Cauliflower soup
Today, a recipe for a delicious, healthy and cheap cauliflower soup. A delicious dish for a healthy dinner. The soup is prepared very quickly and healthy cauliflower will provide the necessary vitamins and minerals. The soup can be made with either meat or vegetable stock. It's easy to prepare in a vegetarian version.
Ingredients:
1 large cauliflower
1 large leek
1 onion
1l of meat or vegetable stock
about 100 g of grated yellow cheese to sprinkle the soup
salt and pepper to taste
cayenne pepper to taste

Execution:
Melt the butter in a large pot and add the olive oil. Fry finely chopped onion and leek in heated fat. When the leek and onion soften, add the cauliflower cut into smaller pieces to the pot. Fry everything for another 5 minutes and then pour the broth over.
Cover the pot with a lid and cook the soup until the cauliflower is soft. This shouldn't take longer than 20 minutes.
When the cauliflower is soft, season the soup with salt, black pepper and cayenne pepper. Then blend the soup with a hand blender until creamy.
Serve the finished soup sprinkled with grated yellow cheese and with warm croutons.
