Karedok or keredok ( Sundanese script: (Karédok) is one of the typical Sundanese food in Indonesia. Karedok is made with raw vegetable ingredients, including cucumber, bean sprouts, cabbage, long beans, sweet potatoes, basil leaves, and eggplant or leunca. While the sauce is peanut sauce made from red chili, garlic, kencur, peanuts, tamarind water, brown sugar, salt, and shrimp paste. One of the characteristics of karedok is using grilled oncom. If not using grilled oncom, it is called raw lotek (atah).
