I was waiting at Chobani Yogurt in New Berlin, NY, hadn’t eaten all day, and decided to whip this up. No excuses, just execution. Simple, filling, and actually tastes good. If you’re a trucker, meal prepper, or just someone who wants real food without the hassle, this one’s for you.

🔥 The Catwalk Trucker Chicken Recipe
Ingredients:

1 Costco rotisserie chicken leg quarter (because convenience)
1 can garbanzo beans (with liquid)
1 can crushed tomatoes (with liquid)
1 tsp Himalayan pink salt
3–4 dashes paprika
½ tbsp avocado oil
Instructions:

Heat the avocado oil in a small pan or pot.
Shred the rotisserie chicken and toss it in. Let it crisp up a little.
Add the can of garbanzo beans (liquid included). Stir.
Pour in the crushed tomatoes (again, keep the liquid—it’s flavor).
Season with salt and paprika.
Let it simmer for 5–10 minutes until it thickens up.
Eat straight from the pot or throw it in a bowl.
