Welcome to 2025 with The Neighbors Kitchen! 🎉 Let’s kick off the year with the most important meal of the day—breakfast. Today, I’m sharing my go-to morning meal: perfectly crispy home fries, sizzling bacon, and fluffy scrambled eggs.

I’m using a combo of modern and traditional cooking tools—the air fryer and a trusty cast iron skillet. Watch as I walk you through:

Home Fries, Bacon, and Scrambled Eggs Recipe

Home Fries:

1-2 russet potatoes (cubed)
2-3 tbsp olive oil
Potato seasoning: 3 parts kosher salt, 1 part garlic powder, 1 part black pepper, ½ part smoked paprika, ½ part oregano

Bacon:

4 slices bacon

Scrambled Eggs:

2-3 eggs
A splash of milk
½ tsp cream of tartar (optional, but not really)
Salt and pepper, to taste
1 tbsp butter

Instructions:

1) Prepare the Potatoes: Cube the potatoes and soak them in cold water for at least an hour (or overnight) to remove starch.
2)Drain and pat dry.
3) Toss potatoes with olive oil and potato seasoning until evenly coated.
4) Cook the Home Fries: Preheat your air fryer to 375°F. Cook potatoes for 11 minutes, shaking halfway through.
5) Add the Bacon: Lay bacon slices in the air fryer with the partially cooked potatoes. Cook for an additional 9 minutes, flipping halfway.
6) Scramble the Eggs: Preheat a cast iron skillet over medium-low heat.
7) Whisk eggs with milk, cream of tartar, salt, and pepper.
8) Melt butter, and pour egg mixture into the skillet and gently stir until fluffy.
9) Plate and Serve: arrange the crispy home fries, bacon, and scrambled eggs on a plate. Garnish eggs with fresh herbs if desired. Enjoy!
