Free Chicken Biryani Recipe 🍚🍗🌿

Ingredients:
For the Marinated Chicken:
1.5 lbs chicken, cut into pieces
1 cup plain yogurt
2 tablespoons ginger-garlic paste
1 teaspoon turmeric powder
1 teaspoon red chili powder
Salt to taste
For the Rice:
2 cups basmati rice, soaked for 30 minutes
4 cups water
2-3 green cardamom pods
2-3 cloves
1 bay leaf
Salt to taste
For the Biryani:
2 large onions, thinly sliced
1/2 cup cooking oil or ghee
2 teaspoons biryani masala
1 teaspoon garam masala
Fresh coriander and mint leaves for garnish 🌿
Instructions:
Marinate the Chicken:
In a bowl, mix the chicken pieces with yogurt, ginger-garlic paste, turmeric powder, red chili powder, and salt. Allow it to marinate for at least 2 hours or overnight for maximum flavor.
Cook the Rice:
In a pot, bring 4 cups of water to a boil. Add soaked basmati rice, green cardamom pods, cloves, bay leaf, and salt. Cook until the rice is 70% done. Drain the water and set aside.
Sauté Onions:
In a separate pan, heat oil or ghee. Fry the thinly sliced onions until they are golden brown and crispy. Remove half for garnish and set aside.
Cook the Marinated Chicken:
In the same pan, add the marinated chicken. Cook until the chicken is tender and the marinade thickens into a flavorful masala. Remove from heat.
Layer the Biryani:
In a large, heavy-bottomed pot, layer half of the par-cooked rice at the bottom. Top it with the cooked chicken masala. Sprinkle biryani masala and garam masala over the chicken layer. Add the remaining rice on top.
Garnish and Dum Cooking:
Garnish with the fried onions, fresh coriander, and mint leaves. Cover the pot with a tight-fitting lid and cook on low heat for 20-25 minutes. This "dum" cooking allows the flavors to meld and the rice to fully cook.
Serve and Enjoy:
Gently fluff the Chicken Biryani with a fork, ensuring the layers remain intact. Serve hot, allowing each plate to capture the aromatic essence of this classic Indian dish.
