How to make easy stir fry snap peas with shrimps
Ingredients:
150g snap peas
180g shrimp
4 tbsp oil
20g garlic
1 tsp salt
Marinade for the shrimp:
½ tsp cooking wine
1 tsp garlic powder
¼ tsp salt
1 tsp soy sauce
Sauce:
1 tbsp oyster sauce
2 tbsp water
1 tsp chicken flavored powder
1 tsp sugar
¼ tsp white pepper powder
Cornstarch water:
1 tsp cornstarch
1 tbsp water
Instructions:
1. Remove strings from the snap peas and wash.
2. Marinade the shrimp. Mix cornstarch with water. Slice garlic. Mix the sauce ingredients together.
3. Heat the wok, add the oil.
4. On medium heat, roast the garlic. When the garlic turns brown, take it out and set it aside.
5. Fry the shrimp. When both sides of the shrimp turn pink, add snap peas and roasted garlic into the wok and stir.
6. Add the sauce into the wok and stir. Let it cook for a minute to reduce the sauce and let the snap peas and shrimp absorb the sauce.
7. Add the cornstarch water to the wok to thicken the sauce. Stir for 10 seconds.

50 g soft butter
50 g sugar powder
1 egg
150 g bread flour

Instructions:
Bread dough: Follow the bread machine instructions. Add the butter after the machine kneads the dough for 10 minutes.
Milky filling:
1.Softened butter mix with sifted sugar.
2. Add the egg in two parts. Mix well.
3. Add salt in and mix.
4. Add cornstarch and dry milk powder. Mix well. Wrap it up with parchment paper, and chill in the refrigerator.
Crumble topping:
Combine flour, sugar, and softened unsalted butter to mix. Use your hand to squeeze the mixture and make it crumbly.
Crispy pineapple bun topping
1. Mix the softened butter with sifted powdered sugar.
2. Mix the egg into the butter mixture in two parts.
3.Add sifted flour and dry milk powder into the egg mixture. Mix it, but don’t over mix.
4. Use saran wrap to wrap the mixture into a round long shape. Keep in the refrigerator for half-hour.
The buns:
1. After the dough rises to double its size, divide the dough into 20 portions.10 pieces each for milky filling rolls and pineapple buns
2. Knead each of the pieces into a round shape.
For the milky filling rolls:
1. Divide the milky filling evenly into 10 portions, rolling them out to make a round shape. Keep in the refrigerator.
2. Flatten the round shape of the dough. The edges of the dough should be thinner than the center. Use the drier side as the inside, and put the milky filling in the middle then wrap it up. Make sure the seam is sealed tight. Use your hand to roll the dough around to make a round shape. Let them sit and rise for 30 minutes. Egg wash the surface and sprinkle the crumbs on top. Bake at 360 F for 18-20 minutes.
For the pineapple Buns:
1. Divide the pineapple bun topping evenly into 10 portions, rolling to make a round shape. Put it between 2 layers of saran wrap and use the rolling pin to flatten the topping(the size should cover the dough).
2. Place the flat topping on the dough. Use one hand to hold the dough and the other hand to gently pinch the dough and topping together. Flour the dough scraper and make crisscross lines on the topping. Let them sit and rise for 30 minutes. Egg wash the surface, then bake at 360 F for 18-20 minutes.

4. Drain the potatoes and rinse them with cold water.
5. Pat the potatoes dry.
6. Put the potatoes in a Ziplock bag. Add cornstarch and shake gently. Put
the potatoes in the freezer.
7. Heat the pan to medium heat. Melt the butter in the pan, then add flour
and sriracha sauce to stir. Slowly whisk in the milk. Next, add in cheddar
cheese. Continue to mix until the cheese is melted.
8. Heat the oil to 350 F. Fry the potatoes for 3 minutes. Take out and cool down.
9. Reheat the oil to 350 F. Fry a second time for 2 minutes. Take out and sprinkle with salt.

French Omelette/soft Omelette/Cheese Omelette/法式超軟奶香歐姆蛋
Ingredients:
3 eggs
2 tbsp butter
2 tbsp butter(cubed and refrigerated)
¼ tsp salt
½ tsp parsley(or chives)
1/3 c cheddar cheese
Instructions:
1. Crack the eggs. Add salt. Beat the egg well. Take out the chalaza.
2. Melt the butter over low heat.
3. Pour the egg mixture into the pan. Add another 2 tbsp of butter cubes. Constantly scrape the bottom of the pan in a circular motion. Stop stirring when the eggs become very softly scrambled and creamy. Takes about 1-2 minutes.
4.Tilt the pan and gently roll the omelette down to the edge of the pan.
5.Transfer the omelette to the plate gently. Brush butter on the omelette, and sprinkle some
parsley on top.

