Mushroom Oven Omelet 🍳

⁠𝙄𝙣𝙜𝙧𝙚𝙙𝙞𝙚𝙣𝙩𝙨 📑⁠
10 eggs⁠
250g mushrooms⁠
70g baby spinach⁠
100g feta cheese⁠
40g milk⁠
15g butter⁠
Some parsley⁠
1/4 tsp salt⁠
1 pinch of pepper⁠
1 pinch of nutmeg⁠
𝙄𝙣𝙨𝙩𝙧𝙪𝙘𝙩𝙞𝙤𝙣𝙨 🔪⁠
Mix eggs, milk, salt, pepper, and nutmeg with a whisk. Finely chop the parsley. Coarsely chop spinach. Mix parsley and spinach into the batter. Cut mushrooms into bite-sized pieces. Heat an ovenproof skillet over low heat. Melt butter in it. Sauté mushrooms over high heat for about 6-8 minutes until golden brown, season with a little with salt and remove. Grease the pan again if necessary.⁠
Preheat oven to 180 degrees.⁠
Pour the batter into the pan and crumble the feta cheese over it. Spread the fried mushrooms on top of the mixture as well. Bake in the oven for about 20 minutes. Makes a perfect meal prep! ❤️⁠
