Tahchin with meat and eggplant is one of those dishes that you wouldn't imagine this combination becoming so delicious and tasty.

Note 1: To prevent tahchin from sticking to the pot, simply heat the pot with good hot oil, then pour the tahchin ingredients into it.

Note 2: To avoid the rice becoming too mushy, drain it while it is still somewhat raw during the straining process.