Ingredients:
1 stick butter(1/2 cup)
250g marshmallows
100g milk powder
22 Ritz crackers
38 soda crackers
25 g chopped cranberries
1/3 c mini chocolate chips
50g cashew nuts
50g almonds
50g pistachios
50g cranberries
Instructions:
1. Chop the cranberries.
2. Use the non-stick pan to melt the butter on low heat.
3.Add marshmallows to melt into the butter.
4. Add milk powder and stir it into the marshmallow mixture.
5. Divide the mixture into three parts. Keep two of the parts for two other dishes.
6. Combine nuts and cranberries with one third of the mixture, then mix well. Press down on
the mixture, and make it into any shape you’d like, preferably one that’s easy to cut.
7. Combine the second third of the mixture with chopped cranberries, mix well. When the mixture is cooled and hardened, put it in the microwave to heat for 5-10 seconds and stir.
8. Sandwich the nougat with two Ritz crackers.
9. Combine the last third with mini chocolate chips.
10. Sandwich the nougat with two soda crackers.

Vegan turnip cake/vegetarian radish cake /Chinese recipe 蘿蔔糕/台灣早餐
Radish cake is a popular food in Taiwan. Taiwan’s breakfast shop is also a must-order food. When making cakes, some people will add shiitake mushrooms, shallots, and sausages, but I prefer not to add other ingredients. Only the original taste of daikon radish.
Ingredients:
4 tbsp cooking oil
450g shredded daikon radish(white radish)
½ c water
1 tsp salt
150g rice flour
15g cornstarch
300g water
sauce:
1 green onion
1 red chili pepper
10g grated ginger
2 tbsp oil
1 tsp soy sauce
½ tsp vinegar
¼ tsp sugar
¼ tsp salt
Instructions:
1. Grate the daikon radish.
2.Mix rice flour and cornstarch with water.
3.Cook the daikon radish with salt and water on low heat and cover. If water comes out of the radish when it is cooking, there is no need to add water.
4. When the radish turns transparent, add the flour mixture to the pan. Turn off the stove when it becomes a viscous lump.
5. Put the cake mixture in a greased container and spread it evenly. Cover the container with parchment paper.
6. Boil water and steam the cake mixture for 40 minutes, sealing the lid with a wet towel around the edges. Insert a wooden chopstick, and if it comes out clean the cake is done. Let it sit and cool down
before cutting it.
7. Slice the cake. Heat up the pan and add 4 tbsp oil. Fry the cake until the color turns light brown.
8. Grate the ginger. Dice the red chili pepper and green onion. Mix all of these together.
9. Heat 2 tbsp oil. Add the oil to the herb mixture. Add soy sauce, vinegar, sugar, and salt. Mix well.

Ingredients:
spring roll wrappers:(this makes 12 wrappers)
2c flour
3c water
½ tsp salt
1 tsp oil
filling:
500g cabbage
100g carrot
100g bean sprout
20g cilantro
½ lb tofu(half box)
sauce:
1 tbsp oyster sauce
1 tbsp hoisin sauce
½ tsp chicken powder
½ tsp salt
1 tsp soy sauce
¼ tsp white pepper powder
flour water: for sealing the spring rolls
2 tbsp flour
2 tbsp water
500ml cooking oil
Instructions:
1. Mix all of the wrapper's ingredients well and sift the batter.
2. Heat the pan on the medium-low. Wipe oil onto the pan with a paper towel.
3. Brush the batter on the pan evenly, be sure to make it not too thin or thick, then cook for 30 seconds. Flip to the other side and cook for about 10 seconds. Take the wrapper out and cover it up with a towel to keep moist. Set aside.
4. Mix all of the sauce ingredients well.
5. Press the tofu with a heavy object to drain the water for about 10 minutes.
6. Crush the tofu.
7. Add 1 tsp of salt to soften the cabbage. Let it sit for 15 minutes and wring the water out.
7. Julienne all of the vegetables and mix them with the sauce.
8. Lay a wrapper on the table. Place the filling on one third of the wrapper. You want to leave a couple of inches with no filling on top. Wet your finger in flour water(or use a brush), then run it along the edges of the wrapper. Try to keep the filling compact as you roll upwards until it is sealed.
9. Heat 500ml cooking oil on medium heat. Place the rolls carefully into the pan. Fry for about 2-3 minutes on each side.

