In today's video I'm showing you my fresh homemade corn salsa recipe! This is a great snack or appetizer to bring to a summer party, makes for a great taco or salad topping and is HIGHLY customizable! I use roasted poblanos in my salsa, but feel free to add as much heat as you want into yours!

Recipe:

Raw fresh corn from 4 cobs
6 seeded Roma tomatoes (diced)
1 small to medium red onion (finely diced)
1 medium avocado (diced)
Cilantro from about half a bunch of fresh cilantro
1 roasted poblano pepper (finely diced)
The juice from 4 limes
About 1 TBSP neutral oil
About 1 TBSP white wine vinegar
Fine coarse kosher salt to taste
1 TSP Cumin
1 TSP Chili powder
1 TSP Black pepper

Combine all ingredients in a bowl and mix well, being gentle to not crush the avocado.
