Think soup is just for winter? Think again. This Cold Gaspacho Alentejano is Portugal’s answer to summer heat—fresh tomatoes, crunchy veg, roasted garlic, and a broth that gets better overnight in the fridge. No blender, no fuss, just bold, chilled flavor. It’s traditional… with a few twists.

🧺 Ingredients (Serves 4)
For the Soup:
• 500g ripe tomatoes
– Half raw, half charred
• 1 green pepper
• 1 red pepper
• 1 small cucumber
• 1 small onion
• 2 tsp white soy sauce (start with 1)
• 1 tbsp apple cider vinegar (adjust to taste)
• 700ml cold water
• Salt, to taste
• 4 tbsp garlic-infused olive oil
• Small handful of chopped fresh coriander
• Day-old rustic bread, cubed or torn
Garlic Oil:
• 200ml Extra virgin olive oil
• 5 garlic cloves, smashed
• 1 bay leaf
