I would argue these cookies are easier to make than many others, and they are much fluffier making them even more fun to eat! They are more of a spice cookie than a dominant pumpkin flavor, so you can sneak something healthy into a dessert for kiddos and picky eaters this way! Tip: you can also replace the banana with an egg for a more traditional spice cookie flavor!
