I love corn breads that are soft and moist, not gritty like the typical American Style. So this recipe is just perfect; with just a slight sweetness. It is also great for those who cannot have eggs or butter. Enjoy it.

Corn Bread With Real Corn Recipe From Scratch | No Eggs | No Butter | EASY RICE COOKER CAKE RECIPES

INGREDIENTS:
• 3/4 cup (130g) CORN MEAL
• 1 cup (140g) WHOLE WHEAT FLOUR (soft or white wheat)
• 1/2 cup (100g) SUGAR
• 3 tsp (12g) BAKING POWDER
• 1/4 tsp SALT
• 1 cup (200g) CORN KERNELS (half roughly creamed)
• 1/2 cup (135g) PLAIN GREEK YOGURT
• 1 cup (250ml) MILK
• 1/2 cup (125ml) OIL
• 1 tsp (5g) VANILLA FLAVOR

HOW TO MAKE IT:
1. Measure out 1 cup of corn and roughly creamed half of the corn kernels. You can chop it, paused a few times in a food processor or use a pestle and mortar like me
2. Whisk corn meal, flour, sugar, baking powder and salt until combined
3. In a large mixing bowl add the corn and the rest of the ingredients. Whisk to combined
4. Add the flour mixture and fold until incorporated
5. Bake in lined pot/pan for 3 bake cycles. Rice cooker varies so check after 2 bake (60 min) and bake longer as needed
6. Cool for 15-20 and enjoy

OVEN BAKING:
Bake in pre-heated oven of 400F (200C) for 20-30 minutes. Ovens varied so check about 25 minutes and bake longer as needed
