Potato salad with homemade mayonnaise/馬鈴薯沙拉自製美乃滋

Ingredients:
Mayonnaise:
1 egg yolk
3 tbsp condensed milk
1 tbsp lemon juice
120 ml oil (don’t use olive oil)
1tsp lemon zest

Salad:
2 medium potatoes
½ c carrots
½ c Japanese pumpkin (kabocha squash)
1/3 c green peas
1 boil egg
1tsp salt
1tsp orange zest

Instructions:
1. Dice vegetables.
2. Boil vegetables until soft, then let cool.
3. Beat the egg and condensed milk until it turns a little white. Add 1/5 of the oil then beat. Add another 1/5 then beat again, and so on. Add lemon juice and zest.
4.Mix diced boiled vegetables (potatoes, Japanese pumpkin, carrot, green pea) with salt, diced boiled egg, & mayonnaise.
5. Sprinkle orange zest (or lemon zest )

馬鈴薯沙拉自製美乃滋
配料:
美乃滋:
1個蛋黃
3湯匙煉乳
1湯匙檸檬汁
120毫升油(請勿使用橄欖油)
1茶匙檸檬皮

沙拉:
2個中等大小的土豆
½c胡蘿蔔
½c日本南瓜(kabocha南瓜)
1/3 c豌豆
1個水煮雞蛋
1茶匙鹽
1茶匙橘子皮
說明:
1.將蔬菜煮至變軟,然後冷卻。
2.切丁蔬菜。
3.打雞蛋和煉乳,直到蛋變白。加入1/5的油,用打蛋器分次打,依此類推。加入檸檬汁和皮。
4.將切成丁的水煮蔬菜(土豆,日本南瓜,胡蘿蔔,綠豌豆)與鹽,切成丁的水煮蛋和美乃滋混合。
5.撒上橙皮(或檸檬皮)