Teriyaki Tofu/vegan recipe/照燒醬豆腐
Ingredients:
cooking oil
1b firm tofu
50g ginger
50g garlic
20g shallot
1 green onion
2 tbsp cooking wine
2 tbsp butter
1/3 c teriyaki sauce(homemade)
1 tsp chili sauce
½ c cornstarch
Teriyaki sauce:
½ c sake
¼ c sugar
¼c mirin
½ soy sauce
¼ c bonito flake
Instructions:
1.Boil the sake and let the alcohol evaporate.
2. Add sugar, and let the sugar dissolve.
3. Add mirin and soy sauce. Bring the mixture to a boil.
4. Turn off the stove and add bonito flakes, let it set and cool. Seal the sauce in a bottle.
5.Chop and dice the shallots, green onions, ginger and garlic.
6.Drain the tofu, and cut them into 8 pieces. Pat and dry the tofu with a kitchen towel. Put cornstarch on all sides.
7. Heat ½ cup cooking oil. Turn the heat to medium low. Fry the shallots until they are brown and crispy(about 2 minutes). Take them out and set aside.
8. On medium heat pour in 500 ml of oil. Fry the tofu until they are crispy on all sides(about 4-5 minutes). Take them out and drain the grease. Set aside.
9. Heat 2 tbsp oil on medium heat. Add ginger and stir for a minute. Add garlic, butter, stir for another minute until fragrant.
10.Add cooking wine, teriyaki sauce and chili sauce. Cook and reduce the sauce. Add green onion and tofu to the mixture and stir well.

How to make easy version Chive Potstickers/韭菜鍋貼
Ingredients:
1 package dumpling wrapper(room temperature)
cooking oil
filling:
250g ground pork
200g Chinese chives
1 tsp chicken powder
1/8 white pepper
1 tsp soy sauce
1 tbsp oyster sauce
10g grated ginger
1 egg
flour water:
300 ml water
1 tbsp flour
1 tsp cornstarch
1 tsp oil
dipping sauce:
2 tsp soy sauce
1 tsp chili sauce
1 tsp sesame oil
Instructions:
1. Chop the chives and grate the ginger.
2. Mix all of the filling ingredients in a bowl.
3. Mix the flour-water ingredients in a bowl well.
4. Dust flour on a sheet pan.
5. Stretch the wrapper gently(don’t tear it).
6. Fill each wrapper with about a tablespoon of pork filling. Wet your finger with water, then run it along the edges of the wrapper. This will help keep it closed. Fold the wrapper over the filling to create a half moon shape, then pinch the edges closed to seal it. Gently stretch the two ends to make the shape longer. Put it in the baking tray and cover with a towel to prevent it from drying out。
7. Heat the pan over medium heat. Place about 8 or 9 potstickers in the pan and cook until the bottoms are golden brown(about 2 minutes). Drizzle in flour water and cover it. Cook for about 3 minutes. Remove the lid and reduce heat to medium-low. Continue cooking until the water evaporates and bottoms are browned and crunchy, about 1 or 2 minutes.
8. Serve with dipping sauce.

Instructions:
1. Beat the softened butter and sugar until fluffy and stiff.
2. Add flour into the butter mixture and mix well.
3. Add 3 eggs one at a time. Mix them until they are smooth.
4. Heat the iron on high.
5. Add 2 tbsp of the mixture onto parchment paper. Shape the batter into a rectangle shape.
5. Cover with a second sheet of parchment paper.
6. Iron the mixture gently until it becomes solid, soft, and a little damp. Flip it to the other side and iron it. (don’t iron too long, it will become brittle)
7. Immediately after ironing, uncover the sheet and use a chopstick to roll it. Press down at the seam to seal the opening.
8. Bake 300 F for 15-20 minutes.
9. Melt the chocolate. Dip one side of the cookies in melted chocolate and set aside.

100克低筋面粉

½磅黑色巧克力
½磅白色巧克力
2張烘焙紙(18“ x13”)
1根筷子
熨斗
作法:
1.攪打奶油和糖,直到蓬鬆變硬。

How to make Okonomiyaki at home/Japanese pancake/在家做大阪燒
Ingredients:
6 slice pork belly
10 medium shrimp
500 g cabbage
bonito flakes
1 green onion
Furikake

