vegan coconut lime curry

Ready in less than 30 minutes, this coconut lime curry recipe is a quick and easy weeknight dinner idea.

Ingredients
1/2 cup of white rice
2 cloves of garlic
3 shallots
2 small peppers
1 and 1/2 cups of coconut milk
2 limes
3 tbsp of curry paste
Garnish
Thai basil
Chives

Directions
1. Rinse and strain rice. Add to a medium size pot and cover with water. Bring to a boil and cook for approximately 10 minutes, or until all excess water has evaporated. Set aside and let cool.

2. Mince garlic and dice shallots. Slice peppers and set aside.

3. Heat a large frying pan to medium heat and add a small amount of oil. Add garlic and shallots and saute for 5 minutes. Add in peppers and saute for an additional 3 minutes.

4. Add coconut milk, curry paste and juice of 2 limes to frying pan and mix well. Cook for an additional 5 minutes. Remove from heat and let cool.

5. When ready to serve, portion curry over rice and garnish with Thai basil and chives.
