
1 tsp Basil
4 C Chicken Stock
24 oz Ricotta or Cottage Cheese
1 Egg
2 C Mozzarella - shredded & divided
3/4 C Parmesan Cheese - grated & divided
4 C Chicken - Chopped or 2 cans of canned Chicken drained
Parsley for Garnish

Cook Noodles - drain, rinse & set aside

Melt butter in large pan, add flour, salt & pepper, garlic & basil. Cook 2 - 3 minutes.
Slowly whisk in stock a little at a time until mixtures starts to thicken. Remove from heat.

In large bowl stir ricotta, egg, 1 1/2 cups mozzarella & 1/2 c parmesan cheese. Add chicken & noodles to sauce and mix well.

Pour in to 9 x 13 baking dish and top with remaining mozzarella & parmesan cheese.