Homemade Okonomiyaki sauce:
2 tbsp sugar
2 tbsp Worchestire sauce
2 tsp soy sauce
3 tbsp ketchup
Dashi broth:
1 tsp dashi powder
100 ml water
Homemade Japanese mayo:
1 c mayo
1 tbsp sugar
2 tsp rice wine vinegar
Batter:
1 c flour(150g)
¼ tsp salt
¼ tsp baking powder
2 eggs
Instructions:
1. Mix all sauce ingredients well. Set aside.
2. Mix all broth ingredients well. Set aside.
3. Mix all mayo ingredients well. Set aside.
4. Mix all of the dry ingredients for the batter. Add broth and eggs. Mix well and rest for a half-hour.
5. Chop cabbage. Dice shrimp. Cut pork belly into halves or a preferable size.
6. Mix cabbage with batter. (Keep half of the mixture for shrimp)
7. Heat up the pan and add 3 tbsp oil.
8. On medium heat, add batter into the pan. Make the batter into a round shape and make it into a size you prefer. Add the pork belly on the top. Don’t press down on the batter. Don’t cover. Cook for 3 min. Wait until the bottom is cooked firm and brown.
9. Flip and cook on the other side. Press down and cover to cook for 3 minutes.
10. Flip back to the original side. Cover and cook for 3 minutes.
11. Add Japanese mayo to a small size Ziploc bag and snip the tip-off.
12.Brush Okonomiyaki sauce on the Okonomiyaki. Drizzle mayo, bonito flakes, and green onions on top. Sprinkle Nori fume furikake rice seasoning.

原料:
6片五花肉
10只中號蝦
500克白菜
柴魚片
1個蔥
日本調味素
油
自製的照燒醬:
2湯匙糖
2湯匙辣醬
2茶匙醬油
3湯匙番茄醬
日式柴魚高湯 :
1茶匙柴魚高湯粉
100毫升水
自製日本美乃滋:
1 C美乃滋
1湯匙糖
2茶匙醋
麵糊:
1克麵粉(150克)
¼茶匙鹽
¼茶匙泡達粉
2個蛋
作法:
1.混合所有照燒醬材料。擱置。
2.混合所有日式柴魚高湯。擱置。
3.充分混合所有日本美乃滋材料。擱置。
4.混合所有麵糊材料成分。加入肉湯和雞蛋。拌勻,擱置 半小時。
5.切碎高麗菜。蝦子。將五花肉切成兩半或合適的大小。
6.將高麗菜和麵糊混合。 (將一半給蝦)
7.加熱鍋,加3湯匙油。

How to make stir fry Edamame Tofu/Vegetarian dish/炒毛豆豆腐
Ingredients:
1 lb tofu
1/2c cooked edamame(shell off)
2 eggs
1 carrot
¼ onion
1 green onion
10 g garlic
20 g ginger
1 tsp chicken powder
1 tsp sesame oil
6 tbsp oil(4 to fry tofu, 2 to fry veggies)
sauce:
2 tbsp oyster sauce
1 tsp chili sauce
½ tsp sugar
¼ tsp white pepper powder
½ c water
1 tbsp cornstarch
¼ water
Instructions:
1. Mix all the sauce ingredients in a bowl and stir well.
2. Remove the tofu from the packet and drain excess water from the tofu. Cut the tofu into cubes.
3. Dice carrots, onion, garlic, ginger, and green onion.
4. Mix two eggs with the tofu cubes.
5. Heat the wok on medium heat and add 4 tbsp of oil.
6. Add the tofu into the wok. Don’t stir, let it sit and cook until both sides turn brown. Take them out and set them aside.
7. Add 2 tbsp oil to the wok. Add ginger and garlic into the wok, stir for a second. Add onions and carrots to the wok, then stir and cook for a minute. Add cooked edamame, tofu, chicken powder, and sauce into the wok, mix well. Cover and cook for 2 minutes to let tofu absorb the sauce.
8. Add cornstarch water and sesame oil and give it a quick stir.

炒毛豆豆腐
材料:
1磅豆腐
1 / 2 c毛豆(去殼)
2個蛋
1個胡蘿蔔
¼洋蔥
1個蔥
10克大蒜
20克薑
1茶匙雞粉
1茶匙麻油
6湯匙油(4炸豆腐,2炸蔬菜)
醬料:
2湯匙蠔油
1茶匙辣椒醬
½茶匙糖
¼茶匙白胡椒粉
½c水
1湯匙玉米澱粉
¼水
作法:
1.將所有醬料調味料混合在一個碗中,並充分攪拌。
2.從包裝中取出豆腐,並從豆腐中瀝乾多餘的水分。將豆腐切成丁。
3.將胡蘿蔔,洋蔥,大蒜,薑和蔥切成丁。
4.將兩個雞蛋和豆腐塊混合。
5.用中火加熱炒鍋,並加入4湯匙油。
