I have been on a fruit kick lately, so I hope you are enjoying them as well. This blueberry cake is exceptional good! And it is so simple to make. I highly recommend using fresh blueberries for this recipe as it is a very wet batter with the yogurt.

Blueberry Cake Recipe Easy | Lemon Blueberry Yogurt Cake Recipe | EASY RICE COOKER CAKE RECIPES

INGREDIENTS:
• 1 1/2 cup (8oz/225g) FRESH BLUEBERRIES (divided)
• 1 tbsp (9g) ALL PURPOSE FLOUR
• 1 tbsp (13g) SUGAR
• 1 EGG
• 1/2 cup (100g) SUGAR
• 1/4 cup (60ml) OIL
• 1/2 cup (125ml/130g) PLAIN GREEK YOGURT
• 1 tbsp (15ml/5g) LEMON JUICE
• 1 cup (140g) ALL PURPOSE FLOUR
• 1 tsp (5g) BAKING POWDER
• a Pinch of SALT
• 1 tbsp ROCK SUGAR or BROWN SUGAR (optional)

HOW TO MAKE IT:
1. Wash and drain your blueberries. Divide them into 1 cup and 1/2 cup. Add the 1 cup (5oz/150g) into a small bowl then add the 1 tablespoon of all purpose flour and sugar to it. Shake and toss to get the blueberries coated with flour and sugar as much as possible and set it aside
2. Whisk together egg, sugar and oil until combined
3. Now add the yogurt and lemon juice and whisk to mix
4. Add flour, baking powder and salt then mix just until combined, lumps ok
5. Toss in the flour coated blueberries and fold to incorporate
6. Pour into a lined pot/pan and top with the 1/2 cup (3oz/75g) of blueberries. You can optionally top with some rock sugar or brown sugar
7. Bake for 2 bake cycles (60 min) and check. Mine took 3 bake cycles (90 min). Rice cooker varied so check after 2 bake and bake longer as needed
8. Cool for 15-30 minutes and enjoy

OVEN BAKING:
Bake in a pre-heated oven of 375F (180C) for 25-35 minutes. Ovens varies so check around 30 minutes and bake longer as needed
