Meatballs: *1 lb ground meat of your choice (lamb, beef, elk, deer, turkey, chicken or a blend of any of these) *½ cup rolled oats (or bread or cracker crumbs) *1 egg *1-2 tsps of herbs and spices of your choice such as: Oregano, rosemary, thyme, sage, lavender leaves, cayenne, red pepper flakes, black pepper *1-2 Tablespoons each granulated garlic and onion (or dried diced onion) *1 tsp salt Optional for added nutrition: *1-2 tsps of seeds such as poppy, chia, flax (preferably presoaked or ground), sesame After adding all ingredients into bowl, blend together well, you may find it best to use your hands to get it well blended Shape meatballs and brown in a hot pan with coconut oil, avocado oil, or other heat stable oil you prefer (about medium high heat) on all sides. Once browned, turn the heat down to low and add in gravy blend (below) at this time. Gravy: *4 cups whole milk (you can substitute ¼-1/2 cup with heavy cream for richer flavor) *1/4 cup thickener such as arrow root powder or tapioca starch *Herbs and spices: I typically use the same in the gravy as I do in the meatballs about a tsp or so of each *Options: Dried zucchini, carrots, mushrooms, and greens (dandelion, nettle, kale, et cetera) for added nutrition Blend well with whisk, add to meatballs and simmer on low until thickened. Serve over rice, toast, or pasta. FLOUR TORTILLA RECIPE: *3 cups flour : I prefer to use a blend of one part freshly milled whole grain and one part unbleached organic all purpose white flour. *1-2 tsp salt *2 tsp baking powder *1/4 cup Organic Palm Shortening *1/2 cup butter *1 cup warm water Optional: 1 Tablespoon organic homemade vinegar of any kind as a natural preservative Optional Ingredients: 1/4 cup of seeds of choice alone or in a blend: poppy, chia, flax, black seed (kalonji), hemp. Or you can use that same amount in flower petals from dandelions and/or calendula Fat can be all butter or all palm shortening. I do not recommend a vegetable shortening like Crisco is not a healthy choice of fat. Blend dry ingredients. Cut in fat. Add hot water. Knead until smooth. Cut dough into 8 pieces. Roll. Pan bake each side for about a minute or until lightly browned. A cast iron griddle is best for this. For cooking directly on wood stove, make sure temperature is 250 to 300 degrees for best results.
