Directions: 1. Cut the steak: If the skirt steak comes in a long strip, cut it into 2 or 3 smaller pieces, 5 to 7 inches in length. This will allow them to fit better in the pan and make them easier to slice later. 2. Dry and season the steak: Thoroughly pat steaks dry with paper towels on each side. The surface should be very dry to help brown the surface of the meat. Generously season each side of the steaks with salt and pepper. 3. Heat the pan: Heat a large 12-inch cast iron skillet over high heat for 3 minutes. Once hot, add the olive oil. 4. Cook the steak: Use tongs to carefully add the steak to the pan, then press down firmly on the surface a few times for more contact. Sear the first side until browned, about 2 to 4 minutes, depending on the thickness of the meat. Flip and cook another 2 to 4 minutes. For medium rare doneness, cook steak until it reaches an internal temperature of 130°F. Work in 2 batches if needed. 5. Rest the steak: Transfer steak to a cutting board, loosely cover with foil, and allow to rest for 10 minutes before slicing. 6. Add butter and garlic to the pan to make garlic butter sauce. 7. Slice and serve the steak: Hold the carving knife at a 45-degree angle, and then slice the steak across the grain, about 1/4-inch thick slices. I finally saw The Iron Claw and I loved it. From the way it was filmed, to the performances themselves, to the editing/pacing, and the overall tone of the movie, I really think director Sean Durkin knocked it outta the park and delivered what is quite possibly the greatest professional wrestling film ever made here. It's neck-and-neck with 'The Wrestler' starring Mickey Rouke, in my eyes, and manages to outdo how depressing that one is with a true story - which is saying A LOT. Not since the 2015-2016 season, which ended at the National Championship game, had Carolina been 3-0 to start conference play. But with a win at Littlejohn over Clemson, the Tar Heels could do just that. It was an old-fashioned ACC matchup against a familiar foe with an old-school noon tip. Spoiler alert! The Tar Heels won this game. The Heels are now (deep breath) 37-6 in the last 43 games against State. They are 54-13 in the last 32 seasons. Carolina is 19-6 against the Pack at PNC Arena and 23-6 in PNC Arena overall. The Heels have 165 wins against State all-time, the most in program history against any one opponent. If Carolina and State play twice per year for the next 42 years, and State wins every single one of those games…the Tar Heels will still have an edge in the all-time series. Imagine what it would do to your mind if the Tar Heels were on the wrong end of those numbers in the series against Duke. And make no mistake, State supporters feel the same way about this series that Carolina fans feel about the Blue Devils. In the 39 Wolfpack home games at PNC Arena since Covid, they've had three sellouts. Two of them are against the Heels (the other is against Clemson). This is perhaps an appropriate time to remind you that Carolina sold out a December home game against Charleston Southern. Now you understand why those students near the tunnel were so angry.
