Lamb Shank

📕Recipe for Lamb Shank

❂ Ingredients:

3 Lamb shanks
1 Yellow Onion
3 Stalks of Celery
3 Carrots
4 Cloves of garlic
1 Sprig of fresh Thyme
1 Sprig of fresh Rosemary
2 Bay Leaves
1 Tbsp Tomato paste
1 Thai pepper
1 Cup Port
2 Cups Broth
Olive oil
1 Tbsp Butter
Salt/pepper to taste
Mashed potatoes side dish

❂ Cooking process:

⁃ Preheat oven to 350°F (175°C).
⁃ Wash and dry the lamb shanks with a paper towel. Salt/pepper to taste.
⁃ Heat the oil in a heavy-bottomed braiser over medium-high heat. Fry the shanks in hot oil until golden brown on all sides.
⁃ Transfer to a plate, cover with foil to keep warm, and set aside.
⁃ In the same pan, fry the onion, carrots, celery, and garlic until soft, then add the tomato paste and mix well, then put the thyme and rosemary sprigs, and add Thai chili pepper and bay leaf. Pour in the port and bring to a boil.
⁃ Return the shanks back to the pan and season with salt/pepper to taste.
⁃ Add broth, bring to a boil on the stove, then cover with lid, transfer to the bottom of the oven, and cook at 350F for 2.5 hours.
⁃ While the lamb shanks are stewing, prepare the side dish.
⁃ When ready, carefully transfer the shanks to a separate plate.
For sauce:
⁃ Strain the sauce from pieces of vegetables and herbs and place the pan on the stove. Bring the sauce to a boil over medium heat, add 1/4 cup port. Cook, then turn off the heat and add a knob of butter. Stir well until it melts. The sauce is ready!
⁃ Place the lamb shank on mashed potatoes, garnish with herbs, and pour over the sauce. Enjoy!🤤
